These ground chicken Sloppy Joes are a healthier alternative to regular beef Sloppy Joes.

cooking spray
2 pounds ground chicken
½ cup chopped onion
¼ cup chopped bell pepper
salt and ground black pepper to taste
½ cup barbeque sauce
½ cup ketchup
¼ cup water, or more as needed
2 tablespoons prepared yellow mustard
8 (1.5 ounce) hamburger buns
1 cup shredded Cheddar cheese
¼ cup dill pickle slices, or to taste
¼ cup sliced onion, or to taste

Steps:

  • Spray a pan with cooking spray and heat over medium-high heat. Add chicken, onion, bell pepper, salt, and pepper. Cook and stir until chicken is no longer pink, 5 to 7 minutes.
  • Add barbeque sauce, ketchup, 1/4 cup water, and mustard. Mix thoroughly and add more water if the mixture seems too thick. Reduce heat to low and simmer for 10 to 15 minutes.
  • Serve on hamburger buns topped with Cheddar cheese, pickle slices, and sliced onion.

Steps:

  • In large nonstick skillet, brown ground chicken, onion and green pepper until vegetables are tender and until chicken is no longer pink, breaking up the chunks with a wooden spoon.
  • Stir in barbecue sauce and heat through.
  • Serve on lettuce-lined buns and top with cheese, if desired.

1/4 cup water
3 tablespoons brown sugar
3 tablespoons white vinegar
3 tablespoons ketchup
2 tablespoons butter
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon paprika
1 teaspoon ground mustard
1/2 teaspoon cayenne pepper
1 broiler/fryer chicken (3 pounds), cut up and skin removed
4 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • In a small saucepan, combine the first 11 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat. , Place the chicken in a 3-qt. slow cooker. Top with sauce. Cover and cook on low for 3-4 hours or until chicken juices run clear. , Remove chicken to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon some of the sauce over chicken and serve the remaining sauce on the side.

3 -4 lbs chicken thighs or 3 -4 lbs chicken drumsticks
1 1/2 cups dry sherry
1 cup finely chopped onion
1/4 cup lemon juice
2 tablespoons minced garlic
1 (15 ounce) can tomato puree
1/4 cup honey
3 tablespoons molasses
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon ground red pepper
1/4 teaspoon black pepper
2 tablespoons white vinegar

Steps:

  • Put the chicken in a large ziplock bag and prepare marinade.
  • Marinade- in a medium bowl stir together the sherry, onion, lemon juice, and garlic.
  • Pour over chicken; seal bag.
  • Marinate for at least 2 hrs, overnight if possible.
  • Flip the bag occasionally.
  • Drain chicken, RESERVING marinade.
  • Cover and chill chicken until ready to grill.
  • For the sauce- in a large saucepan combine the reserved marinade, tomato puree, honey and the molasses, salt, thyme, red pepper, and black pepper.
  • Bring to boiling; reduce heat.
  • Simmer, uncovered, about 30 minutes or until reduced to 2 cups.
  • Remove from heat and stir in vinegar.
  • Preheat grill.
  • Reduce to medium heat and place chicken bone side down on the grill rack.
  • Cover and grill for 50-60 minutes or until tender and no longer pink, brushing with some of the sauce during the last 15 minutes of grilling.
  • To serve, reheat and pass the remaining sauce over chicken.
