2 large onions, sliced
Salt
1 cup balsamic vinegar
Olive oil
2 to 3 anchovy fillets
2 tablespoons capers
2 cloves garlic, smashed
1 pound chicken livers, cleaned and rinsed
1 cup white wine
1 baguette, cut in to 1/2-inch slices, toasted or grilled

Steps:

  • To make the onions: Coat a large saute pan with olive oil and add the onions. Season the onions with salt and bring the pan to a medium-high heat. Cover and sweat the onions for 15 to 20 minutes. Add the balsamic and cook for another 20 to 25 minutes or until the balsamic is syrupy. Use right away, or place in airtight jar and store in the refrigerator until ready to use.
  • To make the chicken liver pate: Coat a large saute pan with olive oil and add the anchovies, capers and garlic. Bring to medium heat and saute until the anchovies have dissolved.
  • Add the chicken livers, turn up the heat and saute for 3 to 5 minutes and cook until the livers are about 1/2 to 3/4 of the way done. Add the wine and cook for 3 to 4 minutes or until the wine has reduced by half, the mix should still be pretty soupy.
  • Transfer everything to a food processor and puree until smooth. Season with a little salt, if needed, and loosen with a little olive oil if needed.
  • Schmear each toast with the pate and top with balsamic onions.

1/2 loaf brioche, crust removed, sliced into 1/4-inch-thick triangles
4 tablespoons melted butter
6 tablespoons extra virgin olive oil
1/2 Vidalia onion, chopped (1 cup)
1 1/4 teaspoons coarse salt
1/4 teaspoon ground black pepper
2 bay leaves
1 pound chicken livers
1/3 cup sweet Marsala wine

Steps:

  • Preheat oven to 350 degrees. Brush brioche triangles with melted butter and bake for 10 to 12 minutes, until golden.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Saute onion in oil with salt, pepper, and bay leaves until onion becomes soft and golden, 8 to 10 minutes.
  • Add chicken livers to skillet and cook, stirring occasionally, until livers are browned and firm to the touch, 5 minutes.
  • Deglaze skillet with Marsala wine, scraping up brown bits, and reduce liquid by half.
  • Remove bay leaves and transfer liver-onion mixture to food processor; puree until smooth. With motor running, slowly add remaining olive oil. Adjust seasoning to taste, transfer to ramekins, cover, and chill at least four hours before serving. Serve with brioche crostini triangles.

  • Pat dry 1 pound chicken livers and season with salt and pepper. Cook in a skillet with 3 tablespoons chicken fat or olive oil, turning, 7 minutes; transfer to a food processor. Add 2 more tablespoons fat, 1 chopped onion and some fresh thyme to the pan and cook 8 minutes. Stir in 1/4 cup sherry and boil 1 minute; add to the processor along with 1 cup crushed saltines, 1 hard-boiled egg and 2 tablespoons fresh parsley. Pulse; season with salt and cayenne. 7 tablespoons extra-virgin olive oil
1 small onion, finely chopped
4 anchovy fillets
1 garlic clove, minced
12 ounces chicken livers
1/3 cup dry white wine
1 cup canned low-salt chicken broth
2 teaspoons chopped fresh sage
1/2 teaspoon finely grated lemon peel
1 French-bread baguette, sliced into 1/3-inch-thick rounds

Steps:

  • Heat 4 tablespoons oil in heavy large skillet over medium heat. Add onion, anchovies and garlic. Sauté until onion is tender but not brown, mashing anchovies with fork, about 3 minutes. Increase heat to medium-high. Add chicken livers and sauté until brown, about 4 minutes. Add wine and cook until most of liquid evaporates, about 3 minutes. Add chicken broth and sage. Simmer until chicken livers are cooked through and liquid is reduced by half, breaking up livers with fork, about 10 minutes. Cool slightly.
  • Transfer mixture to processor. Using on/off turns, process just until livers are coarsely pureed. Mix in lemon peel. Season pâté to taste with salt and pepper.
  • Preheat oven to 350°F. Arrange bread slices on 2 baking sheets. Lightly brush bread with remaining 3 tablespoons oil. Bake until crisp and golden, about 15 minutes. (Pâté and toasts can be made 1 day ahead. Cover; chill pâté. Cool toasts; store airtight at room temperature.) Spread p•t over toasts. Arrange toasts on platter.

1 large shallot, chopped
2 garlic cloves, chopped
1 pound chicken livers, separated into lobes, trimmed and rinsed
3/4 teaspoon quatre épices (French four-spice blend)
3 tablespoons Cognac

Steps:

  • Heat 2 tablespoons butter in a 12-inch heavy skillet over medium heat until foam subsides. Add shallot and garlic and cook, stirring occasionally, until softened and golden brown, 3 to 5 minutes.
  • Pat livers dry and add to skillet. Cook over medium-high heat, turning once, until browned and just pink inside, about 4 minutes total. Add quatre épices, 1 teaspoon salt, and 1/2 teaspoon black pepper and cook, stirring, 30 seconds.
  • Add Cognac and tilt skillet over gas burner to ignite (or ignite with a long match; use caution as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside.
  • Transfer mixture to a food processor and pulse, adding remaining 6 tablespoons butter, 1 tablespoon at a time, until smooth. Transfer to a bowl and chill, surface covered with plastic wrap, until set, about 3 hours. Let stand at room temperature about 15 minutes before serving.

