1 tablespoon Madras curry powder
1 teaspoon garlic powder
1 teaspoon pepper
8 boneless skinless chicken thighs (about 4 ounces each)
1 medium onion, thinly sliced
1-1/2 cups Goya mojo criollo marinade, well shaken
2 tablespoons canola oil
2 tablespoons all-purpose flour
Optional: Hot cooked rice, green onions and fresh cilantro leaves

Steps:

  • Combine curry powder, garlic powder and pepper; sprinkle over chicken, pressing to help mixture adhere. Place chicken in a 3-qt. slow cooker. Sprinkle with onion. Carefully pour mojo criollo marinade along the sides of slow cooker, avoiding chicken to keep coating intact. Cook, covered, on low until a thermometer reads 170°, 4-6 hours. Remove chicken; keep warm., Pour cooking juices from slow cooker into a measuring cup; skim fat. In a large saucepan, heat oil over medium heat; whisk in flour until smooth. Gradually whisk in cooking juices. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Reduce heat; add chicken and simmer about 5 minutes. If desired, serve with rice, green onions and cilantro.

2 Spring Onions
Handful Thyme
2 Garlic Cloves
Handful Coriander
2 Tomatoes
6 Boneless Chicken Thighs
2 Tbsp Caribbean Curry Powder (if you don't have any - use Chinese or Indian)
1 Chicken Stock Cube
1/4 Cup Water
1 Tsp Salt

Steps:

  • To a food processor, add the onion, garlic, spring onions, thyme, coriander and tomatoes
  • Blitz until smooth. If you don't have a food processor, you could instead hand chop these ingredients until fine
  • To the slow cooker, add chicken thighs and the blended mixture
  • Then add the curry powder, stock cube, water and salt
  • Stir to combine then put the lid on the slow cooker
  • Cook on high for low for 5 hours or high for 3
  • Once cooked, use two forks to pull the chicken apart
  • Serve with rice, topped with coriander

I had been craving the curried chicken I used to get from a Jamaican restaurant before I moved. I found this recipe at recipecottage.com and this is the closest I've found.

2 -3 lbs chicken (thighs,legs,or breasts)
2 onions
sliced garlic (optional)
1 tablespoon grated fresh ginger
4 -5 sprigs fresh thyme, snipped
garlic powder (to coat chicken)
seasoning salt (to coat chicken)
black pepper (to coat chicken)
6 tablespoons jamaican curry powder (i.e. Walker's Wood, ACME, Blue Mountain)
lemon pepper, to coat chicken
1/2 scotch bonnet pepper, minced

Steps:

  • Mix the meat with all the above ingredients except the thyme in a.
  • large pot to coat. Ensure the meat is thoroughly mixed and covered.
  • Place the mixture in the crock pot, add the snipped thyme.
  • Cook on high 1 hour, reduce to low and cook for 5-6 hours or until tender and juices run clear.

1/4 cup Massaman curry paste (or red curry paste and 1 tablespoon sugar)
2 teaspoons fish sauce
2 teaspoons minced peeled fresh ginger
Finely grated zest and juice of 1 lime, plus wedges for serving
1 stalk lemongrass
1/4 cup roasted unsalted peanuts, plus more for topping
1 pound small red-skinned potatoes, halved
2 pounds skinless, boneless chicken thighs
Kosher salt
Cooked white rice, for serving
Chopped fresh cilantro, for topping

Steps:

  • Whisk 1/2 cup water, the coconut milk, curry paste, fish sauce, ginger and lime zest in a 6- to 8-quart slow cooker. Smash the lemongrass stalk with the flat side of a knife or a meat mallet and tie in a knot. Add the lemongrass, peanuts and potatoes to the slow cooker. Top with the chicken thighs and gently press to submerge in the liquid. Cover and cook on low, 7 hours.
  • Uncover the slow cooker and skim off some of the fat. Stir in the lime juice; season with salt. Break up the chicken into smaller chunks. Let stand 5 minutes, until the sauce thickens slightly; discard the lemongrass.
  • Serve the curry with rice. Top with peanuts and cilantro and serve with lime wedges.

1 large onion, roughly chopped
3 tbsp mild curry paste
400g can chopped tomatoes
2 tsp vegetable bouillon powder
1 tbsp finely chopped ginger
1 yellow pepper, deseeded and chopped
2 skinless chicken legs, fat removed
30g pack fresh coriander, leaves chopped
cooked brown rice, to serve

Steps:

  • Put 1 roughly chopped large onion, 3 tbsp mild curry paste, a 400g can chopped tomatoes, 2 tsp vegetable bouillon powder, 1 tbsp finely chopped ginger and 1 chopped yellow pepper into the slow cooker pot with a third of a can of water and stir well.
  • Add 2 skinless chicken legs, fat removed, and push them under all the other ingredients so that they are completely submerged. Cover with the lid and chill in the fridge overnight.
  • The next day, cook on Low for 6 hrs until the chicken and vegetables are really tender.
  • Stir in the the chopped leaves of 30g coriander just before serving over brown rice.
