GARLIC HERB SKILLET POTATOES

- Melt the butter and heat the olive oil in a large skillet over medium heat. Arrange the potato slices across the bottom of the skillet in a single layer. Cook without stirring for 5 minutes, or until the potatoes have begun to brown on the bottom.
- Sprinkle potato slices with rosemary, thyme, oregano, parsley, and paprika. Turn the potatoes, and continue cooking 5 minutes, or until tender. Turn off the heat, and sprinkle the garlic and cayenne over the potatoes. Lightly toss for about 1 minute, until the garlic has softened.

SKILLET-BROWNED POTATOES AND ONIONS

Steps:
- Heat the vegetable oil in a heavy pan over medium-low heat.
- Add the garlic and cook just until fragrant, 2 minutes (do not brown).
- Remove the garlic from the pan and discard, then add the onion and cook until it is soft and translucent.
- Add the potatoes, season to taste with salt and pepper, and continue cooking, turning frequently until they are golden and crispy on all sides, 25 to 30 minutes.
- If your potatoes begin to stick to the pan, feel free to add another tablespoon of oil. It's also possible that your heat is a little too high, so try turning it down.
- Taste and adjust the seasoning as needed, then add the scallions and continue cooking, stirring often, until they're tender, 2 to 3 minutes longer.

- Heat the oil and butter in a skillet.
- Add the onions and cook until soft and lightly browned.
- Remove the onions from the pan with a slotted spoon.
- Reserve.
- Slice the potatoes into 1/4 inch slices. Add to the hot pan and brown on both sides. Return the onion to the pan, toss and season.
- Serve warm.

- Place potatoes in large pot. Add enough cold water to cover. Bring to boil. Cover partially and cook until potatoes are just tender but still hold their shape, about 15 minutes. Drain and cool. Cover and refrigerate at least 4 hours or overnight.
- Cut potatoes in half. Melt butter in very large skillet over medium-high heat. Add potatoes; cover skillet and cook until potatoes brown, stirring occasionally, about 10 minutes. Season generously with salt and pepper. Add dill; toss to coat. Transfer to bowl and serve.

- Cook potatoes in boiling water to cover until almost tender, about 10 minutes; drain. Heat bacon drippings in a heavy ovenproof skillet over medium heat; add potatoes and cook 10 minutes or until lightly browned, turning frequently. Sprinkle with salt and pepper. Bake at 400 degrees for 30 minutes or until browned, turning once. Stir in molasses and sprinkle with parsley, if desired. Serve immediately.
