Smoked Beef Brisket Black Bean Soup image

Black Bean Soup makes a favorite, comforting soup recipe. This black bean soup includes delicious beef brisket to make it even more hearty!

5-6 pounds beef brisket (trimmed)
3 tablespoons olive oil
1 medium onion (diced)
2 cloves garlic (minced)
4 (15-ounce) cans black beans
1 teaspoon cumin
1/2 teaspoon oregano

Steps:

  • Place beef brisket in smoker pre-heated to 250 degrees.
  • Cook for 3 1/2 hours, then flip and cook another 3 1/2 hours or until internal temperature reaches 180 degrees.
  • Remove from smoker and allow to rest 10-15 minutes on carving board before slicing.
  • Slice against the grain into 1/4 inch slices, then into bite size pieces.
  • About 30 minutes before brisket is done, pour olive oil into large stock pot.
  • Add onions and garlic and cook over medium heat until tender.
  • Puree one can of black beans.
  • Pour into stock pot with onions and garlic.
  • Add additional cans of beans.
  • Stir well and add cumin and oregano.
  • Simmer over low heat.
  • Add smoked beef brisket to soup and cover.
  • Allow to simmer over low heat for 30 minutes.
  • Serve with sour cream, shredded cheese, and a wedge of cornbread.

I made this when I was coming down with cold symptoms and wanted a comforting soup that I could taste despite my stuffy nose. I thought it was geat so I thought I'd share. Please note: There is NO substitution for smoked paprika. Servings are totally guessed.

2 teaspoons oil
1 cup chopped onion
1 cup chopped celery
3 -4 garlic cloves, minced
2 cups chicken broth or 2 cups vegetable broth, whatever
1 (14 ounce) can diced tomatoes, undrained
2 teaspoons cilantro
1 teaspoon cumin
3/4 teaspoon smoked paprika, NO subs
1 (15 ounce) can black beans, rinsed and drained
salt, if needed to taste
fat free sour cream, for garnish (optional)

Steps:

  • Heat the oil in a pot over med heat.
  • Add the onions, celery and garlic and saute for about 5 minutes.
  • Add the broth, tomatoes, cilantro, cumin, and smoked paprika. Bring to a soft boil. Reduce heat, and cover and simmer for 20 minutes.
  • Add the black beans and simmer for an additional 10 minutes.
  • Stir.
  • At this time, if desired, puree 1/3 to 1/2 of the soup for a thicker texture. Totally optional.
  • Add salt, if needed.
  • Serve garnished with a dallop of the optional FF sour cream.

This recipe started out as one of my many, many HAPPY KITCHEN ACCIDENTS. I love tossing together on-hand ingredients and leftovers for a new, untried taste and every now and then I end up with a dish that must be written down so that it can be made over and over again! This is one of those.

Brisket broth soup base (details below)
2 lb Dry soup beans (mixed)
1 can(s) Stewed tomatoes
1 can(s) Tomato paste
1/2 c Celery, finely chopped
1/2 c Onion, finally chopped
4 Tbsp Chili powder (more or less to taste)
1 1/2 lb Pork sausage, ground
6 c Long grain brown rice, cooked

Steps:

  • 1. BRISKET BROTH SOUP BASE: I use the meat & vegetable stock from previous night's Corned beef and cabbage dinner! Prepare it like this in your slow cooker: First add hot water (if needed) to the stock to make 3 - 4 quarts of broth. Then, cut up any leftover corned beef and veggies into small, soup-size pieces and toss all that back into the broth. That's your yummy, hearty soup base!
  • 2. Add to broth: Beans, stewed tomatoes, tomato paste, celery, onion, and chili powder. Simmer overnight in crockpot on LOWEST POSSIBLE setting (I use the "keep warm" setting for this).
  • 3. Next morning: Brown pork sausage, crumbling as it cooks, and add it to your soup.
  • 4. Just before you are ready to serve up your soup, cook the rice. (Hint: I like to substitute about 1/4 cup lime juice for that much of the water when making 6 cups or more of rice)
  • 5. I serve up this soup seperate from the rice. Some of my family like to pile rice in their bowl and ladel the soup over the top. Others like to mix the rice in.

TEXAS-STYLE CROCK POT BRISKET AND BEANS



Texas-Style Crock Pot Brisket and Beans image

An easy way to make a nice brisket. The beans in this recipe are wonderful - sometimes I just make a big pot of the beans alone. Even though I love the convenience of my crock pot, I feel that cooking in the crock pot generally overcooks any meat. However, in this case, with brisket, it is pretty darn good, especially with the delicious beans on the side! I sometimes find that the liquid gets a little low, when it is cooking. If this occurs, you can do any of the following, as needed: double the sauce recipe to add later, add some bottled barbecue sauce, or add a can of beer. Enjoy!

16 ounces dried pinto beans, rinsed, drained, and picked through
3 lbs boneless beef brisket
1 large onion, chopped finely
1/2 teaspoon seasoning salt
1 teaspoon hickory-flavored liquid smoke
1 1/2 cups ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared yellow mustard
1/4 cup red wine vinegar
1/4 cup brown sugar
2 cups hot water

Steps:

  • Combine water, onion, and pinto beans in crock pot.
  • Mix together ketchup, Worcestershire Sauce, vinegar, mustard, seasoned salt, Liquid Smoke, and brown sugar in separate bowl.
  • Stir half of this mixture into beans in crock pot.
  • Place brisket on top of beans (cut into two pieces, if needed).
  • Spread the remaining mixture over brisket.
  • Cook on low for 8-10 hours, stirring twice, if possible.
  • Slice meat across the grain and serve with sauce and with beans on the side.

1 1/2 lbs chopped beef brisket
2 cups pinto beans (already cooked or canned)
1 1/2 cups carrots, cut into chunks
1 1/2 cups yellow onions, diced
1 medium zucchini, diced
1 medium yellow squash, diced
2 tomatoes, chopped
1 bunch green onion, chopped
6 cloves garlic
1/4 cup cooking oil
6 quarts water
6 tablespoons barbecue seasoning
beef bones with marrow or short rib of beef, to make beef broth (canned just doesn't cut it!)
1/2-3/4 cup prepared barbecue sauce

Steps:

  • In a large pot, simmer beef bones, water, BBQ seasoning.
  • for 2 hours.
  • Remove and discard bones.
  • Reserve stock.
  • In a pan saute saute whole garlic cloves.
  • "Mash"garlic.
  • into oil.
  • Add Carrots and when they start to carmelize,.
  • add onion.
  • Let both carmelize to golden brown.
  • Into the beef broth add Carrot/Onion/Garlic mixture,.
  • Add remaining ingredients and simmer for 20-30 minutes.
