SLOW ROASTED ONIONS WITH CHEESE
This is cited as a lazy supper from Cooking Light Nov '11---maybe if your dieting : ) I think of it more as an fancy appetizer. I also add whatever kind of spices I have on hand (Orengo, Basil, Thyme, Red Pepper) But that is my own addition.

Steps:
- Pre Heat oven to 350 Degrees.
- Peel the Onions.
- Cut a cross down from the top of the onion to the root, think thick Bloomin Onion.
- Place Onions in roasting tin/casserole dish etc.
- Drizzle each with Olive Oil, a fruity oil is best if you have it.
- Sprinkle lightly with spices (optional).
- Place Onions, covered with foil, in Oven for 45 minutes.
- Remove Foil, spoon juices over the onions and return to oven without the foil for another 15 minutes or until golden and soft.
- Remove Onions, Place Cheese slices on top, then return to the oven until the cheese melts.
- Eat Immediately.

SLOW-ROASTED ONIONS WITH MELTED CHEESE
Steps:
- Peel onions, cut a cross down from the top of each to the root. Place them in a roasting pan and drizzle with olive oil. Cover with foil and bake at 350 degrees for about 45 minutes. Remove foil, spoon some of the oil over the onions and return to oven, uncovered, for another 15 minutes until soft and golden. Slice cheese thinly. Place on top of onions and return to oven until cheese starts to melt. Serve with side salad for a light dinner.

FRENCH ONION GRILLED CHEESE
Grilled cheese is a near-perfect food on its own, but adding bacon, kimchi or, in this case, heaps of caramelized onions really makes it special. Caramelizing onions takes a good half-hour, so save this recipe for when you have a little extra time and company (this recipe serves two). If time permits, you could even prep them ahead in a slow cooker. Rather than layer the grated Gruyère and the warm caramelized onions in the sandwich, you should stir them together before assembling, which guarantees that the cheese will melt evenly throughout and that each bite will contain the perfect ratio of fragrant cheese to jammy onions. A splash of sherry, red-wine or white-wine vinegar added to the onions balances out the buttery flavors, but a side salad dressed with a tangy mustard vinaigrette would do the trick, too.

- In a large skillet over medium-high heat, melt 2 tablespoons butter. Add the onions and season with salt and pepper. Cover and cook, stirring once or twice, until the onions are softened, 3 to 5 minutes. Uncover, reduce the heat to medium-low, and cook, stirring occasionally, until deep golden brown, 20 to 25 minutes. If the onions look dry or like they might burn, add a few tablespoons of water at a time, scraping up any browned bits that are stuck to the bottom of the skillet. If desired, once the onions are done, deglaze the skillet with vinegar and cook until the liquid has evaporated, about 1 minute. Transfer the onions to a medium bowl and season to taste with salt and pepper. Wipe out the skillet, or wash it, if necessary.
- Add the cheese to the onions and stir to combine. Put down two slices of bread, and scoop half of the cheese-onion mixture onto each one. Top with the remaining slices of bread, and press down gently.
- In the skillet, melt 1 tablespoon butter over medium heat. Add the sandwiches and cook until the bottoms turn golden brown, 3 to 4 minutes, reducing the heat to prevent toast from darkening too quickly, if needed. Add the remaining 1 tablespoon butter, flip the sandwiches, press down and cook until the cheese has fully melted and the bottoms turn golden brown, 3 to 4 minutes. Serve immediately.

- Preheat oven to 350°.
- In a saucepan, melt butter. Whisk in flour and cook, whisking constantly, until thick, smooth and golden. Continue whisking while gradually adding milk.
- Cook until thickened.
- Remove from heat and stir in salt, pepper and Worcestershire.
- Wilt onions in the microwave. Layer onions and cheese in greased 2-quart casserole dish. Pour sauce over.
- Bake until bubbly golden, about 30 minutes. Serve hot.

- Heat oven to 180C/160C fan/gas 4. Cut about 1cm off the top and bottom of each onion and peel off the skin. Nestle the onions in a small roasting tin or casserole dish, so that they fit snugly together in a single layer. Drizzle over the oil and balsamic vinegar, season, then get your hands in and toss the onions to coat. Cover the tin with foil and roast for 40 mins until tender.
- Remove the foil and drizzle over the maple syrup, then return to the oven, uncovered, for 20-30 mins, until the onions are caramelised.

- Heat the oven to 180C/160C fan/gas 4. Cut a small disc off the root bottom of each onion so they stand upright. Cut 1cm slices off the tops (these will be used as lids), then put back on top of the onions. Wrap each onion in foil, transfer to a baking tray, and bake for 1 hr until tender.
- Melt the butter in a pan. Tip into a bowl. Add the pine nuts to the pan and toast over a low heat for 2 mins until golden. Add to the butter with the breadcrumbs, garlic, thyme, parsley and egg. Stir, then season.
- Cut the cheese into 8 chunky cubes. When the onions are cool enough to handle, scoop out the soft centres, leaving a few layers of onion at the edge. Finely chop the scooped-out centres from 2 onions, and add to the breadcrumb mix (reserve the rest to use in another recipe, such as ragu). Spoon the breadcrumb mixture into the hollowed-out onions so they're halfway full, then push a piece of cheese into the middle of each and top up with more breadcrumb mixture. Top each onion with its 'lid', then roast for 35-40 mins more until tender and the cheese is melted.
