SODA CHANH-LIME LEMONADE FROM LêLê

Steps:

• First prepare the simple syrup. In a saucepan bring the water and sugar up to a boil while stirring and cook until all of the sugar has dissolved. Cool the mixture down and store it in the refrigerator for up to two weeks.
• In 4 large glasses add to each 1 lime slice and 2 sprigs of mint, then add to each glass 40 ml of the simple syrup and 20 ml of the lime juice.
• Add ice cubes to each glass and then add sparkling water to fill each glass.
• Decorate each glass with one of the remaining sprigs of mint and serve.

Steps:

• Squeeze lime juice from limes into a pitcher. Add 5 of the lime halves into the lime juice. Stir club soda, sugar, and salt into lime juice until sugar dissolves. Fill the rest of the pitcher with water and stir again.

Steps:

• Preheat the oven to 325°F (160°C). Grease a 10-12 cup Bundt pan or tube pan (without a removable bottom).
• In the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl with an electric hand mixer), beat the butter on low speed for 2 minutes. Add the sugar and cream on high speed for about 5 minutes, until pale yellow, light, and fluffy.
• Add the eggs, 1 at a time, and beat on low speed between each addition until just incorporated, scraping down the sides of the bowl as needed. Do not overmix. • Make the glaze: In a medium bowl, whisk together the powdered sugar, lemon juice, lime juice, and lemon-lime soda until completely smooth. Whisk in the lime and lemon zests.

Steps:

• In a large container, combine the limeade and lemonade concentrates and orange extract. Stir in water. , Just before serving, stir in lemon-lime soda. Serve over ice. Garnish with lemon and lime slices.
