JUST like the outdoor kind, this frosty figure from our kitchen staff is sure to melt...only it'll be your mouth! The cute-as can-be character is completely edible, from its chocolate candy buttons and coconut snowflakes to the licorice scarf and gumdrop nose. What's more, you'll be able to build the confection without using a specially shaped pan. How? CT's cooks baked the cakes in ordinary ovenproof bowls, a muffin pan and custard cups. So go ahead-just gather the ingredients and roll out a snowman today!

2 packages (16 ounces each) pound cake mix
1 cup shortening
1 cup butter, softened
8 cups confectioners' sugar
2 teaspoons vanilla extract
4 to 6 tablespoons milk
3-1/2 cups sweetened shredded coconut (about 10 ounces)
2 brown M&M's
3 green M&M's
1 large orange gumdrops
4-1/2 teaspoons miniature chocolate chips
1 chocolate wafer
6 pieces red shoestring licorice, divided
1 large green gumdrop
2 red M&M'S
Two 10-ounce custard cups

Steps:

  • Prepare cake mixes according to package directions. Pour batter into two greased 1-qt. ovenproof bowls, two greased 10-oz. custard cups and one greased muffin cup., In a 350° oven, bake muffin cup for 18-20 minutes, custard cups for 45-50 minutes and bowls for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing cakes from pans to wire racks to cool completely. , For frosting, cream the shortening and butter in a bowl. Beat in the confectioners' sugar, vanilla and enough milk to achieve spreading consistency., Head and body: Use serrated knife to level the cakes. , For the body, place one large round cake flat side up on the 8-in. serving plate. Frost the top of the cake. Place the remaining large cake on top with the flat side down and edges even. Frost the top and sides., For the head, place one custard cup cake with flat side up on top of body. Frost the top of the cake. Place the remaining custard cup cake on top with the flat side down and edges even. Frost the top and sides. Set aside 1/4 cup of frosting for hat., Press coconut over the top and sides of snowman, reserving some to sprinkle on plate later. Press two brown M&M's onto face for the eyes and three green M&M'S onto body for the buttons., Use your fingers to shape the orange gumdrop into a carrot shape. Press wide end onto face for the nose., Hat: Place reserved frosting in a bowl. Melt chocolate chips. Stir melted chips into frosting until blended. Frost top of wafer. With top of cupcake down, place cupcake on top of frosted wafer. Frost cupcake with remaining frosting. Place hat on snowman's head., Wrap two licorice pieces around hat just above brim and trim as needed., Flatten green gumdrop between waxed paper. Using sharp knife, cut a holly leaf shape from gumdrop and place on hat brim. Place two red M&M'S on brim next to holly leaf for the berries., Finishing: Press the ends of two licorice pieces together to create one long piece. Repeat with remaining two pieces of licorice. Tie long licorice pieces around neck for scarf. , Sprinkle plate with reserved coconut.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch rounds, or use one 8-inch round pan and one 9-inch round pan.
  • On tray, arrange cake rounds as pictured. Frost with frosting. Sprinkle with coconut, pressing gently so it sticks.
  • Carefully cut black gumdrop for nose and eyebrows, cut green gumdrop for eyes, use licorice for mouth and muffler and chocolate chips for buttons. Place cookie on each side of head for earmuffs; attach across top of head with licorice. Store loosely covered.

2/3 cup sweetened condensed milk

Steps:

  • In a large bowl, combine the coconut, confectioners' sugar, milk and butter. Shape into 1-1/4-in. balls; place on waxed paper-lined baking sheets. Loosely cover and chill for 1-1/4 hours or until firm. , In a microwave, melt vanilla chips at 70% power for 1 minute; stir. Microwave in additional 10- to 20-second intervals, stirring until smooth., Dip balls in melted chips; place on waxed paper-lined baking sheets. Chill until firm, about 15 minutes. Set aside remaining melted vanilla chips., In a microwave, melt semisweet chips on high for about 1 minute; stir. 1 1/3 cups water
1/2 cup vegetable oil
3 eggs
1 teaspoon peppermint extract
2 unfrosted cupcakes
2 (12-ounce) containers whipped white frosting (recommended: Betty Crocker Fluffy White)
2 large egg whites or 5 tablespoons meringue powder
2 teaspoons fresh lemon juice or 1 teaspoon vanilla extract
3 cups confectioners' sugar, sifted
Food coloring, if desired
Royal icing (in a squeeze bottle or piping bag)
2 cups sweetened flake coconut
20 store bought small snowflake shaped cookies
1 (7.5-ounce) bag square blue mint candies (for hat)
2 peppermint patties (for eyes)
2 blue jelly beans (for eyes)
1 orange gumdrops (for nose)
8 blue candy covered chocolates (for mouth)
3 round hard candies (for buttons)

