1 lb grouper (enough to get about 4 good-sized grouper steaks)
1/2 tsp salt + a little for seasoning steaks
Pepper
1 Tbsp basil (preferably fresh)
1 Tbsp oregano (preferably fresh)
1 Tbsp parsley (preferably fresh)
1 tsp rosemary (preferably fresh)
2 cloves garlic (or one large clove)
2-3 Tbsp parmesan cheese
1-2 Tbsp olive oil

Steps:

  • Preheat oven to 400 degrees F. Prepare a jelly roll pan: Line it with foil and place a cooling rack on top. Cut the grouper into 4 good-sized steaks (about four 4-6 oz. servings). Season both sides with salt and pepper and set on a cooling rack.
  • Prepare rub: Combine herbs, cheese and olive oil. The rub should have a paste-like consistency. If the mixture is too wet, add more cheese, and if the mixture is too dry, add more olive oil. Rub the mixture on the top of the fish, and place in oven.
  • Bake for 12-15 minutes, or until the topping is browned, and the fish is done. Serve with wild rice and steamed vegetables.

2 tablespoons Parmesan cheese flavored bread crumbs
2 tablespoons chopped red bell pepper
2 tablespoons chopped yellow bell pepper
2 green onions, chopped
¼ jalapeno pepper, seeded and minced
4 tablespoons butter, melted
1 (6 ounce) can crabmeat, drained and flaked
2 tablespoons shredded mozzarella cheese
4 (6 ounce) fillets grouper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, stir together the bread crumbs, red pepper, yellow pepper, green onions, jalapeno, butter, crabmeat, and mozzarella cheese. Arrange grouper fillets in a single layer in a 9x13 inch baking dish. Spread the crumb topping evenly over the fish.
  • Bake for 30 minutes in the preheated oven, or until fish is easily flaked with a fork. If you have thin fillets, you may broil for 10 minutes instead of baking.

Fresh grouper is my absolute favorite. It is a mild fish and this recipe may entice even those who don't like fish to make it a favorite. The recipe is super easy and can be served with a minimum preparation and cooking time. Perfect for a warm summer evening supper. Garnish with lemon twists and parsley before serving.

2 pounds fresh grouper fillets
2 tablespoons lemon juice
½ cup grated Parmesan cheese
¼ cup butter, softened
3 tablespoons mayonnaise
1 dash hot pepper sauce (e.g. Tabasco™)
salt and pepper to taste

Steps:

  • Preheat the oven's broiler.
  • Place the grouper fillets on a greased baking tray. Brush them with lemon juice. In a small bowl, stir together the Parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. Set aside.
  • Broil the fillets for 4 to 6 minutes, until they can be flaked with a fork. Remove from the oven and spread the cheese mixture on top of fillets.
  • Return to the broiler for an additional 30 seconds, or until the topping is browned and bubbly.

I like the taste of Grouper and I had some crab on hand,so I decided to try to make a crust on top to keep the grouper from drying out while baking. I had all the other items listed either in the freezer or frig.We had a nice garden and grew the peppers,jalapeno's. Thou they do not freeze well,they can be used in something like this that is being baked.

1 (6 ounce) can crabmeat, drained and flaked
2 tablespoons parmesan cheese
2 tablespoons shredded mozzarella cheese
