EASY SOLAR APRICOT CHICKEN



Easy Solar Apricot Chicken image

Number Of Ingredients 6

1 (15-ounce) can apricot half in juice not drained
2 tablespoons orange juice
1 1/2 tablespoons honey
2 teaspoons fresh rosemary, chopped
1 teaspoon grated orange zest
6 wholes chicken legs (drumstick and thigh), skin removed and trimmed

Steps:

  • Set Sun Oven out to preheat. Place the apricots and their juice, orange juice, honey, rosemary, and orange zest in a food processor and pulse until smooth. Arrange the chicken legs in a single large roasting dish or baking pan. Pour the apricot mixture over the chicken. Cover and bake until the chicken is cooked through, 1 1/2 to 2 hours. Serve with couscous or rice.

3 pounds chicken drumsticks, skin removed
1 can (8 ounces) tomato sauce
1/2 cup soy sauce
1/4 cup packed brown sugar
1 teaspoon minced garlic
3 tablespoons cornstarch
1/4 cup cold water
Thinly sliced green onions, optional

Steps:

  • Place drumsticks in a 5-qt. slow cooker. In a small bowl, combine the tomato sauce, soy sauce, brown sugar and garlic; pour over chicken. Cover and cook on low until a thermometer reads 170°-175°, 5-6 hours., To serve, remove drumsticks to a 15x10x1-in. pan; arrange in a single layer. Preheat broiler., Skim fat from cooking juices; transfer juices to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir until thickened, 2 minutes. , Meanwhile, broil chicken 3-4 in. from heat until lightly browned, 2-3 minutes. Brush with sauce before serving. If desired, sprinkle with green onions.

9 ounces dried mission figs, stems removed and coarsely chopped
1 large onion, thinly sliced
8 skinless, boneless chicken thighs
1/2 cup crumbled blue cheese

Steps:

  • Set Sun Oven out to preheat. In a small bowl combine the broth, vinegar, orange peel, salt, pepper, and ginger; set aside. Cover the bottom of a large pot with the figs and onions. Top with the chicken. Pour the broth mixture over the chicken. Cover and transfer to the Sun Oven. Cook until the chicken is tender, 1 1/2 to 2 hours. Serve over soft polenta, rice, or couscous. Sprinkle with cheese.

Peel the garlic, slice up the lemon; put some under the skin of each piece of chicken along with a sprig of rosemary, toss a few more cloves of garlic, a sprig or two of rosemary, and any remaining lemon on top, season with salt and pepper, add a drizzle of oil, cover and roast it in the Sun Oven until the skin is golden and the meat is fall off the bone tender. In the other pot roast some baby potatoes, prepare a salad while everything is cooking and you've got dinner.

  • This month's issue of Bon Appétit magazine has four turkey recipes that look really good. Of course four whole turkeys are about three and a half more than the two of us consume in a year so I've made some compromises. My marinade was made with about a cup of plain yogurt, a tiny piece of fresh ginger, a couple tablespoons of lemon juice, a few cloves of chopped garlic, 1 tablespoon of paprika, two tablespoons of Garam Masala, 1/2 a teaspoon of chili powder, and a little black pepper. All the ingredients were pureed in a blender and put in an oven bag. After rubbing the chicken inside and out with salt, I tossed in a couple of cardamom pods, a clove of garlic, a chopped shallot, some cumin seeds, and a stalk of celery. The chicken was then placed in the bag with the marinade and refrigerated overnight. It probably took about an hour and a half to roast it in the Sun Oven the next day, and the back yard smelled like an Indian restaurant. After straining the cooking liquid and removing the top layer of fat I simmered it on the stove in a small pot for about 20 minutes. I served it with rice, and it wasn't at all bad.

Place bag in a large bowl and let chicken marinate in the refrigerator for at least 30 minutes. Set Global Sun Oven out to preheat. Place a rack in a baking pan. Remove drumsticks from marinade and arrange them on the rack, discard marinade. Put baking pan in an oven bag or cover with aluminum foil and a tea towel. Bake in Sun Oven until meat is tender, about 4o minutes.
