Number Of Ingredients 10

1/4 cup minced yellow onion
1 jalapeno pepper, minced
2 teaspoons vegetable oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
3 cloves garlic, minced
2 cups cooked black beans
1 cup chicken or vegetable stock
1 tablespoon white vinegar

Steps:

  • Cook the onions and jalapenos in the vegetable oil in a large saucepan over medium heat until soft, about 5 minutes. Add the cumin, oregano, salt and garlic, and cook another 2 to 3 minutes. Add the beans, stock and 1 cup water and bring to a boil. Turn the heat to low and simmer 15 minutes.
  • Remove the beans from the heat and strain, reserving the liquid. Mash the beans in a small bowl with a potato masher, adding the vinegar and cooking liquid to keep the beans soft. (You will probably not use all the liquid.).

1 (15-ounce) can navy or cannellini beans
1 tablespoon mayonnaise (vegan if desired; I prefer Spectrum's organic olive oil mayo)
2 tablespoons fresh, strained lemon juice
½ small fennel bulb or 1 stalk celery, finely diced
3 small green onions, rinsed and thinly sliced
¼ teaspoon celery seed
1/8 teaspoon garlic powder
¼ - ½ teaspoon fine sea or kosher salt (to taste)
a few turns black pepper
small handful chopped chervil, chives, basil, or tarragon or a combination, plus extra for finishing the tartines
3-4 slices bread, toasted (see headnote for my favorite method)
thinly sliced watermelon radish or other radish
olive oil
flaky salt
coarsely ground black pepper
arugula or pea sprouts, optional

Steps:

  • Roughly mash the beans in a medium bowl, leaving about a third of them whole. Stir in the mayonnaise, lemon juice, fennel, green onions, celery seed, garlic powder, smaller amount of salt, pepper, and the herbs. Taste, adding more of anything that you feel the salad needs.
  • Spread the white bean salad on the toasted bread and top with radish, a drizzle of olive oil, a few pinches flaky salt, pepper, and herbs or greens, if using. Serve right away.

1 tablespoon olive oil
2 cloves garlic, minced
2 cans (19 ounces each) cannellini beans, drained and rinsed
1 tablespoon chopped fresh sage, (or 1 teaspoon dried)
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium heat. Cook garlic, stirring often, until golden, about 1 minute.
  • Add beans, sage, and 1 1/4 cups water. Cook, stirring often, until beans are hot and liquid thickens, about 4 minutes.
  • Mash beans, leaving some whole. Season with salt and pepper.

A mix of garlic, chilli, parsley and smashed cannellini beans top these no-cook tartines along with feta and tomatoes. They're quick and easy, and healthy, too

400g can cannellini beans , drained and rinsed
2 tbsp rapeseed oil
1 large lemon , zested and juiced
1 small garlic clove , finely grated
1 small red chilli , deseeded and finely chopped
1⁄2 small bunch parsley , finely chopped
8 cherry tomatoes , halved
2 slices sourdough
15g feta , crumbled
50g rocket

Steps:

  • Put the beans, 1 tbsp of the oil, the lemon zest and juice and the garlic in a food processor and blitz to create a chunky texture. Transfer to a bowl and stir through the chilli, parsley and cherry tomatoes.
  • Lightly toast the bread and pile on the cannellini bean smash, scatter over the feta and drizzle with the remaining oil. Serve with the rocket on the side.
