3 tablespoons turkey drippings
3 tablespoons all-purpose flour
2 ½ cups turkey stock
¼ cup cooked turkey giblets, chopped
½ tablespoon chopped fresh sage
½ teaspoon ground black pepper
salt to taste

Steps:

  • Heat pan drippings in a large skillet over medium heat; gradually add flour and stir until golden brown.
  • Slowly whisk in turkey stock until blended and smooth. Stir in giblets, and season with sage, pepper, and salt. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, or until thickened.

My Mother has been making this gravy every year at Thanksgiving and Christmas Dinners for about 50 years. It's really good on mashed potatoes, cornbread dressing and the turkey.

1 giblets from a turkey
½ teaspoon salt
½ teaspoon ground black pepper
1 cube chicken bouillon
1 stalk celery, halved
¼ yellow onion
1 quart water
2 (14.5 ounce) cans chicken broth
4 hard-cooked eggs
2 tablespoons cornstarch
½ cup milk

Steps:

  • In a 2 quart saucepan, simmer the giblets, salt, pepper, bouillon, celery and onion in 1 quart of water for 40 to 50 minutes.
  • Discard celery, onion and gizzard. Chop liver and neck meat and return to pan. Add chicken broth or if you have a turkey, use drippings (about 1 1/2 cups and 1 can of chicken broth).
  • Chop eggs and add to broth. Mix cornstarch and milk together and slowly add to broth. Stir well until thickened. Reduce heat to low.

Giblet broth and giblets
Neck, gizzard, heart, wing tips and liver reserved from 1 turkey
2 1/2 cups canned low-salt chicken broth
1/2 cup dry vermouth or white wine
1 medium carrot, peeled, sliced
1 small onion, sliced
4 ounces crimini mushrooms, sliced
12 large fresh sage leaves
1/2 teaspoon black peppercorns
Gravy
Roasting pan and pan juices from 1 roasted turkey
8 bacon slices (about 7 ounces)
6 tablespoons all purpose flour
3 tablespoons dry vermouth or white wine
2 tablespoons chopped fresh sage

Steps:

  • Rinse turkey neck, gizzard, heart and wing tips. Place in heavy large saucepan. Add broth, vermouth, carrot, onion, mushrooms, sage and peppercorns. Bring to boil over medium-high heat. Reduce heat to low; cover pan. Simmer until neck meat is very tender, about 2 hours 30 minutes.
  • Meanwhile, place liver in heavy small saucepan; cover with cold water. Simmer over medium heat until firm to touch and cooked through, about 5 minutes. Drain.
  • Strain broth into small bowl. Transfer neck, gizzard and heart to work surface; discard remaining solids. Carefully remove all meat from neck. Chop meat finely. Cut away any tough membrane from gizzard. Chop gizzard, heart and liver finely. Combine meats in medium bowl. Spoon fat off top of broth and discard. (Giblets and broth can be made 1 day ahead. Cover separately and refrigerate.)
  • Gravy
  • Baste the turkey occasionally with three to four cups of homemade or canned low-salt chicken broth. That will help to create the rich pan juices that go into the gravy.
  • Pour roasting pan juices into medium bowl. Spoon fat off top; discard fat. Return pan juices to roasting pan and set pan over 2 burners. Simmer over medium-high heat 2 minutes, stirring with wooden spoon and scraping up any browned bits from pan bottom. Strain mixture from pan into 4-cup glass measuring cup; add giblet broth. If necessary, add enough canned broth to measure 4 cups liquid or transfer giblet broth mixture to medium saucepan and boil until reduced to 4 cups liquid.
  • Cook bacon in heavy large skillet over medium heat until brown and crisp. Using tongs, transfer bacon to paper towels; drain. Discard all but 4 tablespoons drippings from skillet. Add flour. Whisk over medium heat until roux is golden brown, about 3 minutes.
  • Whisk in giblet broth mixture. Bring to a boil, whisking occasionally. Reduce heat to medium-low. Mix in vermouth and sage. Simmer until thickened to desired consistency, about 10 minutes. Add chopped meats to gravy. (If desired, chop some or all of the bacon and add to gravy.) Simmer until heated through, about 2 minutes. Season gravy with salt and pepper.