1 pound chicken livers, about 2 cups
2 to 3 cups whole milk
extra virgin olive oil, for brushing
Kosher salt and freshly ground black pepper
10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into 1/2-inch cubes, divided
2 tablespoons minced shallot
1 teaspoon fresh thyme leaves
1/3 cup bourbon
2 tablespoons heavy cream
1/8 teaspoon (or more) ground allspice
8 1/4 -thick slices country-style rye bread
1 bunch radishes (about 6 ounces), trimmed, very thinly sliced
BLACKBERRY SALAD:
1/4 cup olive oil
1 tablespoon flat leaf parsley
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
1 tablespoon fresh lemon juice
salt and pepper, to taste
1 pint fresh blackberries

Steps:

  • Combine livers and enough milk in a medium bowl so livers are submerged. Chill and soak to mellow their flavor for at least 1 hour or covered, overnight. Drain livers; discard milk. Using kitchen shears, trim any fat and veins from livers. Rinse, drain, and pat dry with paper towels. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Place a wire rack on top of grill grate. Rub livers with oil; season with salt and pepper. Grill livers on a wire rack, turning occasionally, until nicely charred but still rosy inside, about 3 minutes. Transfer to a food processor. Melt 2 tablespoons butter in a small skillet over medium heat (keep remaining butter chilled). Add shallot and thyme; cook, stirring often, until shallot is translucent, about 3 minutes. Remove from heat. Add bourbon (careful: Mixture may ignite). Return skillet to heat; cook, stirring often, until reduced to 3 tablespoons, 2 to 3 minutes. Transfer shallot-bourbon mixture to food processor with livers. Add cream and 1/8 teaspoon allspice; purée until smooth, occasionally scraping down sides. With motor running, add remaining 8 tablespoon butter, 1 cube at a time; purée until smooth. Season with salt, pepper, and more allspice, if desired. For a smoother pâté, press liver mixture through a fine-mesh sieve into a medium bowl. Pack into a 1 1/2-cup jar or small bowl. Cover with waxed paper and chill overnight. DO AHEAD: Pâté can be made 3 days ahead. Keep chilled. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Brush bread with oil; season with salt and pepper. Grill bread until golden brown on both sides, about 1 minute per side. Cut crostini in half on a diagonal. Spread each warm crostini with pâté, then garnish with some Blackberry Salad and sliced radishes. BLACKBERRY SALAD: Mix oil, herbs and lemon juice into a small bowl. Season to taste with salt and pepper. Gently fold in the blackberries just before serving. The vinaigrette can be made 1 day ahead.

Steps:

  • Put a large, heavy sauté pan over medium heat, and melt 4 tablespoons of the butter until it begins to foam. Add the shallots, and sauté them until translucent, being careful not to allow them to brown. Add the livers, thyme and Madeira or port, and bring the heat to high. Cook, occasionally stirring the livers around in the pan with a spoon, until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.
  • Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter. Purée until smooth, adding a little more cream if necessary. Taste and adjust seasoning, adding salt if necessary.
  • Pack the pâté into a glass jar or bowl, then smooth the top with a spatula. Cover with plastic wrap and refrigerate until firm, about two hours or up to five days. Serve with bacon-onion jam and copious amounts of toast.

James Martin's luxuriously rich dinner party starter can be made up to two days in advance for fuss-free entertaining - serve with toasted brioche, cornichons and chutney.

375g unsalted butter
400g chicken livers, trimmed
2 large garlic cloves, 1 crushed, 1 finely sliced
3 thyme sprigs, leaves only
3 tbsp madeira
4 slices brioche
1 Bramley apple, cored and diced
onion chutney, to serve
cornichons, to serve

Steps:

  • Heat 1 tbsp of the butter in a non-stick frying pan over a medium heat. When the butter is foaming, add the chicken livers and fry for 2 mins each side.
  • Stir the crushed garlic, some of the thyme and Madeira into the pan with the livers. Fry for 2 mins, letting the Madeira simmer. Transfer the mixture to a food processor, reserve 200g of the butter and add the rest to the processor. Blend everything to a smooth paste. Season to taste, then spoon into 4 x 70ml clip-top jars.
  • Melt the reserved butter in a medium frying pan and add the sliced garlic. Turn the garlic in the butter until slightly golden. Pour into the 4 jars of pâté, ensuring a few slices of garlic and the remaining thyme leaves go in each jar, and chill in the fridge for at least 4 hrs, or until set. Can be made up to 2 days in advance.
  • Before serving, toast the brioche, then cut into triangular quarters for serving. Stir the diced apple through the chutney. Serve the pâté on small wooden boards with the toasted brioche, cornichons and chutney.

1 medium yellow onion
1 clove garlic
2 tablespoons good-quality olive oil
1/4 cup dry white wine
1/4 cup chicken stock
1 tablespoon capers
Salt and freshly ground black pepper to taste
8 to 10 thin slices of crusty Italian or French bread

Steps:

  • Rinse the chicken livers under running water and pat dry with paper towel. Cut away any greenish discolored parts. Cut the onion in half and slice each half thinly. Mash the garlic with the flat blade of a knife and chop coarsely.
  • Heat the olive oil in a saute pan. Add onion and garlic and cook gently until onion is softened. Add chicken livers. Turn heat up to medium and cook briskly until livers are thoroughly browned.
  • Add white wine and chicken stock. Lower heat and simmer approximately 20 minutes, until livers are cooked through. Mash the livers with a fork, or pass them through a food mill to puree them. The texture should be more grainy than smooth. Mix with capers, taste for seasoning, and add salt and pepper to taste.
  • Serve with the sliced bread, either plain or toasted.

  • In a large skillet, heat 1 1/2 teaspoons butter and 1 tablespoon oil over medium. Add onion and cook, stirring occasionally, until golden, 10 minutes.
