- In a large skillet, heat olive oil over medium. Add asparagus, and season with salt and pepper. Cook, tossing occasionally, until lightly browned and crisp-tender, 10 to 15 minutes, depending on thickness. Add lemon zest and cook 1 minute. Add lemon juice, toss to coat, and serve warm.

HOW TO COOK ASPARAGUS ON THE STOVE
Steps:
- Prep the asparagus: Snap or cut off any woody bottoms of the asparagus spears. If working with medium sized or large asparagus, if you want (for a fancy presentation) you can use a vegetable peeler to peel the outside of the lower inch or two of the asparagus.
- Heat water in a large skillet: Fill a large, wide skillet with about 3/4-inch of water. Add salt. Add the cut garlic and lemon peel if using. Bring the water to a boil on high heat.
- Boil the asparagus: Add the asparagus in an even layer. If the water doesn't cover the asparagus, cover the pan. If using thin asparagus, cook only for 1 to 2 minutes. Medium asparagus, 5 minutes. Large asparagus 6 to 7 minutes.
- Rinse with cool water: Rinse briefly with cold water to stop the cooking and then transfer to a serving dish. Sprinkle with salt and pepper, lemon juice and extra virgin olive oil or butter to serve.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Coat asparagus with vegetable and arrange on a baking sheet. Season with salt and black pepper to taste.
- Roast in preheated oven until lightly browned at the tips, about 15 minutes.
- Meanwhile, combine lemon juice, butter, 1 teaspoon salt, and 1 teaspoon black pepper in a microwave-safe bowl. Heat in on high in microwave until butter is completely melted, about 1 minute; stir to combine. Pour butter mixture over roasted asparagus and toss to coat.

- Heat the butter and oil in a large saute pan over medium heat. Add the shallots and cook until they begin to soften, about 1 minute. Add the asparagus and season with 1 teaspoon salt and some pepper. Cook the asparagus, stirring occasionally, until cooked through but still bright green, about 4 minutes. Transfer the asparagus to a platter and garnish with lemon zest.
SIMPLE STOVE TOP LEMON ASPARAGUS
A seasonal recipe that isn't much of a recipe. Some oil in the sautée pan, garlic, salt and pepper, lemon juice and zest. The star of the show remains the asparagus. Cooking them on the stove top is easy, quick, and lets you control how crisp or tender you want your asparagus to be.

- Wash the asparagus under cold running water. Trim the tougher ends by grabbing the end of each asparagus in your hands, and bending it until the end snaps off. You want to take out the hardest and more fibrous part.
- In a large pan on medium-high heat, add the e.v.o. oil. When it is warm, add the garlic clove, then the asparagus, and a ladle of water.
- Cook without a lid for a couple of minutes or until the water has almost completely evaporated.
- Turn the asparagus with the tongs, put the lid on, and cook for 1 minute.
- Remove the lid, add salt and pepper, and turn the asparagus over again. Put the lid back on and repeat the operation until the asparagus is slightly crunchy about 5 minutes total (depending on thickness).
- Lastly, pour the lemon juice into the pan and stir. I usually grab the saute pan by the handle and shake it so the asparagus turns genty without having to use the tongs.
- Remove the garlic, place the asparagus in a serving dish, and grate some lemon zest on top.
PAN-FRIED ASPARAGUS
I love asparagus, and if you do, then you'll love this recipe. Nothing fancy, and it's ready in minutes. Great as a side dish; I love to make a meal out of it, by adding thin slices of chicken or beef, even shrimp. I like to put grated Parmesan cheese on top.

- Snap off the woody ends of the asparagus; most spears will break an inch or two from the bottom. Peel the stalks up to the flower bud. Meanwhile, start a charcoal fire or heat a gas grill; if you're cooking indoors, heat a cast-iron or other heavy skillet over medium-high heat until it smokes.
- To grill the asparagus spears, toss them with about a tablespoon of oil, mixing with your hands until spears are coated. Season well with salt and pepper. Grill until tender and browned in spots, turning once or twice, in all 5 to 10 minutes.
- To pan grill the asparagus, do not oil or season them. Just toss them in the hot skillet, and cook, turning the spears individually as they brown, until tender, 5 to 10 minutes. Remove as they finish, and season with salt and pepper.
- Mix together the lemon juice and shallots, then stir in enough olive oil to add a little body and take the edge off the sharpness of the lemon; the mixture should still be strong. Season it well with salt and plenty of black pepper, and stir in the parsley. Serve the asparagus hot or at room temperature with grilled fish. Spoon the sauce over everything.

ROASTED ASPARAGUS MMB
This is a very simple and versatile recipe. You can make it on the grill or in the oven, even stove top.

- Wash and snap the asparagus. To snap the asparagus, hold at the bottom of the stem and gently bend. It will naturally break where the tough end stops. Compost or throw away the hard ends.
- Lay out foil. Spread the asparagus on the foil. Sprinkle with some olive oil, salt pepper and crushed garlic. Gently toss. Spread out on the foil and top with lemon slices.
- Bake in the oven or on the grill turning once after about 10 minutes. If you do this stove top, you do not need the foil. The process is the same. You will need to stir several times.
