Steps:
- Heat olive oil in a medium saucepan over medium heat. Add the onion, bell pepper, and jalapeno and season with salt and black pepper, to taste. Cook, stirring occasionally, until the onion and peppers become soft, around 4-5 minutes.
- Add the Mexican oregano, smoked paprika, crushed red pepper flakes, and water. Stir to combine and reduce heat to medium-low. Continue cooking, stirring occasionally, for another 4-5 minutes.
- Remove from heat and set aside to cool for a few minutes. Add 1/4 - 1/2 the diced tomatoes and puree the mixture with an immersion blender, leaving slightly chunky.
- Transfer the salsa to a bowl, add the remainder of the tomatoes. Stir in the fresh lime juice and cilantro. Season with additional salt and black pepper, if desired. Serve immediately or cover and place in the refrigerator until ready to use.
JEN'S FRESH AND SPICY SALSA
This is the best homemade salsa ever! I originally found this on allrecipes.com. Everyone always requests it for potlucks and parties. This can be watery so I usually chop the tomatoes first and put them in a strainer basket while I do the rest. I have a small food chopper which really cuts down the prep time on this.

- In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, a few at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Drain and pat dry. Peel and finely chop tomatoes to measure 9 cups; place in a stockpot., Stir in remaining ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 30 minutes., Ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. - Place the ingredients in a blender in the order given - jalapenos on the bottom, tomatoes next, etc.
- Pulse for one second at at time.
- Take a wooden spoon and mix ingreditents then pulse again until blended, but not too long where it will turn to liquid.
- Serve with tortilla chips and enjoy!

- Remove and discard the cores from the tomatoes and the stem from the jalapeño. Then place the tomatoes and jalapeno in a small saucepan and add just enough water to cover. Bring to boil over medium-high heat, then reduce the heat to medium-low and simmer for approximately 15 minutes or until the skin has broken away from the tomatoes.
- Drain the tomatoes and jalapeno and set them aside until cool enough to handle. Remove the skins from the tomatoes and add them to a blender along with the jalapeno. Pulse until roughly chopped.
- Taste the salsa and add additional salt, onion or cilantro if necessary. If the salsa is too spicy, boil another tomato or two and puree it into the salsa to moderate the heat. If you add more tomato, you may also want to add a bit more onion and cilantro, and it will certainly need a bit more salt. Serve with your favorite tacos, burritos, quesadillas or tortilla chips and enjoy!
