You can make queso dip right at home with two easy methods: stovetop and slow cooker. It's cheesy, melty, and perfect for your next party.

Steps:
- Stovetop method: Bring 1 inch of water to a boil in a medium saucepan. Reduce the heat to medium-low and place a bowl inside the pot to create a double boiler. (The bowl should be big enough to rest above the rim of the pot without the bottom touching the water.) Add both cheeses, the half-and-half, garlic, jalapeño, and ground black pepper, then stir to combine. Cook, stirring occasionally, for 5 to 10 minutes, until the cheese is melted and the dip is creamy. Stir in the green chilies.
- Slow cooker method: Combine both cheeses, the half-and-half, garlic, jalapeño, and ground black pepper in the base of a slow cooker, and stir to combine. Cover and cook on high for 50 minutes, stirring once half-way through. Stir in the green chilies. Transfer to a serving bowl or reduce the temperature of the slow cooker to warm and keep covered until ready to serve.
- Top with diced tomatoes, cilantro, and sliced jalapeño. Serve immediately.
SLOW COOKER TEX-MEX QUESO

- In a large skillet preheated to medium-high heat add the olive oil. Saute the onion and green pepper until softened about five minutes. Stir in the cumin, paprika, and garlic powder. Continue to cook for another minute.
- Spray your slow cooker with non-stick cooking spray. Scrape the onion-pepper mixture into the slow cooker followed by the diced tomatoes, velveeta, and milk. Cook on high for 1 hour or low for 2 hours.
- Next, stir in the black beans, cilantro, and hot sauce until well combined. Add in the shredded Mexican cheese and stir to combine. Once melted either keep the queso in the slow cooker or pour the queso into a serving bowl and top with garnishes and serve with tortilla chips.

- In a small slow cooker, add the cheese cubes as well as both cans of the tomatoes with chilies, including the liquid from the cans. Set the slow cooker to low and let melt, stirring occasionally, until completely melted, about 30 minutes. Keep warm until ready to serve.
- Serve with tortilla chips, flour tortillas or as a topping for fajitas, nachos or tacos.

- Heat the oil in a medium saucepan on medium-high heat. Add the onion and jalapeno and saute until the onion is soft and translucent.
- Pour in the half and half and reduce the heat to medium-low. Tear your cheese slices into smaller portions and gradually add them to the pot, stirring constantly. Do not add more cheese until the previous slices have already mostly melted and combined. Add more half and half to achieve your desired consistency. I prefer mine a little thicker.
