S'MORES PRETZEL BITES

- Line a baking sheet with parchment paper. Place a heaping teaspoon of marshmallow cream off center on Snack Factory® Pretzel Crisp®. Place on prepared sheet. Freeze for at least 15 minutes.
- Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
- Line a work surface with waxed paper. Dip marshmallow-covered half of pretzels in melted chocolate about halfway up. Place on waxed paper and immediately sprinkle with graham cracker crumbs. Allow chocolate to harden before removing bites from waxed paper, about 5 minutes.

Perfect bite-sized soft pretzels! Add your favorite toppings: salt, poppy seeds, sesame seeds, dried shallots, dried onions, etc... before baking. Serve with cheese sauce or any dipping sauce of your choice.

Steps:
- Place 1 1/2 cups water, butter, brown sugar, yeast, and salt in the bowl of a stand mixer fitted with the hook attachment. Mix until well combined. Let sit for about 5 minutes.
- Turn mixer on low speed and add 4 cups flour, 1 cup at a time. Add additional 1/2 cup flour if dough appears sticky. Increase speed to medium and knead until dough is smooth and pulls away from the sides of the bowl, 4 to 5 minutes. Sprinkle in more flour if dough still seems a little tacky.
- Oil a large mixing bowl. Add the ball of dough. Cover with plastic wrap and let rise in a warm place for about 1 hour.
- Preheat the oven to 425 degrees F (220 degrees C). Grease a sheet pan with cooking spray.
- Bring 3 quarts water to a boil in a large saucepan. Slowly add baking soda and return to a boil.
- Meanwhile, remove dough from the bowl, flatten into a disc shape, and cut into 8 wedges. Roll each wedge into a 24-inch rope. Cut each rope into 1-inch pieces.
- Drop batches of dough pieces into the boiling water for about 35 seconds. Remove to the prepared sheet pan. Beat egg with 1 tablespoon water; brush over the tops of each boiled dough piece. Repeat with remaining dough.
- Bake in the preheated oven until golden brown, 14 to 16 minutes. Cool slightly before serving.

EASY S'MORE BITES

Steps:
- Preheat oven to 350 degrees
- Spray pan with non stick spray.
- In a medium sized bowl mix graham cracker crumbs, powdered sugar and butter with a spoon
- Evenly spoon the mixture to the 24 mini muffin cups. Press along the bottom and sides to make a cup.
- Bake for 5 minutes
- While they are baking cut 12 large marshmallows in half.
- Remove the pans from the oven and place one piece of the Hershey bar in the graham cracker cup and cover with 1/2 of marshmallow (cut side facing down).
- Turn your oven on broil
- Put the pan back in and broil for 1-2 minutes (WATCH THEM!!) Take them out as soon as they start to brown. (I like mine light brown so I only did a minute)
- Let cool and take out of the pan when you are ready to eat!

- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or silpat mats. Set aside.
- Place the chopped chocolate in a heatproof bowl, then place the bowl over a pan of simmering water, making sure that the water does not touch the bottom of the bowl. Melt the chocolate and coconut oil together, stirring occasionally. Once the chocolate has nearly melted, remove the pan from the heat and continue stirring to melt the chocolate completely. Set aside, leaving the bowl on top of the pan.
- Arrange 48 pretzels in a single layer on the baking sheets, leaving at least 1 1/2 inches between each pretzel to allow room for the marshmallows to expand. Slice each marshmallow in half around its middle, then place one half on each pretzel. Bake until the marshmallows have melted a little and are just barely beginning to brown, about 5 minutes. Remove from the oven and let cool for 3 minutes.
- Place a scant 1/4 teaspoon of peanut butter in the center of each marshmallow, then, using the peanut butter like glue, gently press a second pretzel on top to create a pretzel-marshmallow sandwich.