Steps:

  • For Cake:
  • Preheat oven to 350 degrees F. Grease the bottom and sides of 2 (8-inch) round cake pans; set aside. In a large mixing bowl, combine cake mix, water, oil, eggs and extract. Use an electric mixer to beat on low speed for 1 minute. Scrape down bowl and then beat on medium speed for 2 minutes, or until batter is smooth. Divide batter evenly between cake pans. Bake in preheated oven for 25 to 35 minutes, or until center of tester comes out clean. Let cool in pans for 5 minutes. Remove from pans and transfer to a wire rack to cool completely. ;
  • For Royal Icing:
  • With a hand mixer, beat the egg whites with the lemon juice or extract until frothy. Add the sifted powdered sugar and beat on low speed until combined, smooth, and shiny. Turn to high and beat approximately 5 minutes until stiff and glossy. Add food coloring, if desired, and transfer to a pastry bag to pipe onto cookies. ;
  • To Decorate:
  • Line the backside of a sheet pan with aluminum foil. Place 4 inch wide strips of parchment paper around the border of the sheet pan to keep the foil clean while you decorate the cake. Place cake rounds side by side on the lined sheet tray. Slice one side off each cupcake. Place cupcakes side by side at one end of a cake round with the cut/flat side facing up (this will be the top of the top hat). Frost both cakes and cupcakes with frosting so that it looks like a hat is resting on a snowman's head resting on a body. Remove the parchment paper. Spread or drizzle the bottom third of the sheet pan with some royal icing (the royal icing will act as glue for the coconut). Sprinkle the coconut over the royal icing to mimic snow. Randomly place 20 dollops of royal icing around the rest of the sheet pan. Place the snowflake cookies on each dollop of royal icing. Decorate the snowman's hat with rows of blue mints, starting at the very top of the Snowman's head and working up onto the cupcakes. To decorate the face use the peppermint patties for eyes, place a small dot of the royal icing in the center of each patty and place a blue jellybean on top of the royal icing. Use the orange gum drop for the nose and the blue candy coated chocolates for the smile. To make the buttons dip the flat side of a hard candy into the royal icing and then into the colored decorating sugar and place on the snowman's chest; repeat with remaining 2 hard candies. Take 2 (8-inch) piece fruit strips and tie them into a knot. Drape fruit strips across where the 2 cake rounds meet to make a scarf. To make the "broom", take a 3-inch long piece of fruit strip and slice the bottom 2 inches into thin strips. Place a small amount of royal icing at the end of the over sized candy cane and place the unsliced end of the fruit strip on to the royal icing. Use the large white gumdrops to make the hands. Place the candy cane next too one of his hands. ;

1 cup sifted cake flour, (not self-rising)
1 1/2 cups granulated sugar
12 large egg whites
1 teaspoon cream of tartar
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon pure coconut extract
Coconut Cream
1 1/2 cups dried unsweetened flaked coconut

Steps:

  • Preheat oven to 325 degrees, with rack in lower third. Sift together flour and 1/2 cup sugar into a bowl. Sift again.
  • Put egg whites in the bowl of an electric mixer; beat on medium speed until frothy. Add cream of tartar, lemon juice, salt, and extract; beat until soft peaks form. With mixer running, gradually add remaining cup sugar. Raise speed to medium-high; beat until stiff peaks form.
  • Gently transfer egg-white mixture to a large, shallow bowl; sprinkle one-third of the flour mixture over top. Using a large whisk, gently fold flour mixture into batter. Sprinkle remaining flour mixture over whites in two batches; fold until combined (do not overmix). Transfer batter to a 10-inch tube pan with a removable bottom; run a knife through batter to eliminate air bubbles. Smooth top.
  • Bake until a cake tester comes out clean and top is springy to the touch, 45 to 50 minutes. If pan has legs, invert and stand it on them. (Alternatively, invert pan over a narrow-necked heavy bottle.) Let cake cool completely, 1 1/2 to 2 hours.
  • Run a knife around edges of cake; lift out of pan. Using a serrated knife, cut cake in half horizontally; place bottom on a serving platter. Spread 2 cups coconut cream on bottom layer; set other half on top, and coat with remaining coconut cream. Top cake with coconut. Refrigerate at least 1 hour and up to 3 hours.

