1 ¼ cups margarine, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
⅛ teaspoon salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together margarine and sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Combine flour, cocoa, baking soda, and salt; stir into the creamed mixture until just blended. Mix in walnuts. Drop by spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Cool for a couple of minutes on the cookie sheet before transferring to wire racks to cool completely.

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. ½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.

200g (about 14 tablespoons) cold unsalted butter, chopped
1 cup (175g) brown sugar
3/4 cup (165g) white (granulated) sugar
1 teaspoon vanilla extract
2 tablespoons milk
1 egg
2 cups (300g) plain (all-purpose) flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon table salt
300g dark chocolate, chopped

Steps:

  • Preheat oven to 180°C (350°F).
  • Place the butter and both the sugars in the bowl of an electric mixer and beat on low speed until just combined.
  • Increase the speed to medium and beat for 8 minutes or until pale and creamy, scraping down the sides of the bowl.
  • Add the vanilla, milk and egg and beat for 2 minutes or until light and fluffy.
  • Sift in the flour, baking powder, baking soda, and salt and beat until combined.
  • Add the chocolate and stir to combine.
  • Roll heaped tablespoons of the mixture into balls and place on lightly greased baking trays lined with non-stick baking paper. Bake for 12-14 minutes or until golden brown.
  • Allow to cool on the trays for 5 minutes before transferring onto wire racks to cool.

This is a Cook's Illustrated recipe that was originally published in January 2009. These are dark, almost fudgy cookies that are not crumbly at all. They develop a nice, crackly top and are not overly sweet, even with the granulated sugar coating. CI recommends using Callebaut Intense Dark L-60-40NV, but any high- quality dark, bittersweet, or semisweet chocolate will work. Light brown sugar can be substituted for the dark, as can light corn syrup for the dark, but with some sacrifice in flavor. A spring-loaded ice cream scoop (size #30) can be used to portion the dough.

Set dough balls on prepared baking sheet, spacing about 2 inches apart. Bake until cookies are puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone), 10 to 11 minutes. Do not overbake.
  • Cool cookies on baking sheet 5 minutes, then use wide metal spatula to transfer cookies to wire rack; cool cookies to room temperature.

2 cups maraschino cherries, chopped
2 cups milk chocolate chunks

Steps:

  • Combine flour, baking soda, and salt in a bowl.
  • Beat brown sugar, shortening, and eggs in a large bowl with an electric mixer until well combined. Mix in milk, vanilla, and almond extract. Add flour mixture gradually, beating well after each addition. Stir in cherries and chocolate chunks.
  • Place dough in the refrigerator for 1 hour.

1 Tablespoon vanilla
1 egg
1 egg yolk
2 cups semi sweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets or line with parchment paper or a silicone baking liner.
  • In a large bowl, sift together the flour, baking soda and salt; set aside.
  • In a medium bowl, cream together partially melted butter, brown sugar and white sugar until well blended.
  • Beat in vanilla, egg, and egg yolk until light and creamy.
  • Mix in the sifted ingredients until just blended. Gently fold in the chocolate chips by hand using a wooden spoon.
  • Drop cookie dough 1/4 cup (yes, these are BIG cookies) at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  • Bake for 10 to 14 minutes in the preheated oven, or until the edges are just starting to turn a golden brown.
