This is simple and tasty with some rice or couscous and a colorful vegetable; I made a bell pepper, garbanzo, sesame salad. Mmmm, good as a burger too.

½ cup cooking wine
1 tablespoon olive oil
2 tablespoons dark soy sauce
2 tablespoons balsamic vinegar
2 cloves garlic, minced
2 large portobello mushroom caps

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a baking dish, mix the wine, olive oil, soy sauce, balsamic vinegar, and garlic. Place mushroom caps upside down in the marinade, and marinate 15 minutes.
  • Cover dish, and transfer to the preheated oven. Bake 25 minutes. Turn mushrooms and continue baking 8 minutes.

Stuffed Portobello Mushrooms are QUICK and EASY to prepare in less than 30 minutes, and are full of flavor from butter, thyme, and a cheese topping!

¾ lb. Portobello mushrooms
1 clove garlic (minced)
2 Tbsp. olive oil
salt and pepper (to taste)
½ tsp. dried thyme
½ Tbsp. butter
1 Tbsp. Parmesan (grated)
3 Tbsp. mozzarella (shredded)

Steps:

  • Preheat oven to 400°F. Wipe ¾ lb. Portobello mushrooms clean and remove the stems. Finely mince 1 clove garlic.Lightly oil a baking sheet and place the mushrooms on top in a single layer, open side facing up.
  • In a small bowl, mix together 2 Tbsp. olive oil, garlic, ½ tsp. dried thyme, and a little salt and pepper to taste.
  • Drizzle over the inside of each mushroom evenly. Top each with a thin slice of butter from ½ a Tbsp. Bake the mushrooms for around 15 minutes until tender. While they are cooking, mix together the 1 Tbsp. grated Parmesan and 3 Tbsp. shredded Mozzarella.
  • After the 15 min, top the mushrooms with the cheese and return to the oven for around 5 minutes. Once the cheese is golden and bubbly, remove the mushrooms from the oven, serve, and enjoy!

1 large cap portabella mushroom
2 tablespoons low-fat ricotta cheese
1/2 cup spaghetti sauce (I use homemade)
1/4 cup mozzarella cheese
1 cup cooked pasta

Steps:

  • Heat oven to 350.
  • Stem mushroom and saute in nonstick, oven-safe pan for about 3 minutes on each side.
  • Spoon ricotta cheese into mushroom cavity.
  • I sprinkle a little garlic powder on top.
  • Drizzle about 2 tablespoons of spaghetti sauce on top. Bake for about 15 minutes.
  • Remove and add cooked pasta to the side of the mushroom. Pour remaining sauce over pasta and mushroom.
  • Sprinkle with mozzerella cheese and bake until cheese is bubbly.

2 portabella mushrooms
1/2 teaspoon garlic powder
1/4 cup red onion
1/8 cup olive oil
1/8 cup water
1 teaspoon italian seasoning
2 tablespoons butter
1/2 cup herb stuffing mix
1/4 cup crabmeat
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Saute onions in butter in small sauce pan until they are soft.
  • Add garlic powder, Italian seasoning, salt and pepper as desired, stuffing and crab meat, stir and reduce to low heat.
  • Pour water and oil over mixture, stir slightly, remove from heat and cover.
  • Remove stems from mushrooms and scoop out enough of the underside of the mushrooms to leave a crater to be filled.
  • Fill the mushroom crater with the stuffing mixture.
  • Place mushrooms in oven safe baking dish, cover with foil and bake at 350 degrees for 25 minutes.
