1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
2 cups frank's hot sauce
8 ounces cream cheese
1 (8 ounce) package cheddar cheese
1 lb chicken

Steps:

  • Cook chicken by boiling, grilling, or use a roaster chicken an shred chicken once cooked. Mix chicken with hot sauce. Layer casserole dish with cream cheese (spread with spoon). Next layer the chicken and hot sauce on top of cream cheese. Next add the bag of shredded potatoes. At this point you can drizzle ranch or blue cheese dressing if you like or add it once the dish is cooked if you like - again this is optional not all people like the dressing. On top of that layer the cheddar cheese. Cook in 350 degree oven for 60 minutes.

canola oil, for frying
2 cups Simply Potatoes® Shredded Hash Browns
2 tablespoons cornstarch
1/4 cup minced jalapenos or 1/4 cup pickled jalapeno chili
2 teaspoons salt, divided

Steps:

  • Fill a heavy saucepan with canola oil to about 2 inches deep and place over medium high heat. Using a candy thermometer, heat oil until it reaches 325 degrees.
  • Place shredded hash browns in food processor (working in batches if necessary) and pulse until pieces are broken down into smaller bits. 8 - 10 pulses.
  • Place chopped hash browns in a bowl and add cornstarch, peppers, and 1 tsp salt. Mix to combine.
  • Shape mixture into tots or small balls about 3/4" in diameter.
  • Working in batches, fry tots in canola oil until golden brown, about 2 - 3 minutes each batch. Remove tots with a slotted spoon to a paper-towel lined plate or sheet pan. Sprinkle with remaining 1 tsp salt. Serve immediately.

2 tablespoons all-purpose flour
1/4 teaspoon pepper
2 tablespoons butter, divided
1/3 cup Louisiana-style hot sauce
1-1/4 teaspoons Worcestershire sauce
1 teaspoon minced fresh oregano
1/2 teaspoon garlic powder
Blue cheese salad dressing, optional

Steps:

  • Toss chicken with flour and pepper. In a large skillet, heat 1 tablespoon butter over medium heat. Add chicken; cook until no longer pink, 4-6 minutes per side. Remove from pan., Mix hot sauce, Worcestershire sauce, oregano and garlic powder. In same skillet, melt remaining butter; stir in sauce mixture. Add chicken; heat through, turning to coat. If desired, serve with blue cheese dressing.

5-Ingredient Fix Contest Entry. Just got inspired to make this dish based on the main ingredient - Simply potatoes - shredded hash browns. Creole seasoning and baking times can vary a bit based on the size of the chicken leg quarters used in this recipe. I did not want to do a breakfast dish.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
4 chicken leg quarters (with skin on)
1 (8 ounce) container cream cheese with vegetables
1 large egg, lightly beaten
3 teaspoons creole seasoning

Steps:

  • Preheat oven to 350 degrees.
  • From the top side of each chicken leg quarters, make a pocket by using your fingers to separate the skin. Keep the skin intact at the bottom of the thigh. Rub the chicken leg quarters inside and outside with 2 teaspoons of Creole seasoning.
  • In a medium bowl, mix together the Simply Potatoes - Shredded Hash Browns with the beaten egg and cream cheese. Reserve one cup of this mixture.
  • Divide the remaining mixture into 4 portions and stuff the pockets of each chicken leg quarters. Gently pull the skin over to cover the mixture.
  • Place chicken on baking pan. Top each chicken leg quarters with the reserved potato mixture. Sprinkle the prepared chicken with remaining 1 tsp Creole seasoning.
  • Bake in oven for 1 to 1 1/2 hour depending on size of chicken leg quarters. About 10 minutes before being done, brush the chicken with liquids from the pan. Continue baking for another 10 minutes.
