Colcannon Potatoes are an Irish mashed potato recipe with mixed with greens and scallions and LOTS of butter and cream. You can't go wrong with this green-filled dish on St. Patrick's Day!

4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks
Salt
5 to 6 Tbsp unsalted butter (with more butter for serving)
3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
3 green onions (including the green onion greens), minced (about 1/2 cup)
1 cup milk or cream

Steps:

  • Boil the potatoes: Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt, and bring to a boil. Boil until the potatoes are fork tender, 15 to 20 minutes. Drain in a colander.
  • Cook the greens and the green onions with butter: Return the pot to the stove and set over medium-high heat. Melt the butter in the pot and once it's hot, add the greens. Cook the greens for 3-4 minutes, or until they are wilted and have given off some of their water. Add the green onions and cook 1 minute more.

My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

8 large russet potatoes
1 tablespoon butter
½ small onion, minced
salt and ground black pepper to taste
½ cup butter, melted
½ cup heavy whipping cream
½ cup half-and-half
¼ teaspoon paprika
2 tablespoons chopped fresh parsley

Steps:

  • Place the potatoes into a large pot and cover with salted water; bring to a boil. Cook the potatoes at a boil for 10 minutes; drain. Set potatoes aside to cool.
  • Once potatoes are cool enough to handle, slide the skin from the potatoes and discard; refrigerate peeled potatoes until completely cold, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Grate 2 of the potatoes into the bottom of the prepared baking dish. Sprinkle about 1/4 of the minced onion over the layer of potato; season with salt and black pepper. Repeat layering until all ingredients are used and dish is full.
  • Drizzle melted butter, whipping cream, and half and half over the potato mixture; season with paprika.
  • Bake in the preheated oven until the top is bubbling, about 30 minutes.
  • Garnish with chopped fresh parsley to serve.

1 lb corned beef, leftover or 1 lb deli corned beef, cut into strips
1/2 fresh cabbage, thinly shredded
1 medium onion, sliced thinly
1/2 lb bacon, cut into thin strips
1 (20 ounce) package Simply Potatoes Shredded Hash Browns
8 ounces irish cheddar cheese or 8 ounces any aged cheddar cheese, shredded

Steps:

  • Brown thin strips of bacon in large skillet til golden & crispy. Remove bacon to paper towel lined plate.
  • In the same skillet saute the onion until it begins to soften and then add the cabbage & cook until the cabbage is tender but not mushy.
  • Stir cabbage & onion, corned beef & bacon into Simply Potatoes shredded hash brown potatoes & place all in a 9 x 13 casserole dish. Top with the shredded cheese & bake in 350 degree over for 30-45 minutes until cheese is melted & bubbly and everything is hot.

1 (20 ounce) bag Simply Potatoes Garlic and Herb Hash Browns
1 cup shredded carrot
1 cup shredded cabbage
1 small minced onion
1 cup shredded monterey jack cheese

Steps:

  • Combine first four ingredients.
  • Follow the directions on the bag for preparing the hash browns.
  • When done, sprinkle the cheese on top and place in a 375 degree oven until cheese melts and begins to brown.
  • Remove from oven and let cool for 5 minutes.
  • Enjoy!

1 cup heavy cream
1/2 teaspoon salt
1/2 cup chicken broth
1 1/2 cups shredded cheddar cheese

Steps:

  • Arrange layer over potatoes in greased casserole dish.
  • Sprinkle with salt.
  • Repeat layering, ending in potatoes.
  • Mix cream and broth, pour over potatoes.
  • Sprinkle cheese over top and cover dish with foil.
  • Preheat oven to 400 degrees and bake for 30 minutes.
  • Remove foil and continue baking for another 10 minutes.

1 (16 ounce) package Simply Potatoes (depending on number of people)
1/2-1 head green cabbage, sliced thin and cut into smaller pieces
1 large sweet onion, chopped
8 ounces shredded cheddar cheese (or your choice)
1/4 cup olive oil (for searing the cabbage and onion)

Steps:

  • For one package of simply mashed potatoes (I use either the garlic or mashed with skins) spray an 8 x8 glass casserole/pan. In a large skillet cook cabbage & onion in olive oil over medium heat just until tender, seasoning with salt and pepper to taste. In casserole dish spread out one layer of potatoes about 1/2 package, then 1/3 of the cheese, then cabbage and onion. Top with remaining potato and cheese. Bake in a preheated 350 degree oven for 30 minutes or cheese is lightly golden brown.

1 2/3 cups mayonnaise
1 1/2 cups peaches (finely chopped)

Steps:

  • First microwave Simply Potatoes Traditional Mashed Potatoes on high for 3 minutes with plastic film peeled on the corner for ventilation.
  • Then peel off plastic film entirely and stir Simply Potatoes Traditional Mashed Potatoes thoroughly, then place back in microwave for 1 minute.
  • Take Simply Potatoes Traditional Mashed Potatoes and pour into a mixing bowl.
  • Add 1 2/3 cups of mayonnaise, 1 1/2 cups of finely chopped peaches, 1 1/2 cups of finely chopped ham and 2 tbsp of white cheddar cheese to mixing bowl. Stir until all ingredients are thoroughly mixed, then serve!