1 tablespoon olive oil
1 (12 -14 lb) whole turkey, neck and giblets reserved
2 medium carrots, chopped
2 large celery ribs, chopped
3 1/2 cups chicken broth
8 large fresh sage leaves, plus additional sprigs for cavity and garnish
8 onions, assorted colors such as red, white, and yellow, quartered
1/2 cup unsalted butter, melted
1 cup riesling wine or 1 cup other dry white wine
1/4 cup flour

Steps:

  • Heat oil in large saucepan over medium heat.
  • Add turkey neck and giblets; brown, turning, until golden brown, about 5 minutes.
  • Add carrots and celery, cook, stirring occasionally, until golden, about 5 minutes.
  • Add broth and 2 cups water.
  • Simmer until liquid is reduced to 5 cups, about 25 minutes.
  • Strain stock through a sieve into a bowl and reserve. Discard solids.
  • Preheat oven to 425*F.
  • Rinse turkey inside and out and pat dry with paper towels.
  • Season turkey inside and out with salt and pepper.
  • Loosen skin from meat with fingers and carefully place sage leaves between skin and meat, keeping leaves flat.
  • Loosely fill neck cavity with sage sprigs and some onion.
  • Fold neck skin under turkey and secure with toothpicks.
  • Tuck wings under and fill body cavity with more onion and sage.
  • Tie legs together with kitchen string.
  • Place turkey, breast side up, on roasting rack in a large metal roasting pan.
  • Add 1 cup water to the pan.
  • Roast turkey in middle of oven, about 30 minutes.
  • Reduce oven temp to 350*F and pour melted butter over turkey; continue to roast 2 hours, adding additional water (1/2 cup at a time) if pan is dry, placing remaining quartered onions around turkey after 1-1/2 hours.
  • Roast until onions are tender but not falling apart, about 30 minutes.
  • Transfer onions, as cooked, with a slotted spoon to a bowl, cover and keep warm.
  • Total roasting time for turkey should be 2-1/2 to 3 hours or until instant read thermometer inserted 2 inches into inner thigh registers 180*F.
  • Transfer turkey to platter, reserving roasting pan and juices for gravy, and remove toothpicks.
  • Let turkey stand, loosely covered with foil, 30 minutes before carving.
  • Skim some fat from roasting pan and place pan over 2 burners.
  • Add wine to pan to deglaze, boiling over med high heat until wine is reduced by half, about 5 minutes.
  • Sprinkle flour over wine and cook, whisking, 2 minutes.
  • Whisk in 3 cups reserved turkey stock and simmer, whisking constantly, until reduced to 3 cups, about 7 minutes.
  • Strain gravy through a sieve into medium saucepan (discard solids) and keep warm, covered, over very low heat. Salt and pepper to taste.
  • Carve turkey and serve with onions and gravy.

a 12- to 14-pound turkey, neck and giblets (excluding liver) reserved for making stock
1/2 lemon, cut into 2 wedges
7 large fresh sage sprigs
2 slices firm whole-wheat sandwich bread
1/2 Granny Smith apple, quartered lengthwise
1/2 onion, quartered lengthwise
8 tablespoons unsalted butter, softened
1 cup water
For gravy:
1 cup dry Sherry
1 cup apple cider (preferably sparkling)
6 tablespoons all-purpose flour
2 cups turkey giblet stock or chicken broth plus additional stock or broth for thinning gravy
Garnish: assorted fresh sage sprigs

Steps:

