- Lay bread on work surface. Spread avocado on one slice. Top with tomatoes and sprinkle with cheese. Toast both pieces of bread in a toaster oven until the plain piece is toasted and the cheese is starting to melt on the topped piece, 4 to 6 minutes.
- Remove the toast from the toaster oven with a spatula, and mound greens (or spinach) on top of the cheese side. Drizzle with vinegar and top with the remaining toast. Cut in half if desired and serve with pear.

- Preheat the oven to 400 degrees F.
- Place the tomato slices in a baking dish or plate. Pour the pickle brine over the tomatoes and season with pepper to taste. Place in the refrigerator for 30 minutes or up to 2 hours.
- Arrange the bacon in a single layer on a rack set inside a sheet tray. Season with 1/2 teaspoon black pepper. Roast the bacon until crispy, 10 to 12 minutes per side.
- In a medium bowl, combine the mayo, lemon juice, Worcestershire and garlic. Mix until well blended. Season with salt and pepper. Set aside.
- Season the avocado with salt and pepper.
- Assemble the sandwiches by spreading the aioli on each slice of bread. Layer 2 slices of bread with the lettuce and then the avocado. Top the other 2 slices of bread with the bacon and tomatoes (let the brine drip off first). Close the sandwiches. Cut the sandwiches in half and serve.

Steps:
- Lightly toast bread or roll.
- Toss avocado slices with a tiny bit of lemon juice to keep from getting brown.
- Spread some of the honey mustard on the bread.
- Place lettuce on bread, followed by tomato slices, cucumbers, red onion, and avocado slices.
- Drizzle remaining honey mustard over the vegetables.
- Top with sprouts and close up sandwich, securing with a toothpick.
- Note: To make honey mustard, combine honey and prepared yellow mustard together to taste.
- To make honey mustard salad dressing, simply add a little mayonnaise to the same mixture and thin with a tiny bit of milk if needed, to suit your taste.
- Of course, both honey mustard and honey mustard salad dressings are now sold in stores if you prefer to use ready made.
