2 lbs sweet potatoes, cut into 1-2 inch pieces
4 -6 garlic cloves, chopped
2 tablespoons fresh rosemary, chopped
2 -4 tablespoons olive oil
kosher salt & freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Put the chopped garlic in 1 TBS of the olive oil with half of the rosemary on the side to use later.
  • Toss the potato pieces with olive oil, half of the rosemary, and salt and pepper.
  • Bake for 20 minutes, tossing occasionally in order to crisp the outsides.
  • Toss with the garlic and remaining rosemary and continue to bake until the potatoes are soft on the inside, about 15 minutes more.

4 medium sweet potatoes (about 3 lbs.), scrubbed clean
1 tbsp. olive oil
2 tsp. kosher salt, plus more
1 tsp. freshly ground black pepper
1 ⁄2 tsp. dill seeds
1 clove garlic, peeled
1 ⁄2 cup labneh
Chives, cut into 1-inch batons, to garnish

Steps:

  • Heat the oven to 275°. In a large bowl, rub the sweet potatoes with the olive oil, 2 teaspoons salt, the pepper, and dill seeds until evenly coated. Arrange the sweet potatoes on a foil-lined baking sheet and bake until very soft inside and caramelized on the bottom, about 2 1⁄2 hours. Heat the broiler and broil the sweet potatoes until lightly charred on the top, 1 to 2 minutes. Remove the sweet potatoes from the broiler and let cool for 10 minutes on the baking sheet. 2 Meanwhile, using a Microplane grater, grate the garlic into a small bowl, stir in the labneh, and season with salt. Transfer the sweet potatoes to a serving platter, gently crush with your hand to expose the potato's flesh, and season the flesh with salt. Dollop each potato with some of the labneh and sprinkle with chives before serving.

4 sweet potatoes
2 heads garlic
2 tablespoons olive oil
2 tablespoons butter (at room temperature)
¾ cup light sour cream
½ cup reduced-fat cream cheese
½ teaspoon cayenne pepper
salt and pepper to taste

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Prick the sweet potatoes with a fork or the tip of a paring knife; set aside. Cut off the top of the heads of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of each head. Brush the cut cloves with the olive oil, then nestle each head into a piece of aluminum foil.
  • Place the sweet potatoes and garlic cloves directly on the oven racks. Bake for about 1 hour, removing the sweet potatoes once they have softened, and removing the garlic heads once they are tender and nicely browned.
  • Peel the sweet potatoes, and place into a mixing bowl. Squeeze the individual garlic cloves into the bowl, then add the butter, sour cream, cream cheese, and cayenne pepper. Mash until smooth, then season to taste with salt and pepper. Scrape the mashed potatoes into a 1 1/2 quart baking dish, and return to the oven for about 15 minutes to reheat.

This is a super simple recipe that my entire extended family has adopted. It does takes 3 hours from start to finish, but the results are really worth it.

4 medium sweet potatoes (or as many as you need)
4 tablespoons butter (optional)

Steps:

  • Place rack in center of oven. Preheat to 350 degrees.
  • Scrub sweet potatoes to remove any dirt. Place sweet potatoes on a foil-lined baking sheet or an oven-proof stone. Bake for one hour.
  • Remove sweet potatoes from oven, flip them to the other side, and bake another hour.
  • Once the second hour has passed, turn OFF the oven and keep the potatoes in the oven for another hour.
  • This long baking time produces a very sweet sweet potato that is very easy to peel. They are almost carmelized. (Take a bite before you add the butter, it really doesn't need it).

2 Japanese sweet potatoes (about 1 1/4 pounds total)
2 teaspoons extra-virgin olive oil
1/4 teaspoon grated garlic
1/2 cup frozen edamame
Kosher salt and freshly ground pepper.
3 tablespoons labneh
1 teaspoon fresh lime juice
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground turmeric

Steps:

  • Preheat oven to 400°F. Prick sweet potatoes all over with a fork and place on a parchment-lined baking sheet. Roast until very tender, about 1 hour. Heat oil and garlic in a small skillet over medium; cook, stirring, until fragrant, 1 minute.
  • Add edamame and cook, stirring, until warmed, 1 to 2 minutes. Season with salt and pepper. In a small bowl, whisk together labneh, lime juice, ginger, and turmeric; season to taste. Split open potatoes, season, and fill with edamame and yogurt mixture.

¾ cup olive oil, divided
½ cup grated Parmesan cheese
2 tablespoons garlic powder
1 teaspoon salt, or to taste

Steps:

  • Poke the sweet potatoes along their sides with a fork. Microwave the sweet potatoes, laid out in a circle in the microwave, until soft, 10 to 15 minutes.
  • Slice the potatoes, across their width, into 1/2-inch slices. Separate them so they're not sticking together. Put 1/4 cup of olive oil into a small cup. Brush that oil onto the flat surfaces with a pastry brush. Pour any remaining oil over potatoes.
  • Put the oiled sweet potatoes into a gallon-sized zip-top bag. Add Parmesan cheese, garlic powder, and salt. Shake the bag thoroughly for 1 minute. Manipulate the pieces with your hand (from the outside) to make sure all pieces get exposed to the cheese and powder.
  • Heat remaining 1/2 cup of olive oil in a skillet over medium-high heat. Carefully pour the sweet potatoes into the skillet. Cook, moving the pieces around and flipping periodically, for 7 minutes. Remove from heat and serve.
