I discovered this recipe almost 20 years ago. Quail is a family favorite every fall when my husband goes hunting. It's an elegant meal, using only one skillet, so there's hardly any cleanup or fuss. -Lenora Picolet, Dwight, Kansas

4 bacon strips, halved
8 quail (about 2 pounds)
1 cup shredded carrots
1/2 cup sliced green onions
1/2 cup minced fresh parsley
2-1/2 cups chicken broth
1 cup uncooked long grain rice
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning

Steps:

  • In a large skillet over medium heat, cook bacon until partially done. Remove bacon; drain, reserving 2 tablespoons drippings. Brown quail in drippings. Remove and keep warm. Saute carrots, onions and parsley in drippings until tender. Add broth, rice, salt and lemon-pepper; bring to a boil. Place quail over rice; place one bacon strip on each. Reduce heat; cover and simmer for 25-30 minutes or until the rice is tender and quail is cooked.

12 dressed quail
salt
fresh ground black pepper
1/2 cup gin
1/2 cup vegetable oil
1 large onion, chopped
1 cup chopped celery leaves
1 teaspoon dried tarragon
Tabasco sauce, to taste
8 tablespoons butter
12 slices bacon
12 toast, triangles

Steps:

  • Season quail inside and out with salt and pepper; arrange them in a single layer in a large baking dish.
  • In a mixing bowl, whisk together the gin and oil until well blended.
  • Add in the onion, celery leaves, and tarragon; season with Tabasco and stir.
  • Pour the marinade over the quail, cover with plastic wrap, and refrigerate at least 6 hours, turning the quail twice.
  • Preheat oven to 350°.
  • Remove the quail from the marinade and wipe dry with paper towels.
  • Melt 4 tablespoons butter in a large cast-iron skillet over medium heat, add half the quail; brown them lightly on all sides, and transfer to a large, shallow baking dish.
  • Repeat with the remaining butter and quail.
  • Wrap each quail snugly with a strip of bacon, strain the marinade over the birds, cover them with a sheet of foil, and bake until the quail are very tender, about 45 mintues.
  • On a large serving platter, arrange each quail on a toast triangle and serve.

6 tablespoons butter
3 tablespoons flour
2 cups chicken broth
1/2 cup sherry wine
salt and pepper

Steps:

  • Note: 12 doves can be substituted for the 6 quail.
  • Season the quail with salt and pepper.
  • Melt butter in a heavy skillet and brown the quail.
  • Remove the quail to a baking dish.
  • Add flour to the butter in the skillet and stir to combine.
  • Slowly add the chicken broth, sherry, salt and pepper.
  • Mix well and pour over the quail.
  • Cover and bake at 350 degrees for about 45 minutes - 1 hour or until the quail are done.
  • This is very good served over rice with some homemade biscuits.

6 quail breasts
1 medium chopped onion
2 tablespoons melted butter
1/2 cup sauteed mushrooms
1/2 cup finely chopped celery
2 tablespoons flour
1 1/2 cups milk
1/2 teaspoon Worcestershire sauce
1 cup sour cream

Steps:

  • Preheat the oven to 350 °F.
  • Arrange the birds in a casserole dish. In a medium saucepan, sauté the onion, mushrooms, and celery in the butter. Add flour and stir well to blend. Slowly add the milk to make a cream sauce. Salt and pepper to taste and add Worcestershire.
  • Pour over the birds. Cover the dish with foil and bake at 350 °F for approx 20 minutes. Remove some of the cooking liquid and combine with the sour cream. Bake uncovered for approximately 20 minutes more.

8 quail breasts
3/4 cup plus 1 tablespoon flour, divided
1 stick butter
1/2 cup chicken broth
1/4 cup chopped parsley

Steps:

  • Wash quail, and sprinkle with salt and pepper, if desired. Add 3/4 cup flour to large zipper bag. Add quail, close zipper, and shake to coat. Melt butter in large skillet over medium heat. Add quail, and cook on both sides until browned. Add chicken broth to skillet. Cover, and cook about 15 minutes longer. Remove from pan and keep warm. To remaining 1 tablespoon flour, add about 2 tablespoons pan juices; stir to dissolve. Add to remaining pan juices, and cook until thickened. Serve gravy over quail. Garnish with parsley.

3/4 cup all-purpose flour, divided
1 teaspoon salt
1/2 teaspoon pepper
6 quail (1/3 to 1/2 pound each)
1/2 cup butter
1/2 pound fresh mushrooms, sliced
2 cups chicken broth
2 teaspoons minced fresh thyme or 3/4 teaspoon dried thyme
Hot cooked noodles, optional

Steps:

  • Combine 1/2 cup flour, salt and pepper; coat each quail. Melt butter in skillet; brown the quail. Transfer to an ungreased 2-1/2-qt. baking dish. In the pan drippings, saute the mushrooms until tender. Add remaining flour and stir to make a smooth paste. Add broth and thyme, stirring constantly. Bring to a boil; boil for 1 minute or until thickened. Pour over the quail. Cover and bake at 350° for 40-50 minutes or until tender and juices run clear. Serve over noodles if desired.
