SMALL BATCH CHOCOLATE CHIP MUFFINS



Small Batch Chocolate Chip Muffins image

These chocolate chip muffins are tender, moist, and packed with chocolate! They're super easy to make and will be gone in a flash!

Number Of Ingredients 11

1 cup all-purpose flour (125g)
1/3 cup granulated sugar (66g)
1 3/4 tsp baking powder (7g)
1/4 tsp salt (1g)
1/3 cup whole milk or buttermilk, room temperature (75g)
2 Tbsp sour cream (32g)
6 Tbsp vegetable oil (80g)
1 large egg, room temperature (56g)
1 tsp vanilla (4g)
2/3 cup chopped chocolate or chocolate chips, tossed with 1 tsp of flour (110g)
2 Tbsp coarse sugar, optional

Steps:

  • Preheat the oven to 425°F / 218°C and line a muffin pan with 6 paper liners. Set aside.
  • In a medium-sized bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate bowl whisk together the buttermilk, sour cream, oil, egg and vanilla extract until combined.
  • Fold the dry ingredients into the wet ingredients with a rubber spatula, and mix until just combined (DO NOT OVER-MIX YOUR BATTER!). Your batter should not be all the way smooth, and it's ok if there are still some small chunks in it.
  • Gently mix the flour-tossed bits of chocolate into the batter until they're evenly distributed.
  • Divide the muffin batter evenly between the 6 muffin cups, filling them to the top of the liner.
  • If desired, add a sprinkle of coarse sugar and a few extra pieces of chocolate on the top of each muffin.
  • Bake the muffins for 6 minutes at 425°F/ 218°C to give the muffins a nice rise and a domed, golden brown top, then (keeping the muffins in the oven) reduce the oven temperature to 350°F / 175°C. Continue to bake for an additional 22-25 minutes.
  • Let the muffins sit in the pan for 10 minutes to cool, then move them to a wire rack to finish cooling.

Easy small batch recipe for soft and tender Chocolate Muffins. Makes just 6 muffins.

140 grams (1 cup) plain flour or all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
40 grams (1/2 cup) cocoa powder, sifted
Pinch of salt
90 grams (1/2 cup) brown sugar
60 ml (1/4 cup) vegetable oil
1/2 teaspoon vanilla extract
1 large egg
120 ml (1/2 cup) full fat or whole milk
75 grams (1/2 cup) chocolate chips

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease six holes of a 6 or 12-hole muffin pan well with butter or spray lightly with oil.
  • In a large mixing bowl, add flour, baking powder, baking soda, cocoa powder, salt and brown sugar and whisk gently.
  • In a separate mixing bowl, add oil, vanilla, egg and milk. Whisk with a fork just to break up the egg yolk. Add to dry ingredients and gently fold to combine. Stir through chocolate chips. Try not to over mix.
  • Divide chocolate muffin batter into 6 muffin holes - it's ok to fill them right to the top (see photo below). Bake for 18-20 minutes or until muffins have risen and domed or a skewer inserted into the centre comes out clean.

Don't let the "stuffing" deter you, but if you're concerned this works equally as well with dressing. Serve with some leftover cranberry sauce if desired The reason this works well is because the flavors are coming from the stuffing. I recommend using a stuffing which has sausage, onions, and celery in the ingredients.

1 large egg
2 cups leftover stuffing
1 ½ ounces Cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whip egg in a medium bowl until foamy. Add leftover stuffing. Cube 4 pieces of Cheddar cheese, about 1/2 inch in diameter, and set aside. Shred the remaining Cheddar cheese. Add shredded cheese to stuffing mixture. Mix well.
  • Spoon half of the stuffing mixture into 4 muffin cups. Use your finger to create a small indention, add a piece of cubed cheese, and cover with remaining stuffing mixture.
  • Bake in the preheated oven until tops spring back when lightly pressed, about 27 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

Michelle Lopez, the author of "Weeknight Baking: Recipes to Fit Your Schedule" (Simon & Schuster, 2019), was inspired by the oversize muffins at Levain Bakery when she developed this recipe. The keys to the loftiest muffins? Plenty of batter and a high oven temperature, which ensures that they rise quickly and bake with a beautiful top and a tender interior. For the best results, rest your batter before baking. One very important tip: Spray the muffin pan and its edges generously with nonstick cooking spray. When the muffins come out of the oven, immediately use a small offset spatula to gently release their edges from the pan, then let them cool completely before removing them. You can use frozen blueberries instead of fresh, but be sure to thaw and drain them, then let them come to room temperature before adding them to the batter.

1 1/4 cup/160 grams all-purpose flour
1 teaspoon baking powder
1/4 teaspoon kosher salt
4 tablespoons/55 grams unsalted butter (1/2 stick), at room temperature
1/2 cup/100 grams plus 4 teaspoons granulated sugar
1 large egg, at room temperature
1/4 teaspoon vanilla extract
1/4 cup/60 milliliters whole milk, at room temperature
1 1/4 cup/180 grams fresh blueberries, at room temperature
Nonstick cooking spray

Steps:

  • In a medium bowl, whisk together the flour, baking powder and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and 1/2 cup sugar on medium-high until light and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl. Add the egg and vanilla, then mix on low speed until fully incorporated, about 1 minute.
  • With the mixer on low, add the dry ingredients in 3 additions, alternating with the milk. Mix until just combined, scrape down the sides of the bowl, then mix for 30 seconds more. Scrape down the sides of the bowl.
  • Using clean hands, mash 3/4 cup blueberries while adding them to the batter. Beat on low speed until they are just incorporated. Add the remaining berries, mixing until incorporated.
  • At this point, the muffin batter can be covered and allowed to rest at room temperature for up to 1 hour. If not resting the batter, heat the oven to 400 degrees.
  • Generously spray the corner 4 cavities of a muffin pan (preferably nonstick) with nonstick cooking spray. (Make sure to spray around the top edges of those cavities, too, since the tops spread.) Evenly divide the batter across the prepared cavities. (They will appear very full.) Sprinkle each muffin with 1 teaspoon granulated sugar.
  • Bake the muffins until the tops are domed and golden brown at the edges and a skewer inserted into the center comes out with a few moist crumbs, 22 to 24 minutes.
  • When the muffins come out of the oven, immediately run a small offset spatula very gently under the edges of the muffin top, being careful not to separate it from the bottom. Allow the muffins to cool completely, about 1 hour, before unmolding the muffins by placing a wire rack or platter on top of the muffins, holding the muffin tin and rack together, and flipping it over. Store the muffins in an airtight container at room temperature for up to 2 days.

3 tablespoons unsalted butter
4 1/2 tablespoons sugar
2 tablespoons water
1 teaspoon vanilla extract
1/2 teaspoon salt
5 tablespoons flour
1/2 teaspoon cinnamon
butter-flavored cooking spray

Steps:

  • Preheat your oven to 350°F.
  • Mix in a bowl butter, sugar, vanilla and water until blended.
  • Stir in flour and salt until well blended.
  • Stir in cinnamon, or any other flavorings, maybe some M&M's, chocolate chips, almond extract, nuts etc.
  • Spray a mini muffin tin with butter flavored cooking spray, drop batter into molds.
  • Bake in oven for 14 minutes, this is what I did and I got chewy centers. If you want harder, perhaps cook for an additional 3-5 minutes.
  • Set on wire rack and carefully take mini muffins out using a butter knife and transfer to serving plate.
  • This made 11 out of the 12 mini muffin molds for me!
