- Place beef in a 5-qt. slow cooker. Add the celery, onion and green pepper. In a bowl, combine the ketchup, tomato paste, brown sugar, vinegar, chili powder, lemon juice, molasses, salt, Worcestershire sauce and mustard. Pour over beef mixture. Cover and cook on low for 8-9 hours or until meat is tender., Skim fat from cooking juices if necessary. Shred beef. Toast rolls if desired. Use a slotted spoon to serve beef on rolls.

- Season roast with garlic salt and pepper and place in slow cooker. Add all remaining ingredients but the BBQ sauce.
- Cover and cook on LOW for 9 to 11 hours, until beef is very tender.
- Shred meat with a fork after cooking and retain 1 cup of the juice from cooking.
- Add bottle of BBQ sauce.
- Cover and cook on high for another 45-60 minutes.

- Spray slow cooker with non-stick cooking spray.
- In a small bowl, mix together the salt, ground pepper, onion powder, garlic powder, paprika, and parsley. Set aside.
- In another medium-sized bowl, mix together cream of mushroom soup and BBQ sauce.
- Layer half of the potatoes, half of the onions, half of the carrots, and half of the green beans in the bottom of the slow cooker. Sprinkle half of the seasonings over the vegetables.
- Break the ground beef in small bite-sized pieces (uncooked) and place half over the vegetables.
- Spoon half of the sauce mixture over the meat.
- Repeat the entire process all over again, layering it on top of each other.
- Place the lid on top of the slow cooker and cook on low for 7-8 hours or on high for 3.5-4 hours.
- Scoop servings into bowls and top with shredded cheddar cheese (and more BBQ sauce or even ketchup, it desired).

I found the original recipe on AllRecipes and made a few changes. I especially like to serve this in the summer, when we're in the mood for barbecue and I don't want to be stuck in a hot kitchen. The original recipe calls for a boneless chuck roast, but I've experimented with different cuts of meat and have found that we prefer the eye of round or sirloin tip. The leaner meats allow the roast to cook without diluting the barbecue sauce.
