SOUTHWEST-STYLE WEDDING SOUP
I turned leftover ground chicken into meatballs and dreamed up this cozy southwestern soup. Now my Italian family asks for it over traditional wedding soup. -Teena Petrus, Johnstown, Pennsylvania

Steps:
- In a Dutch oven, heat oil over medium heat. Add carrots, celery and corn; cook until tender. Stir in stock. Increase heat to high; bring to a boil., Meanwhile, combine bread crumbs, taco seasoning, egg and chicken; mix lightly. With wet hands, shape into 1-1/2-in. balls. Reduce heat to simmer; gently drop meatballs into stock. Cook, covered, until meatballs are no longer pink, 8-10 minutes. Stir in pasta. Simmer, covered, until pasta is tender, 6-8 minutes. Sprinkle with cilantro and salt., Serve with avocado and sour cream.

Steps:
- Spray 3 1/2- to 4-quart slow cooker with cooking spray. Mix chicken, sweet potatoes, onion, tomatoes, broth, oregano and cumin in cooker. Cover; cook on Low heat setting 7 to 8 hours.
- Stir in corn and bell pepper. Increase heat setting to High; cover and cook about 30 minutes or until chicken is no longer pink in center and vegetables are tender.
- Meanwhile, heat oven to 450°F. Spray 2 cookie sheets with cooking spray. Cut each tortilla into strips; place in single layer on cookie sheets. Bake about 6 minutes or until crisp but not brown; cool.
- Spoon soup into individual bowls. Top with tortilla strips. Sprinkle with cilantro.

- In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.

- Put the chicken in a slow cooker. Sprinkle on the chili powder, cumin and some salt and pepper. Add the tomatoes, chicken broth, black beans, tomatoes with chiles, tomato paste, onion, chipotle pepper and red and yellow peppers. Stir, place the lid on the slow cooker and cook for 5 hours on high or 8 hours on low.
- Stir in the lime juice. Remove the chicken to a plate and use 2 forks to break it into chunks (or shred it finely). Return the chicken to the pot, taste and add more seasoning if necessary.
- Serve piping hot in a bowl with avocado, sour cream, grated cheese, crushed tortilla chips and cilantro leaves on top!

- Whisk water, taco seasoning mix and bouillon in slow cooker until blended.
- Add tomatoes, onions and carrots; mix well. Stir in meatballs; cover with lid.
- Cook on LOW 3 to 4 hours (or on HIGH 1 to 2 hours), adding pasta for the last 30 min. of the cooking time.
- Serve topped with cheese.

Steps:
- Put chicken broth in large pot on med. high.
- Add chicken, carrots, celery, onion, tomatoes, parsley and meatballs.
- Reduce heat to simmer.
- Add salt to taste.
- Remove chicken after 1-1/2 hours, dice, then return to pot.
- Cook tortellini and egg noodles according to directions, drain and add to pot.
- Simmer for another 1/2 hour.
- Add escarole last 5 mins., stir to mix.
- Turn off heat, serve with your favorite bread or loaf, cheese, and enjoy.
