1 cup mayonnaise
1 tablespoon Dijon mustard
3 cups Bisquick baking mix
2 1/2 cups shredded sharp cheddar cheese
1 lb sweet Italian sausage, casings removed
3 tablespoons cold butter, cut into small bits
1 jalapeno pepper, seeded and finely chopped

Steps:

  • Preheat the oven to 375°; grease two baking sheets well with butter or coat with cooking spray.
  • Dipping sauce: in a small bowl, whisk together the mayonnaise and mustard; cover with plastic wrap and refrigerate until the sausage balls are ready to serve.
  • Sausage balls: in a large bowl, knead together all of the sausage ball ingredients until well combined.
  • If the mixture seems dry, add 1-2 tablespoons water, as needed to bring the mixture together.
  • Form the mixture into 1 1/4-inch balls and place them on the prepared baking sheets.
  • Take care that the sausage balls don't touch, as that will make them take longer to cook.
  • Bake until they are golden all over, about 25 minutes.
  • Set the sausage balls on paper towels to drain off excess grease, then place them on a pretty platter with some cocktail sticks so people don't have to eat them with their fingers.
  • Serve warm with the mustard-mayo sauce for dipping.

16 corn husks
2 teaspoons kosher salt
1 tablespoon sugar
1/2-ounce chicken base dissolved in 2 ounces cold water
1 tablespoon chopped fresh garlic
1/2 teaspoon grated nutmeg
1/4 teaspoon ground allspice
1/4 cup chopped and seeded jalapenos
1 tablespoon crushed black peppercorns
1/2 teaspoon cayenne pepper
2 1/2 pounds coarsely ground pork butt

Steps:

  • Heat a smoker or grill to 250 degrees F.
  • Soak corn husks in warm water for 15 minutes. Mix all of the dry ingredients together in a large bowl and add the ground pork. Combine well. Put approximately 6 ounces of the sausage mixture 8 of the open wet corn husks. Put another corn husk on top and wrap and tie each end with string. Smoke until the sausage temperature reaches 160 degrees F on an instant-read thermometer. Transfer the husks to a serving platter and serve.

1 pound sage-flavored pork sausage (such as Neese's® Extra Sage Sausage), at room temperature
1 pound hot pork sausage (such as Neese's® Hot Sausage), at room temperature

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Mix baking mix, Cheddar cheese, sage-flavored pork sausage, and hot pork sausage together in a bowl. Roll mixture into golf ball-sized balls; arrange balls on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the middle and browned on the outside, 25 to 30 minutes.