8 large egg whites at room temperature
Whipped Cream Filling
1 cup cold heavy whipping cream
2 tablespoons coconut cream (Coco Lopez)
1/2 cup grated fresh coconut (optional, see Tip)
Frosting
2 large egg whites
1 1/2 cups sugar
1/3 cup cold water
1/4 teaspoon cream of tartar
1/4 teaspoon kosher salt
1/2 cup mini marshmallows
1 teaspoon vanilla extract
3 to 4 cups unsweetened flaked coconut for decorating

Steps:

  • Place an oven rack in the bottom third of the oven and another in the top third of the oven. Preheat the oven to 350°F. Butter three 9-inch cake pans, then line each with a parchment paper round. Butter the paper and dust the pans with flour; knock out the excess.
  • Using an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed until light and fluffy, about 3 minutes. Use a rubber spatula to scrape down the sides of the bowl. In a medium bowl, stir together the flour, baking powder, and salt to blend. In a small bowl, stir together the milk, coconut milk, and coconut cream until smooth. Add the flour mixture in 3 increments, alternating with the milk mixture in 2 increments, starting and ending with the flour mixture. After each addition, mix at low speed just to combine the ingredients. Stir in the vanilla.
  • Place an oven rack in the bottom third of the oven and another in the top third of the oven. Preheat the oven to 350°F. Butter three 9-inch cake pans, then line each with a parchment paper round. Butter the paper and dust the pans with flour; knock out the excess.
  • To make the whipped cream filling:
  • Using an electric mixer fitted with the whisk attachment, beat the cream on high speed until soft peaks form. Beat in the coconut cream and the fresh coconut, if using.
  • To make the frosting:
  • Whisk the egg whites, sugar, water, cream of tartar, and salt in a large stainless-steel bowl until thoroughly combined. Place the bowl over a saucepan filled with 2 inches of barely simmering water. Using a hand beater or handheld electric mixer, continue beating the egg white mixture for 4 minutes. Add the mini marshmallows in 2 increments while continuing to beat. Wait until the first batch of marshmallows has melted before adding the second. Continue beating for 2 to 3 minutes more, until stiff peaks form. Remove from the heat, stir in the vanilla, and continue beating until the frosting is thick enough to spread.
  • To assemble the cake:
  • Stack one cake layer on a serving plate and spread the top with half of the whipped cream filling. Repeat with a second layer. Stack the final cake layer on top of the first two and cover the cake's top and sides with the frosting. Sprinkle the coconut on the top and sides of the cake.
  • Cover the cake loosely with plastic wrap and store for 1 day at room temperature or up to 3 days in the refrigerator. Bring to room temperature before serving.
  • Tip:
  • It's challenging to press coconut into the sides of the cake. When pressing the coconut in, the icing invariably sticks to my fingers and mars the frosting's finish. I've discovered that throwing small handfuls of coconut toward the side of the cake makes it adhere quite well-a messy but effective technique for creating a gorgeous-looking cake.
  • Tip:
  • For those who want to follow Aunt Molly's original recipe, here are her directions for extracting coconut meat and liquid from a fresh coconut: "First buy a fresh coconut. To select the best one, shake it to listen for a lot of milk inside. Prepare the coconut by first making a hole or two in one end with a hammer and ice pick. Stand the coconut up over a small bowl or glass measuring cup to catch the milk as it drains out. Next, crack the hard outer shell with a hammer, then pry off the pieces. The inner white coconut meat can then be grated [with a handheld microplane grater]. Refrigerate both the milk and grated coconut until ready to use."

SNOWY COCONUT LOAF CAKE

185g butter softened, plus extra for the tin
185g coconut milk, whisked
250g caster sugar
250g self-raising flour
3 large eggs
1 tsp coconut extract (optional)
25g desiccated coconut
100g butter, softened
250g icing sugar
2 tbsp coconut milk
½ tsp coconut extract (optional)
25g coconut chips or desiccated coconut
white chocolate truffles or large white sprinkles, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin (ours measured 10 x 21 x 5cm) and line the base with a long strip of baking parchment that overhangs the sides.
  • Put the butter, coconut milk, sugar, flour, eggs, coconut extract (if using) and desiccated coconut in a large bowl and beat with an electric whisk until combined. Scrape into the prepared tin and level the top with a spatula or the back of a spoon. Bake for 55 mins-1 hr, or until the cake is risen and golden brown and a skewer inserted into the middle comes out clean. If any wet cake mixture clings to the skewer, bake for another 5-10 mins, then check again. Leave to cool in the tin for 10 mins, then lift the cake out onto a wire rack, using the parchment to help you. Leave to cool completely. The cooled cake will keep in the freezer, well wrapped, for up to two months.
  • To make the icing, beat the butter, sugar, coconut milk and coconut extract, if using, in a bowl until smooth and creamy. Spread over the top of the cake using a palette knife or the back of a spoon, then scatter over a generous layer of coconut chips. Decorate with white chocolate truffle 'snowballs' or large white sprinkles, if you like.

