HOW TO MAKE A HASSELBACK POTATO
The seasoned Hasselback potato turns out crispy on the outside and tender on the inside. Almost like thick potato chips, but better! Cool kitchen hacks for easier slicing, too.

- Preheat the oven to 425°F.
- Line a baking sheet with either aluminum foil, parchment paper or a silicone mat or use a baking stone (as in video).
- Rub the potatoes all over with bacon fat or olive oil and sprinkle with kosher salt. Slice off a thin portion on one side of the potato and set aside.
- Place the potato on the flat cut side and using chop sticks or wooden spoons, place one on either side of the potato lengthwise. Make 1/8" thick slices, cutting down to the chop stick or wooden spoon. This way you do not cut through the potato, you just achieve the proper slices to fan out.
- Place the potato slice flat side down on the lined baking tray and place the fan sliced potato cut side down on top of the slice. This will make the potato fan out on the arch.
- Mince herbs like thyme and parsley. Add to the melted butter along with any seasoning you prefer.
- Lightly brush the potato and in between slices, get in and around each slice as best you can. Season with kosher salt, fresh cracked pepper or seasoning of choice.
- Bake for 30 minutes, baste with butter and continue baking for another 20 minutes. Potatoes will be crispy and golden brown. Top with any remaining butter, fresh herbs and serve.

SWEDISH HASSELBACK POTATOES
Easy recipe for Swedish Hasselback Potatoes. These potatoes are very popular in the Nordic kitchen and is a great side dish for a lot of different food.

- In a sauce pan; melt the butter at low heat.
- When the butter is melted; chop the herbs and garlic and add it to the butter. Let it cook/sit for about 5-10 minutes on very little heat.
- Clean and peel the potatoes.
- At the bottom side of the potatoes make a small horizontal cut. This will make sure the potatoes sits stable on the oven plate.
- On the opposite side; make deep cuts side-by-side into the potatoes. The cuts should be about 2/3 into the potatoes and about 2 mm apart.
- On a parchment paper covered oven plate; place the potatoes side-by-side with the grooves upwards.
- Brush the potatoes with the butter and herb mixture.
- Bake the potatoes for about 60 minutes at 200 C (400 F). The cooking time is depended on the size of the potatoes. The potatoes are done when you can easily stick a fork into them. During the cooking brush the potatoes 2-3 times extra with the herb mixture.
HASSELBACKSPOTATIS
Hasselbackspotatis (or Hasselback potatoes) is a Swedish recipe made from potatoes cut into thin slices up to about halfway, with butter and breadcrumbs added on top.

- Preheat the oven to 440 F (225°C).
- Peel the potatoes, then cut them into thin slices of about 1/10 inch (2 to 3 mm), being careful not to cut the base.
- 2 Tips- When cutting, place the potato in the center of a wooden spoon to avoid cutting them to the end.- When cutting, place the potato on two wooden sticks (for example, the thin handles of two wooden spoons) so the knife stops at the right height thanks to the thickness of the sticks.
- Place the sliced potatoes in a buttered baking dish and brush them with half the butter.
- Sprinkle with salt, and bake for about 45 minutes.
- Add the rest of the butter halfway through cooking, and sprinkle with breadcrumbs 10 minutes before the end of cooking.
- The potatoes are ready when they are golden brown.
- Garnish with chopped parsley (optional)

- Preheat the oven to 450 degrees F.
- Stir together the butter, olive oil, chives and some salt and pepper in a small bowl.
- Place a potato between the handles of 2 wooden spoons or 2 chopsticks. Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoon handles will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.

I created this recipe by accident. After already starting dinner one night I realized I didn't have enough potatoes on hand to make mashed, so I improvised and came up with these baked potato slices. It's quick and easy and they are delicious. Just line your cookie sheet with nonstick foil and clean up is a snap! Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C).
- Place potatoes, garlic powder, black pepper, celery seed, paprika, cayenne pepper, and salt into a zip-top bag. Shake to coat evenly.

SLICED BAKED POTATOES
An easy way to give the bland potato a lot of new flavor ! The light coating of butter and cheese gives the potatoes a crisp outside. These are fun to make, and look delightful ! Oven baked, or microwave. Oven bake time: appx. 1 hour. Microwave bake time 16-20 minutes.

- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.
SWEDISH BAKED POTATOES (HASSELBACKSPOTATIS)

- Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato (fan like).
- Put half of the butter and garlic in an oven proof dish and place the potatoes in the dish.
- Sprinkle with salt & pepper.
- Drizzle with remaining butter and garlic.
- Bake in 375°F oven (takes about and hour depending on the size of the potato).
- Baste occasionally with the butter in the dish.
- After 30 minutes sprinkle with the cheese and bread crumbs- do not baste after putting on the cheese and crumbs.

- Preheat oven to 400 degrees, and place rack in the middle of the oven. In a medium bowl, combine the potatoes, olive oil, and thyme. Season with salt and pepper, and toss until well coated.

- Preheat oven to 425°F Using a sharp kitchen knife, carefully start making a series of vertical cuts width-wise through the potato, making sure not to cut all the way through - cuts should only be 3/4 of the way through the potato. (Considering placing the potato on a wooden spoon, or putting one chopstick on each side of the potato. This way, when you slice, the spoon/chopstick stops the knife from going all the way through.) Rinse the potatoes after slicing them to get ride of excess starch.
