Berry Sorbet image

Chill your sorbet container before running the ice cream maker so when you transfer the sorbet to the freezer, it won't start melting.

4 cups (1 1/4 pounds) raspberries (red, black, or white) or blueberries
1 cup Simple Syrup for Berry Sorbet

Steps:

  • Puree berries and 1/3 cup water in a blender. Pour through a coarse sieve into a bowl. If using blueberries, strain again, through a fine sieve. (You should have 2 cups.) Stir in simple syrup.
  • Refrigerate until cold, about 1 hour. Process in an ice cream maker according to manufacturer's instructions, about 25 minutes. Transfer sorbet to an airtight container, and freeze until it hardens, at least 1 hour and up to 3 days.

Steps:

  • Pour frozen berries and 2 cups water into a medium saucepan and cook over medium heat, stirring occasionally, until they have thawed but are not hot. Add sugar and bring to a simmer; cook for about 5 minutes, stirring frequently.
  • Mix remaining 1/4 cup water and cornstarch together in a bowl. Add to the berry mixture and cook over medium-low heat to thicken slightly, about 3 minutes.

  • place half the bag of berries in the blender with about half the water and all the sugar.
  • mix until chunks are gone (you might have to work the blender action a bit, depending on how powerful your blender is).
  • gradually add the remainder of fruit and water.
  • mix until smooth and serve immediately.
  • *if necessary, add more water to aid in blender-mixing.
  • *if sorbet is not as firm as you wish, place in freezer for 20 minutes or so and stir before serving.

This gorgeous syrup is a super easy way to preserve otherwise-fragile berries. Drizzle it over ice cream, mix it with seltzer for an Italian soda, or pair it with bourbon or gin in a cocktail.

Yield Makes about 2 cups

Number Of Ingredients 4

1 pint (about 12 ounces) berries, any kind
Juice and finely grated zest of 1 lemon
1 1/2 cups sugar
3/4 cup water

Steps:

  • Gently rinse the berries, pat them dry, and put them in a medium heatproof bowl. Using a fork or potato masher, crush the berries into a relatively even consistency. Add the lemon juice and zest.
  • Combine the sugar and water in a small saucepan and put it over medium-high heat. Cook, stirring frequently, until all the sugar has dissolved. Pour the syrup over the berries and stir to combine.
  • Set aside and let cool to room temperature, then cover and refrigerate overnight. The next day, strain the mixture into a jar or bottle. (Enjoy the leftover fruit with ice cream or plain yogurt; otherwise, just discard it.)
  • Refrigerated, the syrup will keep for at least a month.

  • In a small saucepan, combine the water, corn syrup, and sugar; place pan over medium heat and stir until the sugar dissolves.
  • Increas the heat and boil without stirring for 1 minute.
  • Turn off the heat and let the mixture cool completely.
  • Place the sugar syrup, blackberries, lime juice, and liqueur in a blender; process until smooth.
  • If desired, pour the puree through a strainer to remove the seeds.
