Pulled Chicken Sandwiches with Root Beer Barbecue Sauce image

Root beer is the not-so-secret ingredient in this sweet-tangy sauce-the perfect accompaniment to rotissierie chicken.

1/2 cup root beer
1/2 cup ketchup
3 tablespoons cider vinegar
2 tablespoons yellow mustard
1 tablespoon packed brown sugar
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon ground ginger
1 clove garlic, smashed
Dash of red pepper sauce
1 deli rotisserie chicken (unflavored), skin and bones removed, shredded (about 3 cups)
4 kaiser rolls, split
2 cups purchased coleslaw

Steps:

  • In 2-quart saucepan, heat all sauce ingredients to boiling over medium heat, stirring frequently. Reduce heat to medium-low and simmer 20 minutes, stirring occasionally to prevent scorching. Remove garlic clove.
  • Add shredded chicken to sauce and stir until chicken is evenly coated. Heat over low heat, stirring constantly, until chicken is hot.
  • Place about 1 cup chicken mixture on bottom of each roll and top with about 1/2 cup coleslaw and bun top.

1 boneless beef rump roast (4 lb)
2 cups barbecue sauce
1 cup root beer
Dash salt and pepper, if desired
16 sandwich buns, split

Steps:

  • In 3 1/2- to 4-quart slow cooker, place beef. In 4-cup measuring cup or bowl, mix 1 1/2 cups of the barbecue sauce and the root beer; pour over beef.
  • Cover; cook on Low heat setting 10 to 12 hours.
  • About 20 minutes before serving, remove beef from slow cooker; place on large plate. Pour juices from slow cooker into 12-inch skillet. Cook over medium-high heat about 15 minutes, stirring occasionally, until juices are thickened and reduced to about 3 cups. Meanwhile, shred beef with 2 forks; return to slow cooker.
  • Stir remaining 1/2 cup barbecue sauce into reduced juices in skillet; pour over shredded beef in slow cooker. Stir in salt and pepper to taste. Spoon about 1/2 cup beef mixture into each bun.

1 (12 fluid ounce) can or bottle root beer
1 (18 ounce) bottle barbeque sauce (such as Sweet Baby Ray's®), or more to taste
8 (2 ounce) hamburger buns, split

Steps:

  • Place chicken inside a slow cooker and pour the root beer over the meat. Cook on Low until meat easily shreds, 6 to 8 hours.
  • Drain off the cooking liquid and use meat claws, two forks, or a large spoon to break the meat apart. Stir in barbeque sauce. Keep warm in the slow cooker until ready to serve.
  • Place meat onto hamburger buns and serve drizzled with more barbeque sauce if desired.

1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup root beer (Regular please, NOT Diet!)
1 cup ketchup
1/4 cup fresh lemon juice
2 tablespoons Worcestershire sauce
1/4 cup minced fresh onion
1 tablespoon fresh gingerroot, peeled and minced
1 garlic clove, peeled and minced

Steps:

  • Spray the inside of the crock of a slow cooker; set aside.
  • Remove the skin from the chicken drumsticks.
  • Sprinkle the chicken with salt and pepper, and then place them in the prepared crock.
  • Place the root beer, ketchup, lemon juice, Worcestershire sauce, onion, ginger root, and garlic into a medium bowl; whisking to combine.
  • Pour the sauce over the chicken, turning drumsticks to coat, if necessary.
  • Turn the slow cooker on HIGH and cook for 1 hour.
  • Reduce the setting to LOW and continue cooking for 6-7 hours or until chicken is done.
  • Serve chicken with a little sauce spooned over top.

8 hamburger buns (or rolls)

Steps:

  • Spray your slow cooker with nonstick cooking spray. Place roast inside slow cooker and pour the root beer over the meat.
  • Cook on low for about 6-8 hours (or until meat easily shreds).
  • Take the roast out of the slow cooker and shred using two forks (it should just fall apart). Drain the root beer out of the slow cooker and place the shredded roast back inside. Stir in the bottle of BBQ sauce.
  • Keep warm in the slow cooker until serving.
  • Place meat on hamburger buns or rolls and serve.
