SMOKEY CHIPOTLE ORANGE BARBECUE SAUCE

I came up with this delicious barbecue sauce trying to keep in mind what I could have on hand in the pantry or in the freezer in a pinch. Use this as a finishing sauce (not a marinade) during the last 7-10 minutes if grilling or the last 30 minutes if cooking in the oven.

Number Of Ingredients 9

2 chipotle chiles in adobo
1/2 cup frozen orange juice concentrate
1/4 cup molasses
1/2 cup ketchup
1/4 cup soy sauce
1/2 cup cider vinegar
2 teaspoons fresh ginger, peeled and finely chopped (or ginger juice, 1 inch of frozen thawed, see below)
4 garlic cloves
1 small red onion

Steps:

  • Combine all ingredients and puree in a food processor and blend until smooth. Bring to a boil in a tall saucepan, drop to a low simmer and cook, stirring often, until thick, about 30 minutes.
  • Two chipotle make this lightly smokey and spicy. Use more if you like things spicy! Freeze the left over chipotle from the can in a covered ice cube tray or pressed flat in freezer safe plastic wrap for future use.
  • Freeze the left over fresh ginger washed, air dried, not peeled and cut into one inch pieces. When you need 2 tsps, just take out an inch, let it defrost in a small bowl and squeeze out the juice. Fantastic!
  • This is enough to cover one whole chicken or 2 baby back ribs with some sauce left over for those who want a little more -- .

1/2 cup fat free sour cream
1/2 cup fat-free mayonnaise
1/2 cup reduced-sugar orange marmalade, Smucker's
1 tablespoon orange juice concentrate
3/4 teaspoon cumin
1 -3 tablespoon adobo sauce, to taste (from a can of chipotles in adobo sauce)

Steps:

  • COMBINE all ingredients in small bowl.
  • COVER and refrigerate several hours to blend flavors.
  • SERVE with assorted fresh vegetables, corn chips, or tortilla chips.

Cool and creamy chipotle dip... mmm! This is a real hit at parties of all sorts, in all seasons! (You can even use this as a pasta sauce and as a topper for sandwiches and burgers, or stir a little into some chowder.) Prep includes chilling.

2 -3 individual chipotle chiles in adobo, to taste (if you like it spicier, try 4-5 chiles)
1/2 teaspoon adobo sauce
2 green onions, chopped
1 clove garlic, finely minced
1/2 cup mayonnaise
1 cup sour cream
1 teaspoon lime juice
1/4 teaspoon ground cumin
1/4 cup shredded monterey jack cheese
salt and pepper, to taste

Steps:

  • Using a food processor, whir the chipotle chiles until smooth.
  • Chop the green onions.
  • In a non-reactive bowl stir together the onions, pureed chiles, garlic, and remaining ingredients and season to taste.
  • Refrigerate for at least one hour before serving.
  • Pour into serving dish, top with shredded cheese, and serve with tortilla chips, bell pepper strips, other raw veggies, or crackers.
  • It will keep, refrigerated and covered, for about 3 days.
  • Makes about 1 1/2 cups.
  • If you like cilantro, you can add a teaspoon of fresh, minced or chopped cilantro to the dip.

  • Combine undrained tomatoes, Velveeta and chipotle pepper in 1-1/2-quart microwave-safe dish; cover.

I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat. I usually use 2 with seeds. You can also substitute low-fat Greek yogurt in place of the sour cream.
