This awesome brunch bake is layered with cheese, hot sauce, spinach, bacon and peppers-and wrapped in a tender, flaky puff pastry.

1 pkg. (17.3 oz.) frozen puff pastry (2 sheets), thawed
6 eggs, beaten
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
1 cup POLLY-O Natural Part Skim Ricotta Cheese
dash hot pepper sauce
4 slices cooked OSCAR MAYER Turkey Bacon, chopped
1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese
1 cup chopped red peppers

Steps:

  • Heat oven to 400°F.
  • Unfold pastry sheets. Roll out 1 sheet to 11-inch square on lightly floured surface; set aside. Roll out remaining sheet to 12-inch square; use to line bottom and side of 9-inch springform pan sprayed with cooking spray.
  • Reserve 1 Tbsp. eggs. Mix remaining eggs with spinach, ricotta and pepper sauce until blended. Layer half each of the bacon, cheddar, spinach mixture and peppers in crust; repeat layers.
  • Cover with remaining pastry sheet; fold under edges of pastry, then tuck inside pan. Brush pastry with reserved egg. Cut slits in top crust to vent steam.
  • Bake 45 to 55 min. or until golden brown. Cool 10 min. Run small knife around edge of pan to loosen crust before removing rim.

Here is recipe I came up with while cooking roast beef dinner. These Yorkies stay tall and have a perfect hollow centre for lots of yummy gravy.

Number Of Ingredients 4

4 eggs
2 cups all-purpose flour
2 cups milk
¼ cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a large bowl, whisk together the eggs and milk until well blended. Whisk in the flour one cup at a time until frothy and well blended. Set aside.
  • Distribute the oil equally among 12 muffin cups, a little over a teaspoon per cup. Place in the oven for 5 to 10 minutes, until smoking. Remove from the oven and quickly ladle about 1/4 cup of batter into each cup.
  • Bake for 30 to 35 minutes in the preheated oven. Serve immediately. I turn my oven off and leave the door partially open with the yorkies inside to keep them from deflating while waiting for everyone to ask for seconds.

Make it the day before if you wish then just relax with your guests or family while it reheats or do the whole thing at one time! This is originally a Kraft recipe. I have not made it but I thought that I would share because it sounds so easy and good

Number Of Ingredients 9

1 (397 g) package frozen puff pastry, thawed
6 eggs, beaten
1 cup ricotta cheese
1/4 teaspoon hot pepper sauce
2 (300 g) packages frozen spinach, chopped, thawed and squeezed as dry as possible
1/4 cup bacon bits
3/4 cup mozzarella cheese, shredded
3/4 cup cheddar cheese, shredded
1 cup red pepper, Chopped 1/4-inch dice

Steps:

  • Preheat oven to 400F.
  • Cut the thawed puff pastry in half. Roll one half to an 11" square, the other to a 12" square.
  • Line the bottom and side of a 9" greased Springform pan with the 12" puff pastry square
  • Reserve 1 tbsp of the beaten eggs.
  • Add the ricotta cheese, pepper sauce & spinach to the remaining eggs, mix until blended.
  • Layer half of the bacon bits, Cheeses, spinach mixture & red peppers in the pastry lined pan, repeat layers.
  • Place remaining puff pastry square on top, tuck in the pastry edges, pinch the edges together
  • Brush surface with reserved egg, pierce pastry several times.
  • Bake 45-55 minutes or until golden brown Cool 10 minutes before serving, run a knife around the edges
  • *If you wish to do this as a make ahead assemble & bake the pie. Cover & refridgerate several hours or overnight. When ready to serve Bake uncovered in 350F oven for 30-40 minutes.

Here's a great brunch idea. Can be made ahead and served the next day. Has puff pastry, ricotta cheese, spinach, and eggs as the main ingredients.

Number Of Ingredients 8

1 (17 1/3 ounce) package frozen puff pastry, thawed (2 sheets)
6 eggs
1 cup ricotta cheese
1 dash hot pepper sauce
2 (10 ounce) packages frozen chopped spinach, thawed, well drained
4 slices cooked bacon, chopped
1 1/2 cups shredded cheddar cheese
1 cup chopped red peppers or 1 cup multi-colored bell pepper

Steps:

  • PREHEAT oven to 400°F
  • Unfold pastry sheet and roll out one sheet to about 11-inch square and one to 12-inch square.
  • Fold each square into quarters and cut out as large a circle as possible.
  • Line bottom and side of greased 9-inch springform pan with 12-inch pastry sheet.
  • BEAT eggs in medium bowl with wire whisk.
  • Reserve 1 tablespoons of the eggs; set aside.
  • Add ricotta cheese, pepper sauce and spinach to remaining eggs; mix until well blended.
  • Layer half each of the bacon, cheese, spinach mixture and red peppers in pastry-lined pan.
  • Repeat layers.
  • PLACE remaining pastry sheet over mixture; fold and tuck pastry edges in pan.
  • Pinch edges to seal. Brush top with reserved 1 tablespoons egg.
  • Cut 5 or 6 slits in top crust with tip of sharp knife to allow steam to escape.
  • BAKE 45 to 55 minute or until golden brown. Cool 10 minute
  • Run small knife around edge of pan before removing rim.
  • MAKE AHEAD:
  • Assemble and bake pie as directed. Cover.
  • Refrigerate several hours or overnight.
  • When ready to serve, uncover.
  • Bake at 350°F for 30 to 40 minute or until heated through.
