Slow Cooker Cajun Potato Soup image

Slow Cooker Cajun Potato Soup - easy potato soup jazzed up with cajun seasoning and andouille sausage. Frozen hash browns, chicken broth, andouille sausage, cajun seasoning, chicken soup and cream cheese. SO easy and SOOOO good. Everybody went nuts over this! Can use smoked turkey sausage instead of andouille. Serve with some crusty bread for an easy weeknight meal!

1½ pounds andouille sausage or smoked sausage, (sliced)
1 (30 to 32-oz) bag frozen shredded hash browns
3 (14.5 oz) cans chicken broth
1 (10.75-oz) can cream of chicken soup
2 Tbsp minced onion flakes
3 Tbsp Cajun/Creole Seasoning
1 tsp pepper
½ tsp salt
1 (8-oz) package cream cheese

Steps:

  • In a large skillet over medium heat, cook sausage until brown. About 5 minutes. Add to slow cooker.
  • Add everything except for the cream cheese to the slow cooker. Cook for 8-10 hours on low.
  • About 15 minutes before serving, add cream cheese. Stir until melted and thoroughly combined.

8 pounds potatoes, peeled and cubed
1 small onion, chopped
2 tablespoons butter
2 cubes chicken bouillon
2 tablespoons dried parsley
6 cups water
2 cups milk
½ cup all-purpose flour

Steps:

  • Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
  • At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.
