SLOW COOKER APPLE CIDER BRAISED PORK
This pork shoulder recipe combines pork shoulder with apple cider in a slow cooker, where it is cooked for several hours until tender. Reduce the cooking liquid to create a thick and flavorful sauce you can pour over the sliced pork.

- Season pork with salt and black pepper. Heat oil in a large skillet over high heat. Sear pork on all sides in the hot oil until browned, about 3 minutes per side. Transfer pork to the slow cooker.
- Reduce stovetop temperature to medium; cook and stir shallots and celery in the skillet until they begin to soften, 3 to 4 minutes. Pour in apple cider vinegar and cook, scraping up any browned bits, until liquid is nearly evaporated, 4 to 5 minutes.
- Pour shallot mixture over pork shoulder in the slow cooker. Add apple cider, garlic cloves, and bay leaf. Cover, set slow cooker to Low, and cook until fork-tender but not falling apart, about 6 hours. Turn pork over every 1 to 2 hours. Remove pork roast to a plate and cover loosely with foil.
- Pour remaining liquid from the slow cooker through a fine mesh strainer into a large saucepan; place over high heat. Discard bay leaf and other solids. Bring sauce mixture to a boil, decrease heat and cook, skimming fat from the top, until reduced to 1/4 of the original volume, about 10 minutes.
- Remove sauce from heat and stir in Dijon mustard and cayenne pepper. Slowly whisk in cold butter until incorporated. Sprinkle in fresh herbs and season with salt and black pepper to taste.
- Cut pork into 1/4-thick slices and serve with sauce poured over the top.

- Place carrots, apples, sweet potatoes, onion and garlic in bottom of crockpot. Place pork tenderloin on top. Sprinkle with salt and pepper.
- Mix together spices, apple cider, Worcestershire sauce and brandy (if using) in a small bowl.
- Pour over pork and vegetables. Stir gently to combine.
- Cover and cook on low 6-8 hours or high 4 hours (or until pork falls apart and vegetables are tender).
- Once done, use a ladle to strain out as much liquid as you can into a medium saucepan. Whisk in cornstarch and bring to low boil over medium-high heat. Turn down to low and simmer 5-6 minutes until slightly thickened to a gravy-like consistency.
- Slice pork and serve with vegetables and apple cider gravy.

PORK TENDERLOIN WITH APPLE CIDER REDUCTION

- Heat oven to 500 degrees F and arrange rack in the upper third.
- Pat pork tenderloins dry with paper towels, brush with oil, and season well with salt and freshly ground black pepper. Heat a large frying pan over medium-high heat. Add 2 pieces of pork tenderloin and cook until brown on all sides, turning occasionally, about 4 minutes. Set pork aside on a baking sheet and repeat with remaining pieces.
- Place pork in oven and cook until an instant-read thermometer inserted in the middle of the tenderloin registers 145 to 150 degrees F, about 15 minutes. Meanwhile, place pan over high heat, add cider and vinegar and stir, scraping up any browned bits. Cook until mixture is reduced by 2/3, about 8 minutes. Reduce heat to medium, stir in maple syrup and remove from heat until pork is cooked.
- When pork is ready, remove to a cutting board to rest about 5 minutes. Warm sauce over medium-high heat, add pork and any accumulated juices and spoon sauce over meat to completely coat. When pork is warm, return pork to cutting board and slice thinly. Serve with pan sauce spooned over.
SLOW COOKER CIDER PORK ROAST

- Combine 1/4 of the onion, 1/2 of the apple, and the garlic in the bowl of a food processor. Process until smooth. Transfer to slow cooker along with the apple cider and water.
- Season the roast with salt and pepper. Combine the ginger and flour in a shallow container. Gently press the roast onto the flour mixture to coat all sides. Brush off any excess flour. Heat the oil in a large, heavy skillet. Brown the pork in the hot oil, turning until golden on all sides. Place the browned roast in the slow cooker and scatter the celery and the remaining onion and apple on top. Cook on low for 4 hours, then add carrots. Cook for an additional 3 hours.
- Remove the cooked roast and carrots to a heated platter. If desired, thicken the cooking juices from the slow cooker to make a gravy.

- Cook meat in nonstick skillet on medium-high heat 4 min. on each side or until golden brown on both sides. Remove from heat.
- Trim leek; discard dark green portion. Cut leek lengthwise in half; rinse well. Cut each piece crosswise into 1/4-inch-thick slices; place in slow cooker sprayed with cooking spray. Top with potatoes.
- Whisk flour, mustard and dressing in medium bowl until blended. Stir in apple cider. Add to vegetable mixture in slow cooker; mix lightly. Top with meat; cover with lid. Cook on LOW 2-1/2 to 3 hours (or on HIGH 1 to 1-1/4 hours).
- Add apples; cook, covered, on LOW 30 min. (or on HIGH 15 min.)

- Heat the butter and olive oil in a large ovenproof skillet with a lid or in a Dutch oven over medium-high heat. Season the tenderloins with the salt and pepper. Sear the tenderloins until brown on both sides, 3 to 5 minutes per side. Add the apple cider, vinegar, and thyme and simmer, scraping up all the browned bits from the bottom of the pan.
- Cover the pan and transfer to the oven. Cook, turning once after 10 minutes. Cook for 10 minutes more, or until an instant-read thermometer inserted into the thickest part of the meat registers 150ºF.
- Transfer the pork to a platter and cover loosely with aluminum foil. Put the skillet with the cider juices on the stove over high heat and cook until the liquid is slightly thickened and reduced to 1/2 cup, 5 to 7 minutes. Slice the pork and serve with the sauce spooned over.
