- In a 12-in. skillet, heat butter over medium heat. Add mushrooms and 1/4 teaspoon lemon pepper; cook and stir 3-5 minutes or until tender. Add garlic; cook 30 seconds longer., Place fillets over mushrooms; sprinkle with paprika, cayenne and remaining lemon pepper. Cook, covered, 5-7 minutes or until fish just begins to flake easily with a fork. Top with tomato and green onions.

- Preheat the oven to 400F.
- Mix together the grated Parmesan, lemon pepper, parsley and salt. Drizzle the tilapia with olive oil, then coat with the cheese mixture, pressing it in lightly with your fingers to make sure it sticks. sprinkle lightly with shredded parmesan. Transfer to foil lined baking sheet.
- Bake until the fish is opaque in the thickest part, about 10 minutes.
- To brown further, broil for about 5 more minutes until cheese crust is slightly crispy (watch carefully to make sure fish doesn't burn)
- Top with green onions and serve and serve with lemon wedges, optional.

- Heat 1/4 cup of the olive oil in a large deep skillet with a lid over medium heat. Place the potatoes in the pan cut-side down. Add the garlic and cook until the potatoes are slightly golden and crisp, 4 to 5 minutes. Add the escarole, season with salt and pepper, then add about 1/3 cup water.
