Tender lamb chops slow cooked in a deep and rich red wine reduction gravy.

½ cup red wine
½ sweet onion, roughly chopped
3 tablespoons honey
2 tablespoons Dijon mustard
2 tablespoons lemon juice
4 garlic cloves, minced
1 tablespoon ground thyme
1 tablespoon dried rosemary
2 teaspoons ground basil
1 teaspoon salt
1 teaspoon coarse ground black pepper
¼ cup tapioca starch
1 ½ pounds sirloin lamb chops, room temperature

Steps:

  • Combine red wine and onion in a slow cooker.
  • Whisk honey, mustard, lemon juice, garlic, thyme, rosemary, basil, salt, and pepper together in a small bowl until well blended. Add tapioca starch and whisk until well combined. Let sit until mixture is thickened, at least 5 minutes.
  • Dip lamb chops in the mustard mixture and massage until fully coated.
  • Place chops in a single layer over the red wine and onion mixture in the slow cooker. Pour remaining mustard mixture on top.
  • Cover slow cooker and cook on Low until an instant-read thermometer inserted into the center of a chop reads at least 130 degrees F (54 degrees C), about 4 1/2 hours.

Tender, juicy and melt in your mouth Slow Cooker Lamb Shoulder is so simple to make, with minimal ingredients, and it makes the best gravy too.

1.3 kg lamb shoulder
1 tbsp olive oil
1 carrot (peeled and sliced)
1 onion (finely sliced)
350 ml vegetable stock
3 garlic cloves (thinly sliced)
2 g fresh rosemary

Steps:

  • Heat the oil in a large pan. Add the lamb shoulder and brown on all sides.
  • Put the onions and carrots in the slow cooker. Place the browned lamb on top of the vegetables.
  • Using a sharp knife, cut holes into the lamb. Push a slice of garlic and some rosemary leaves into each hole.
  • Season and pour on the stock. Be careful to pour the stock around the lamb, not over the top of it.
  • Cook on high for 5 hours.
  • Remove the meat from the slow cooker and allow to rest for 30 minutes.

1 lamb shoulder
1 vidalia onion, rough chop
1 garlic
2 sprigs each, rosemary and thyme
1 cup organic broth (chicken, beef, or vegetable is fine, as well as just water)
Cracked black pepper to taste

Steps:

  • Turn slow cooker to low heat. Rinse lamb shoulder under cold water, and place into the crock pot. Sprinkle cracked black pepper over the shoulder to season. Top shoulder with chopped onion, and un-peeled cloves of garlic, being sure to tuck some of the onion under the lamb. Pour stock over the lamb. Place the fresh herbs on top, cover with the lid, and cook on low for 6-8 hours.

  • Toast the fennel seeds in a dry skillet over medium heat until fragrant, 1 to 2 minutes. Transfer to your slow cooker and add the paprika, brown sugar, tomato paste, 1 teaspoon of the salt, and red wine. Whisk to combine, then add the garlic and rosemary.
  • Heat a large skillet over high heat. Add the oil and heat another 30 seconds. Season the lamb with the remaining teaspoon salt and add to the hot pan. Cook on the first side for 3 minutes or until seared a deep, golden brown. Flip the lamb and cook on the second side for an additional 3 minutes, then transfer the browned meat to the slow cooker, turning each piece of meat to coat with the with the sauce as you layer it in. Top the meat with the onions.
  • Cover the cooker and cook on high for 2½ hours. Remove the meat from the slow cooker, add the potatoes, then return the meat to the pot. Cover and cook 1 hour longer, or until the lamb is very tender and the potatoes are cooked through.
  • To serve, mix the parsley, rosemary, olive oil, salt, and lemon zest together in a small bowl. Mound the meat and potatoes on a platter with the herb oil on the side.
