This healthy Slow Cooker Chicken Curry is SO incredibly easy. No browning, no preparation. Just leave it to bubble away and come home to the most delicious, creamy but light, coconut milk curry.

4 Cloves Garlic (Peeled and chopped, or frozen, ready prepared)
2 tsp Fresh ginger (Peeled and grated, or use a ready prepared paste)
3 tbsp Medium curry powder
1/2 tsp Chilli flakes
1/2 tsp Salt
100 g Mango chutney
400 ml Reduced fat Coconut Milk
1 Large Onion (Peeled and very finely chopped, I use frozen ready prepared)
1 kg Boneless, skinless chicken thighs
1 tsp Garam Masala

Steps:

  • Put everything APART FROM the Garam Masala into the slow cooker (crock pot). Give it a good stir.
  • Put the lid on and cook on HIGH for 4 hour or LOW for at least 6 hours.
  • When the chicken is tender and falling apart, gently shred it with two forks and stir in the Garam Masala. Mix well until everything is coated and softened in the sauce.

1 medium onion, diced
6 cups stuffing cubes
2 cups chicken broth
1 teaspoon poultry seasoning
1 1/2 pounds turkey cutlets
Kosher salt, to taste
Freshly ground black pepper, to taste
1 (20-ounce) an apple pie filling, optional

Steps:

  • Gather the ingredients.
  • Spray the inside of the slow cooker stoneware with cooking spray.
  • Place celery, onion, stuffing cubes, chicken broth, and poultry seasoning in the crock pot and stir to combine.
  • Lay turkey cutlets on top of the stuffing mixture in a single layer.
  • Season with salt and pepper. Pour apple pie filling on top, if using.
  • Cover and cook on low 6 to 8 hours or high 3 to 4 hours.
  • Serve and enjoy.

2 oz onion soup ((2-1 oz mixes))
1/2 c chicken broth
6 pork cutlets

Steps:

  • Spray your crock pot with cooking spray
  • Place your cutlets in your crock pot
  • Mix together your soup and soup mix in a bowl
  • Pour over your cutlets
  • Gently pour your broth over top
  • Cover and cook on low for 4-6 hours

6 boneless skinless chicken breast halves (6 ounces each)
1-1/4 teaspoons salt
1 can (13.66 ounces) light coconut milk
1 teaspoon curry powder
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
3 green onions, sliced, divided
2 tablespoons cornstarch
2 tablespoons cold water
1 to 2 tablespoons lime juice
3 cups hot cooked rice

Steps:

  • Sprinkle chicken with salt. In a large nonstick skillet coated with cooking spray, brown chicken on both sides. Place in a 5-qt. slow cooker., Combine the coconut milk, curry, turmeric and cayenne; pour over chicken. Sprinkle with half the onions. Cover and cook on low for 4-5 hours or until chicken is tender., Combine cornstarch and water until smooth; stir into slow cooker. Cover and cook on high for 30 minutes or until sauce is thickened. Stir in lime juice. Serve chicken with rice and sauce; sprinkle with remaining onions.
