CLASSIC SLOW-COOKER MEATLOAF
Our favorite meatloaf recipe does great in the slow cooker. Made with familiar flavorings that have stood the test of time, this meatloaf is as classic as it gets. And it's about as easy as it gets, too-just toss together the ingredients, set your loaf in a foil-lined slow cooker and forget it! Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

- Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
- In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
- Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.

SLOW-COOKER MEATLOAF

- Combine the meatloaf mix, panko, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, the scallions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper in a large bowl; mix with your hands until just combined. Form into a 5-by-9-inch loaf.
- Transfer the meatloaf to a 6-quart slow cooker. Scatter the potatoes and carrots over and around the meatloaf. Pour in the chicken broth. Cover the slow cooker and cook 8 hours on low or 4 hours on high.
- When the meatloaf is done, skim off any excess fat from the juices in the slow cooker. Combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce and the brown sugar in a small bowl, then whisk in 1/4 cup juices from the slow cooker. Brush the top of the meatloaf with the ketchup mixture. Cover the slow cooker and let the meatloaf rest, 10 minutes.
- Remove the meatloaf from the slow cooker and slice in half. Serve half with the vegetables; top with more parsley. Reserve the remaining half for Meatloaf Quesadillas.
MEAT LOAF FROM THE SLOW COOKER

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

CROCK POT MEATLOAF
This meatloaf is a breeze to make, holds together and slices nicely- a problem I have had with meatloaves in the past. It is a sure winner from my mother-in-law, who is a fabulous cook. Feel free to experiment with Ro-Tel tomatoes or other ingredients.

- To remove loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock.
- In a large bowl combine eggs, milk, bread crumbs, and soup mix. Mix well, then add meat. Mix thoroughly, then shape into a rectangle or oval that won't touch sides of crock. Place in crock. Cover and cook on low for 6 hours or high for 3 hours.

- Grease with butter/marge and line your slow cooker with baking paper
- Mix together all ingredients in a mixing bowl, then knead with your hands until all combined into one lump
- Place mix into the slow cooker, and press down to fill out the bottom
- Cook on low for 4-5 hours, check the juices are running clear then serve with whatever you like. Personally really like this with roast potatoes.

- Remove the parsley stems and chop the leaves (this will make around 2 tbsp of freshly chopped parsley), finely grate the raw onion and mince the garlic cloves. This can be done quickly in a mini food processor.
- Add the parsley, onion, breadcrumbs and garlic to a large mixing bowl and combine with the dry herbs, spices (chilli and paprika), salt and pepper. Stir everything through and then add the pork and beef mince. In a separate bowl mix the ingredients for the glaze, and set aside.
- Warm the milk in a jug and crumble in the beef stock cube, stir well until dissolved. Add to the meat and herbs along with the beaten eggs. Mix everything together well - it's easiest (and most fun!) to do this with your hands. The mixture will now be moist and holding together, and will look like sausage meat ready to be shaped into meatloaf.
- Take a piece of foil approx 50 x 30 cm (20 x 12 inches) and place the meatloaf mixture in the centre. Shape the mixture into a loaf with your hands ensuring the length will fit into your slow cooker. Press the edges firmly to compact the loaf and close any cracks in the edges, then cover the top of the meatloaf generously in glaze mixture. Wrap the meatloaf tightly in the sheet of foil, folding the ends (rather than twisting) to ensure they don't rip. Pierce each end with a skewer to allow juices to drain.
