- Cook the pasta according to the package directions in a large pot of boiling water. Drain.
- There are a few options for cooking the chicken.
- You can grill it for 6-8 minutes per side, pan fry it over medium heat for 6-8 minutes per side (use a bit of olive oil in the pan), or bake it at 375 degrees F for 20-30 minutes.
- The exact cook time will really depend on the thickness of your chicken so using a meat thermometer to judge when it's done (165 degrees F at the thickest part of the breast) is the best bet for perfectly cooked chicken.
- Another hands off option for cooked chicken is to make it earlier in the day in the slow cooker, or while you are making the pasta and Alfredo sauce in the Instant Pot.
- In a medium saucepan, over medium heat, melt the butter.
- Add the garlic and cook, stirring for about 30 seconds, until fragrant.
- Whisk in the flour, and cook, stirring constantly, until it is lightly browned, about 1 minute.
- Slowly whisk in the milk, stirring until it is incorporated and smooth.
- Add the thyme, oregano, salt, pepper, and parmesan and whisk continuously for 3-4 minutes until the sauce has thickened slightly.
- Reduce the heat to a low simmer, stirring occasionally, until the pasta and the chicken are ready.

- Cook pasta according to the directions on the box; set aside.
- Heat olive oil in a skillet over medium-high heat.
- Add garlic and cook for 1 minute or until fragrant.
- Stir in flour; stir until combined.
- Slowly whisk in chicken broth.
- Cook and stir until mixture boils and thickens; remove from heat.
- Stir in parmesan cheese; stir until melted.
- Whisk in the yogurt; whisk until combined.
- Season with dried parsley, salt and pepper.
- Sauce will continue to thicken as it stands. If sauce is too thick, add a little more milk.
- Pour sauce over cooked fettuccine; mix until combined.
- Transfer to plates and top with previously prepared chicken.
- Garnish with basil ribbons and serve.

CHICKEN FETTUCCINE ALFREDO
Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

- Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
- Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
- Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
- Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

- Cook fettuccine as directed on package, omitting salt. Drain; return to saucepan. Cover to keep warm; set aside.
- Meanwhile, in medium bowl, stir milk, flour, salt, black pepper and red pepper with wire whisk until smooth. In 2-quart saucepan, melt butter over medium-low heat. - In 4-quart Dutch oven, cook linguine as directed on package. Drain; rinse with hot water. Return to Dutch oven to keep warm.
- Meanwhile, in 2-quart saucepan, melt butter over medium heat. Add shallot and garlic; cook and stir 1 minute. In medium bowl, beat half-and-half and flour with wire whisk; add to saucepan. - In a large skillet over medium heat combine chicken, 2 tablespoons butter, 2 cloves garlic, and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.

- Place chicken in a large Ziploc bag or place on a baking sheet. Pierce the chicken all over with a fork. Drizzle with oil, garlic salt, and pepper. Let marinate. If you have the time, let the chicken marinate for at least 30 minutes (4-8 hours is ideal).
- Preheat grill* to medium heat. Brush grill with oil to prevent sticking. Place chicken on the grill. Cook for approximately 5 - 6 minutes per side, depending on the thickness of chicken. The internal temperature of the chicken should reach 165 degrees. Remove chicken from grill and let rest for 5 minutes.
- In skillet, over medium heat, add butter and let it begin to melt. Stir in diced garlic and let simmer for 1 minute. Stir in flour and stir quickly to form a paste. Quickly stir in chicken broth and use whisk to remove any lumps.
- Stir in 1% milk. Let simmer for 6-8 minutes or until it starts to thicken. Turn heat to medium-low and add parmesan cheese (a little at a time, stirring after each addition). Add more salt and pepper, to taste. Remove from heat and let thicken.
