4 chicken breasts
1 packet ranch seasoning mix
2 Tbsp Taco Seasoning
1 can black beans 15 0z
1 can Rotel 8 oz
1 can corn 15.25 oz (not drained)
1 block cream cheese
2 fresh limes

Steps:

  • Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  • Shred the chicken.
  • Squeeze the limes over the chicken mixture , add cream cheese and stir to combine.
  • Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  • Serve over rice or with tortillas. Enjoy!

4 skinless, boneless chicken breast halves
1 onion, chopped
1 cup chopped celery
1 cup chopped carrots
3 small baby bell peppers, chopped
1 (1 ounce) package dry onion soup mix (such as Lipton®)

Steps:

  • Mix water, cream of mushroom soup, chicken, onion, celery, carrots, baby bell peppers, and onion soup mix together in a slow cooker.
  • Cook on Low for 6 to 8 hours. Shred chicken using two forks and stir soup well.

1 kg (2.2 lb) chicken pieces
1 leek, chopped
2 tsp garlic, crushed
2 celery stalks, sliced
2 carrots, sliced
2 bay leaves
½ tsp thyme
½ tsp rosemary
2 l (2.1 qt) chicken stock
1 Tbsp fresh parsley, roughly chopped

Steps:

  • Add all the ingredients into the slow cooker except for the parsley.
  • Cook on low for 8 hours.
  • Skim the foam and fat off the top of the liquid. Remove and discard the bay leaves.
  • Remove the chicken and shred using two forks. Add the shredded chicken back into the slow cooker.
  • Season to taste.
  • Cook on high for 15 minutes or until hot.
  • Stir in the parsley.
  • Serve & Enjoy.

½ cup uncooked white rice
1 pound skinless, boneless chicken breast meat - cut into cubes
1 large green bell pepper, chopped
1 onion, chopped
2 teaspoons chili powder
1 teaspoon garlic powder
1 (14.5 ounce) can chicken broth
1 (15 ounce) can whole kernel corn, undrained
1 lime

Steps:

  • Combine rice and 1 cup water in a small saucepan. Bring to a boil, then reduce heat, cover and simmer 20 minutes, until rice is tender.
  • Coat a large saucepan with cooking spray and place over medium heat. Cook chicken, bell pepper, onion, chili powder and garlic powder 5 minutes, stirring often. Pour in broth and corn. Stir in 1 cup cooked rice. Bring to a boil, then reduce heat and simmer 10 minutes, until chicken is no longer pink. Serve with lime wedges.

1 (15 oz.) can kidney beans, rinsed and drained
1 (4.5 oz.) can diced green chili peppers
1 (14.5 oz.) can diced tomatoes
1 1/2 cups chicken broth, low sodium, fat free (use an additional 1/2 cup for a soup)
1 cup frozen or fresh corn
Juice from 1 lime
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon cayenne pepper (more or less to taste)
1/2 teaspoon black pepper Kosher or sea salt to taste
1/2 cup freshly chopped cilantro
2 chicken breasts fillets, skinless, cut into 1-2" cubes (no need to pre-cook)

2 pounds chicken (breast or thighs)
15 ounces black beans (or whatever kind you have. Drained & rinsed.)
14 ounces diced tomatoes & green chilies (or plain diced tomatoes. Don't drain.)
2 cups corn (drain if canned.)
4 ounces diced chiles (drained)
1 cup onion and bell pepper mix (in the freezer section)
1/2 teaspoon ground cumin
1/2 teaspoon ground smoked paprika
10.5 ounces cream of chicken soup (don't dilute)
1/4 cup cilantro (chopped)
4 ounces cream cheese (room temperature and cut in chunks)

Steps:

  • Spray the inside of the slow cooker with nonstick cooking spray. This makes clean up SO much easier.
  • Season the chicken with salt and pepper and add to the slow cooker.
  • Add the remaining ingredients except for cream cheese.
  • Cook on low for 8 hours or on high for 4.
  • 30 minutes before it's time to eat shred the chicken with 2 forks and add the cream cheese.
  • Continue to cook for 30 more minutes.
  • Stir until cream cheese is all mixed in.
  • Serve over rice, baked potatoes, tortilla chips, or whatever