  • Preheat oven to 425° F.
  • Rinse turkey and pat dry inside and out. Season turkey inside and out with salt and pepper and pack neck cavity with 1 lemon wedge, 1 sage sprig, and 1 bread slice. Fold neck skin under body and fasten with a skewer. Fill body cavity with apple, onion, 3 sage sprigs, and remaining lemon wedge and bread slice and truss turkey.
  • Rub turkey with remaining 3 sage sprigs and arrange sprigs on a rack set in a roasting pan. Spread turkey with butter and arrange on rack in roasting pan. Roast turkey in middle of oven 30 minutes.
  • Reduce temperature to 325° F. and baste turkey with pan juices. Add water to roasting pan and roast turkey, basting every 20 minutes, 2 1/2 to 3 hours more, or until a meat thermometer inserted in fleshy part of a thigh registers 180° F. and juices run clear when thigh is pierced. Transfer turkey to a heated platter, reserving juices in roasting pan, and discard string. Keep turkey warm, covered loosely with foil.
  • Make gravy:
  • Skim fat from pan juices, reserving 1/4 cup fat, and on top of stove deglaze pan with Sherry over moderately high heat, scraping up brown bits. Stir in cider. Bring Sherry mixture to a boil and remove pan from heat.
  • In a heavy saucepan whisk together reserved fat and flour and cook roux over moderately low heat, whisking, 3 minutes. Add Sherry mixture and 2 cups stock or broth in a stream, whisking to prevent lumping, and simmer, whisking occasionally, 10 minutes. Whisk in additional stock or broth to thin gravy if desired. Season gravy with salt and pepper and transfer to a heated gravy boat.
  • Garnish turkey with sage.

4 cups low sodium chicken broth (homemade or low sodium)
2 cups water
turkey neck, and
turkey giblets, from salt & pepper grilled turkey
pan dripping, from salt & pepper grilled turkey
1/4 cup all-purpose flour
2 large eggs, hard cooked and coarsely chopped
coarse salt & freshly ground black pepper

Steps:

  • Bring stock, water, and turkey neck and giblets to a boil in a sauce pan. Reduce heat, and gently simmer, uncovered for 30 minutes.
  • Meanwhile, pour pan drippings into a clear measuring cup or a gravy separator, and let stand until separated, about 10 minutes. Pour off fat.
  • Pour broth and giblets through a fine sieve, discarding solids. Return broth to pan, add defatted drippings, and bring to a boil over medium heat.
  • Place flour in a heatproof bowl. Whisking constantly, pour in 1/2 cup boiling-hot broth mixture until it forms a paste. Whisk paste into remaining broth in pan, and boil for 3 minutes. Stir in eggs if desired and season with salt and pepper. Gravy can be refrigerated airtight for up to 3 days; reheat before using.

1 turkey gizzard plus 1 turkey heart, about 1/4 pound
1 turkey liver, about 1/4 pound
1 tablespoon butter
1 1/2 cups finely chopped onions
2 teaspoons finely minced garlic
1/4 teaspoon dried thyme
3 tablespoons flour
3 cups fresh or canned chicken broth
1 cup water
1 bay leaf
Salt to taste if desired
Freshly ground pepper to taste
2 teaspoons tomato paste

Steps:

  • Cut away and discard outside tough membrane from the gizzard. Trim off end of the heart. Place gizzard and heart on a flat surface and chop finely with a heavy knife. There should be about 1/3 cup.
  • Chop liver separately. There should be about 1/3 cup.
  • Heat butter in heavy saucepan. When melted add onions and garlic. Cook until wilted and add chopped gizzard, heart, liver and thyme. Cook, stirring often, about 5 minutes.
  • Sprinkle with flour, stirring to distribute evenly. Add broth, water, bay leaf, salt, pepper and tomato paste and stir to blend. Let simmer over very low heat, stirring often and skimming surface of fat and scum as necessary, about 1 1/2 hours or until reduced to about 3 1/2 cups. Combine gravy with turkey basting juices from roasting pan as directed in recipe for roast stuffed turkey.