1/4 cup vegetable oil
3 eggs
1 cup sour cream
1 (8 1/2 ounce) can cream of coconut
6 (1 1/4 ounce) white chocolate, with almond bars
4 cups confectioners' sugar
8 tablespoons evaporated milk
1 1/2 cups coconut (fairly fine so it will sit on the icing and look like snow)

Steps:

  • Heat oven to 350 degrees F.
  • Mix together the oil, cakemix, and all the cake ingredients, beat until smooth Pour into a well greased oven proof BOWL (2 quart size).
  • Bake 45 minutes or until a toothpick inserted in the center comes out clean, allow to cool in the bowl for 15 minutes Remove from bowl& allow to cool completely on a rack before frosting.
  • Frosting: Melt the chocolate in the top of a double boiler over simmering water.
  • Remove from heat and pour into a bowl add confectioners sugar and evaporated milk Beat until smooth.
  • Place the cake on a serving platter, spread frosting over the rounded cake.
  • Sprinkle heavily with coconut.

5 tbsp apricot jam , warmed and sieved
500g natural marzipan
100g white ready-to-roll icing
100g white ready-to-roll icing
1 egg white
200g icing sugar
green food colouring
6 gingerbread trees, see link below
small black writing icing tube (Supercook, available from tesco)
small orange sweet, such as a Tic-Tac or an orange hundred and thousand, for the nose
30cm thin coloured ribbon
1m x 1.5cm ribbon for the base

Steps:

  • Cover the cake with jam, marzipan and ready-to-roll icing), taking the icing to the edge of the board.
  • To decorate, roll out several marble-sized balls of the 100g ready-to-roll icing to make snowballs, then set aside. Roll two larger balls, one a little bigger than the other, to make the head and body of the snowman, then leave to dry for at least 30 mins.
  • Meanwhile, ice the gingerbread trees. Beat the egg white with the icing sugar to make a smooth paste. Put about one-third of the icing into another bowl, then mix in a speck of green colouring and a few drops water so that it's fairly runny and very pale green. Spread this over three of the gingerbread trees and leave to dry. Spoon another third of the icing into a piping bag fitted with a fine writing nozzle. Pipe rough fir-tree-like branches over the remaining trees. Once the green iced trees have dried to the touch, pipe branches over those, too.
  • When the icing has set, fix the trees onto the cake and around the edge using spots of the remaining thick royal icing. Put the smaller snowballs around and on top of the cake. Pipe eyes and a mouth onto the head of the snowman and insert the nose. Fix the snowman's head on with a spot more icing, position him on the cake, then carefully tie a ribbon scarf with the shorter length of ribbon. This is easiest if you start with too much ribbon, tie it, then trim with scissors. To finish, attach ribbon around the base and secure woth a double-sided tape.

1 1/2 chocolate cake mix
4 eggs
1 1/2 cups water
1/2 cup oil
1/2 cup butter
1 (8 ounce) jar marshmallow cream
1 cup powdered sugar
1 1/2 cups coconut flakes
2 candy-coated chocolates (for eyes)
2 drops white icing (for eyes)
1 orange chewy candy
5 -6 candies (mini chocolate balls)
3 -4 candies (yellow sweet tart chews)
2 candies (strawberry sour belts)

Steps:

  • For the Cake:.
  • Hand mix the cocoa, eggs, water and oil in a bowl,.
  • Pour some of the batter into a large sized (8") baking bowl and the remaining into a medium (5") baking bowl.
  • Bake at 350F: 60 minutes for the larger bowl, 30 minutes for the smaller bowl.
  • After cooling, remove the cakes from the bowls, cut a hole into the larger cake and fill with the marshmallow cream frosting.
  • For the Frosting:.
  • In a stand mixer, mix butter.
  • Add the marshmallow cream; mix again.
  • Add the powdered sugar, mix again.
  • For the Assembly:.
  • Place the larger cake upside down on a cake stand; this is the bottom base of the snowman.
  • Cover with the marshmallow frosting.
  • Cover the smaller cake (the snowman's head) with the marshmallow frosting and set on top of the bottom/larger cake; you may need to use a small round cardboard as a base to the head so it doesn't slide off.
  • Cover the snowman with coconut flakes.
  • Pipe little pupils, using the white icing, on the candy-coated chocolates; then place them down, forming the eyes.
  • Add the chewing candy on the face, forming the nose.
  • Add the mini chocolate balls, forming the mouth.
  • Place the sweet & tart chews on the body, forming the buttons.
  • And wrap the strawberry sour belts around the neck, forming the scarf.
