1/2 cup chopped onion
1 garlic clove, minced
1/4 cup water
2 tablespoons taco seasoning
1 cup shredded cheddar cheese, divided
1-1/2 cups leftover or refrigerated mashed potatoes, warmed

Steps:

  • In an ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer. Stir in water and taco seasoning; heat through. Stir in 1/2 cup cheese. , Combine potatoes and remaining cheese; spread over beef. Broil 4-6 in. from the heat for 5-6 minutes or until golden brown.

This recipe is great if you happen to celebrate Thanksgiving with family or friends and you get sent home with a bunch of leftovers. It's like having a Thanksgiving meal all over again.

Nonstick cooking spray
1 tablespoon olive oil
3/4 cup diced carrots
1/2 cup diced onion
1 garlic clove, minced
1 1/2 cups shredded or diced cooked turkey (I boiled a 1-pound turkey breast)
1/2 cup frozen peas
1 tablespoon all-purpose flour
1 tablespoon tomato paste
1 cup chicken stock
1 teaspoon Worcestershire sauce
2 sprigs thyme, leaves stripped and stems discarded
Salt and ground black pepper
Salt and ground black pepper
1 2/3 cups mashed potatoes (I boiled 2 small red potatoes, then mashed it with 1/4 cup milk and 1/4 teaspoon garlic powder)

Steps:

  • Preheat the oven to 375 degrees F and lightly spray two 16-ounce oven-safe ramekins with nonstick cooking spray. Set aside.
  • Heat up the olive oil in a large skillet over medium-high heat. Add the carrots, onion and garlic and cook until softened and fragrant, 5 to 7 minutes.
  • Add in the turkey and peas and stir to combine. Sprinkle the flour over the mixture and stir to incorporate, then stir in the tomato paste. Gently add the chicken stock and Worcestershire sauce. Stir and let the mixture thicken, about 5 minutes. Stir in the thyme leaves and season with salt and pepper. Remove the mixture from the heat.
  • Divide the mixture evenly between the ramekins, then divide the mashed potatoes evenly and spread on top of the mixture. Place the ramekins on a baking sheet for easier transfer and bake, uncovered, for 20 minutes. Cool 10 to 15 minutes, then serve and enjoy!

1 pound lean ground beef
½ onion (chopped)
2 teaspoons minced garlic
3 Tablespoons whole wheat flour
1 Tablespoon tomato paste
1 Tablespoon Worcestershire sauce
1 Tablespoon soy sauce
14.5 ounces low sodium beef broth
2 cups frozen mixed vegetables (carrots, peas and corn)
salt and pepper (to taste)
13.75 ounces instant mashed potatoes
1 cup shredded sharp cheddar cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a 9 x 13 inch baking dish with nonstick cooking spray; set aside.
  • Heat a large skillet over medium-high heat and add ground beef, onion, and garlic. Sauté until beef is fully cooked. Drain grease.
  • Add flour and cook for a minute longer.
  • Stir in tomato paste, Worcestershire sauce, soy sauce, and beef broth. Cook for 5 minutes or until sauce begins to thicken.
  • Reduce the heat to low and stir in the frozen vegetables, salt and pepper.
  • Pour meat mixture into the bottom of prepared dish.
  • Prepare potatoes according to package directions. Carefully spread 5 cups prepared mashed potatoes on top of the meat.
  • Top with shredded sharp cheddar cheese on top.

I took something I have been cooking for years and cut the portion size down for two people with a bit of leftovers. This recipe would fit into a bread loaf pan and should feed 3 hungry people.

1 1/2 cup(s) prepared instant mashed potatoes or 3/4 lb potatoes prepared with 3 tbsp butter and 1/2c milk
- salt and pepper
1/2 pound(s) hamburger or 1/4 hamburger, 1/4 ground turkey
1/2 tablespoon(s) oil
1 clove(s) garlic, minced or grated
1/2 medium onion, roughly chopped
1 package(s) brown gravy (dry mix)
1/2 cup(s) water
1 - stalk celery, chopped
1 small carrot, shredded
1/2 cup(s) frozen peas (thawed, any excess water disgard)
1/4 cup(s) canned kernal corn, or frozen corn thawed
1 cup(s) shredded cheese (mozzarella, cheddar, parmesan, colby)
1 1/2 teaspoon(s) dried parsley (about 3 good shakes)
- cooking spray

Steps:

  • Preheat to 350° F.
  • Prepare instant potatoes according to directions to create about 1 1/2 c prepared potatoes. Add 1/2 minced garlic and set aside.
  • In a medium pan, add oil and brown meat. Add onions and the remaining 1/2 garlic and cook until translucent, but do not burn garlic. Add dry gravy packet and 1/2 c. water into a separate bowl and whisk together. Add mixture to meat, stirring until heated through and thickens. Spray loaf pan with non-stick spray. Add beef, onions and gravy to the bottom of a lightly sprayed bread loaf pan. On top of meat, sprinkle on mixture of peas, bell pepper, celery, carrot and corn. Top this with prepared potatoes either with a pastry bag or dollop potatoes on top and smooth out. Sprinkle cheese on top of potatoes and add a few shakes of dried parsley flakes. I do not season with any additional salt as the gravy packet has salt, but I do add pepper.
  • Cook in the oven for 20 minutes or until cheese is melted.

1/2 cup orange juice
2 teaspoons grated orange zest
1 teaspoon ground nutmeg

Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook the beef, sausage, mushrooms, carrots, celery, onion and garlic over medium heat until meat is no longer pink and the vegetables are tender; drain., Stir orange juice, orange zest, nutmeg, Worcestershire sauce and 1/4 teaspoon each salt and pepper into skillet. Bring to a boil; cook until liquid is evaporated. , Preheat oven to 350°. Transfer meat mixture to two greased 8-in. square baking dishes., Drain potatoes and place in a large bowl. Add mustard, brown sugar, vinegar and remaining salt and pepper; mash until smooth. Spread over meat mixture., Bake, uncovered, 30-35 minutes or until heated through.
