SHRIMP AND SOBA NOODLE SALAD



Shrimp and Soba Noodle Salad image

I fell in love with the Panera Bread® Shrimp and Soba Salad, decided to recreate it myself, and fell in love with my recipe. This is now one of my favorites!

¼ cup miso paste
¼ cup canola oil
2 tablespoons rice vinegar, or more to taste
1 tablespoon grated orange zest
1 tablespoon orange juice
1 tablespoon grated fresh ginger root
1 teaspoon mirin (Japanese sweet wine)
1 teaspoon peanut butter
1 teaspoon chile garlic sauce
1 (8.8 ounce) package dried soba noodles
2 cups baby spinach
1 cup carrots, cut into matchstick-size pieces
½ cup shredded cabbage
½ cup sliced snow peas
8 cherry tomatoes
16 cooked shrimp, peeled and deveined
2 green onions, finely chopped
1 tablespoon toasted sesame seeds

Steps:

  • Whisk miso paste, canola oil, rice vinegar, orange zest, orange juice, ginger, mirin, peanut butter, and chile garlic sauce together in a bowl until dressing is blended.
  • Bring water to a boil in a large pot. Stir in soba noodles and return water to a boil. Boil noodles until tender, 5 to 8 minutes. Drain noodles in a colander under cold running water until cool, about 1 minute. Toss cooked soba noodles with 1/2 of the miso dressing in a large bowl until thoroughly coated.
  • Divide spinach among 4 serving bowls; top each with 1/4 of the dressed noodles. Divide carrots, cabbage, snow peas, and cherry tomatoes among each bowl; top each with 4 shrimp. Drizzle remaining miso dressing onto each bowl to taste; sprinkle with green onions and toasted sesame seeds.

Sizzling shrimp and veggies top off tasty noodles. Looks like it came from an Asian restaurant but takes only 30 minutes in a common skillet.

8 ounces uncooked soba (buckwheat) noodles
1 tablespoon vegetable oil
1 pound uncooked medium or large shrimp, peeled and deveined
2 cloves garlic, finely chopped
1 tablespoon finely chopped gingerroot
1 1/2 cups baby-cut carrots, cut lengthwise in half
8 ounces green beans, cut in half
1 3/4 cups Progresso™ chicken broth (from 32-ounce carton)
2 tablespoons soy sauce
1 teaspoon sugar
1 tablespoon lemon juice
1 teaspoon cornstarch

Steps:

  • Cook and drain noodles as directed on package.
  • Meanwhile, heat 12-inch nonstick skillet over medium-high heat. Add oil; rotate skillet to coat bottom. Add shrimp, garlic and gingerroot; cook and stir about 3 minutes or until shrimp are pink and firm. Remove from skillet.
  • Add carrots, green beans, 1 cup of the broth, the soy sauce and sugar to skillet. Heat to boiling. Cover and cook over medium heat 4 to 6 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Stir in shrimp and lemon juice. Mix cornstarch and remaining broth until smooth; stir into shrimp mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Divide noodles among bowls. Top with shrimp mixture.

3 cloves garlic, thinly sliced
1 bunch (about 6) scallions, greens and whites separated, cut into 1/4-inch slices
8 ounces shiitake mushrooms, stems discarded, caps cut into 1/4-inch slices
2 tablespoons sake
1/4 cup grated ginger
1/4 cup sliced water chestnuts
6 ounces sugar snap peas, strings removed
1/2 medium green cabbage, cut in half, then cut crosswise into 1/4-inch strips
3 ounces dried soba or buckwheat noodles
1/2 pound sea scallops, muscle removed, each cut in half crosswise
1/2 pound large shrimp, peeled, tails left on
2 tablespoons low-sodium soy sauce
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat oil in a stockpot over medium heat. Add garlic and scallion whites; cook about 3 minutes. Add mushrooms; stir to coat. Stirring occasionally, cook mushrooms until tender, about 3 minutes. Add sake; scrape up any browned bits on bottom of pan. Stir in grated ginger and any accumulated ginger juice. Add 8 cups water; bring to a boil.
  • Reduce to a simmer; stir in chestnuts, snap peas, and cabbage. Add noodles; stir, and cook until al dente, about 8 minutes.
  • Stir in scallops, shrimp, soy sauce, salt, and pepper. Cook until seafood is cooked through, about 3 minutes. Serve garnished with scallion greens.

A simple, delicious and versatile recipe for Soba Noodles with Shrimp. We toss the edamame studded soba noodles in a creamy peanut sauce and finish the dish with plump shrimp, crushed peanuts and sliced green onions. It's the perfect make ahead and grab and go lunch!

10 ounces buckwheat soba noodles
1/3 cup warm water
¼ cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon honey (or agave nectar)
1 teaspoon sesame oil
1 cup shelled edamame (steamed)
16 extra-large, poached shrimp
1 green onion (sliced )
2 tablespoons crushed, dry roasted peanuts
salt and pepper to taste

Steps:

  • Fill a pot with water and bring to a boil over high heat. Add noodles and cook until al dente, 6 to 8 minutes. Drain and rinse noodles under cold water.
  • Soak noodles in cold water for 10 minutes
  • Drain.
  • Combine all the peanut sauce ingredients into a large mixing bowl and whisk together.
  • Add sauce, edamame and shrimp to the noodles. Lightly season with salt and pepper.
  • Toss together until evenly coated. Refrigerate mixture for 30 minutes.
  • Top noodles with sliced green onions and crushed peanuts. Serve.

  • If your 1 lb. large peeled, deveined shrimp is frozen, defrost it—here’s how. Meanwhile, soak 1 sheet kombu in 8 cups water in a large Dutch oven until soft and flexible, 15–20 minutes.
