Steps:
- Heat the oil on a large, flat cast iron griddle or skillet over medium-high heat. Immediately "scatter" the potatoes over the oil. Season with salt, to taste. "Scatter" over the onions and cook, without stirring, until the outermost edges have started to brown, about 2 1/2 minutes. Flip the hash browns with a spatula, and place the cheese on top. Let the cheese melt, about 30 seconds.
- Transfer the hash browns to a plate and serve immediately.

- Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
- Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
- Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

Steps:
- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

I love the hashbrowns you can get at Waffle House.I love mine fixed the way they call them "Scattered,Smothered,Chunked".But I don't always have the time or the money to go very often.So I decided to come up with what I consider to be close enough to them to satisfy that "Waffle House Hashbrown Craving".You could use regular potatoes that have been peeled and shredded,but for this recipe I prefer to use the refrigerated ones.Serve with your favorite style eggs and toast. - Melt 1 Tablespoon margarine in a medium sized non-stick skillet,over medium heat.
- Add onion and diced ham,cook until onion is soft and ham is heated through.
- Spread ham and onion into an even layer,add rest of margarine in center of ham/onion mixture.
- Cover ham/onion mixture evenly with shredded potatoes.
- Cover potatoes with salt and pepper.
- Cover with lid and let brown for about 5 to 10 minutes.(depending on how brown you like your potatoes).
- Remove lid and divide into 4 pieces,turn each piece over to brown other side.

SMOTHERED HASH BROWNS
These are tasty and very filling. Excellent for breakfast dinner or supper. I use the frozen hashbrowns as it makes it so much easier to prepare. You can save some time with the prep time by chopping ingredients up the night before. This is also very good served with salsa andor fried eggs on top. The first time I made these I placed it on a large serving platter. The second time, I served it buffet style and everyone made there own. Your plate can be prepared the way you want it this way, and seemed to work much better.

- The number of potatoes simply depends upon the number of people you are feeding.
- Wash and do not peel the potatoes. Microwave on high until mostly done. If using 2-3 small red potatoes for two servings this will be about 2 1/2 minutes.
- While microwaving the potatoes fill a bowl with iced water. When potatoes are done drop them into the ice water and cut them lengthwise in half to expedite cooling.
- When just cool enough to handle shred each half without peeling. Keep the peel against your palm while shredding and most of the peel will remain in your hand. Discard the peel and continue with recipe.
- Place shredded potatoes in skillet sprayed with vegetable spray and cook over medium heat until well browned. Flip and repeat.
- (I don't use salt and pepper, I had to include something else here or the system would not let me publish this. Add it if you would like.).
- NOTE: If you want to add other items to these then shred them onto a plate first, add the other items and them place in fry pan. You might want to add some diced onion, bacon or bacon bits, shredded cheese, chives or whatever you might imagine.

SKILLET HASH BROWNS
Steps:
- Bring a large pot of salted water to a boil. Cook the potatoes whole in their skins for 15 minutes. They should still be fairly firm but easy to pierce with a fork. The idea is that they hold shreds when they are grated, so don't overcook them. Drain and set aside to cool.
- Using the coarse grating blade on a food processor, or the coarse side of a box grater set over a large plate, grate the potatoes; set aside.
- Heat a 10- to 12-inch cast-iron skillet or a nonstick skillet over medium-low heat. Add the butter and let it melt. Add the potatoes to the pan, spreading them out so that they form an even 1-inch-thick pancake.
- Allow the potatoes to get nicely browned for 4 to 5 minutes without stirring, forming a golden crust on the bottom. Watch carefully, and when the potatoes start to brown, use a metal spatula to turn them over once or twice.
- Add the onions to the potatoes and season with salt and pepper. Continue to cook for another 10 to 12 minutes or so without stirring, forming a golden crust on the bottom. When the hash browns are golden brown, flip them in the pan (intact, as far as this is possible) with a spatula. Add more butter if they seem to be sticking. Season with salt and pepper. Continue to cook until both sides are crispy and golden brown, 5 to 7 minutes.
- Transfer the hash browns to a serving platter, sprinkle with the parsley, and serve immediately.
- Smothered Hash Browns Variation
- Melt 2 tablespoons unsalted butter in a small ovenproof saucepan over low heat. Add 2 diced red onions. Cook until golden brown and caramelized, about 20 minutes, but watch them so they don't burn! Add a little salt and pepper. Follow the recipe through step 5, then scatter the caramelized onions over the top of the hash browns and place 6 slices American cheese or 1/2 cup grated Cheddar cheese over the top to "smother" them. Bake in a preheated 400°F oven for 2 minutes, or just until the cheese melts. Serve immediately.
- Sweet Talk Onions
- Why use red onions in hash browns? They're sweeter than many onion varieties (though their storage life is short) and they offer a little more color to the dish. Among the other sweet specialty onions are the Vidalia, the Georgia Sweet, the White Bermuda, which is mild and sweet, and the Texas Super Sweet. These large yellow onions can grow to the size of a baseball and their storage life is a little longer than the other varieties.
CRISPY RESTAURANT-STYLE HASH BROWNS
These hash brown potatoes will beat restaurant hash browns hands down. I like to cook them very crisp and well done. I usually make one large pan-sized hash brown so I just have to flip once in the hot oil. These potatoes are superior to frozen or restaurant hash browns. I saw a similar recipe online and wanted to have a written copy for the kitchen so I did not have to watch the video each time I made these.

Official Contest Entry: Simply Potatoes 5Fix. This is a dish my kids love and eat up when it is cold outside. You can also make a turkey or chicken chili for a healthier version, and use different types of beans for variety. Sour cream can also be replaced with Greek style yogurt without a loss of flavor. This recipe can also be treated kind of like nachos where you can put anything on them as long as they are good. Enjoy!!!!

- Make a pot of your favorite chili. Cook hash browns by package instructions in frying pan. Place cooked potatoes on a serving platter or bowl. Cover with the chili and top with the shredded cheese. Dollop the sour cream on top in the center. Sprinkle the jalapeños over the top. Use fresh or pickled peppers chopped or sliced.
- Pepper jack cheese can also be used in place of the cheddar. If peppers are too spicy, use your favorite salsa instead, or offer peppers on the side as a topping.
