TOMATO SAUCE WITH ONION AND BUTTER

Steps:
- Put either the prepared fresh tomatoes or the canned ones in a medium saucepan, add the butter, onion and salt and cook uncovered at a very slow but steady simmer for about 45 minutes, or until it is thickened to your liking and the fat floats free from the tomato.
- Stir from time to time, mashing up large pieces of tomato with the back of a wooden spoon. Taste and correct for salt. Discard the onion before tossing with pasta.

- If using fresh tomatoes, peel them. Coarsely chop the fresh or canned tomatoes. Trim both ends of the onion; peel it and cut it in half lengthwise.
- Put the tomatoes, onion, butter, and salt in a 4- to 5-quart saucepan over medium heat. When the tomatoes begin to bubble, lower the heat to a slow but steady simmer. Cook, stirring every 10 to 15 minutes, until the tomatoes are no longer watery and the sauce has reduced, about 45 minutes, depending on the size and shape of the pot. The sauce is done when the butter has separated from the tomatoes and there is no remaining liquid.
SUN-DRIED TOMATO BUTTER SAUCE
This sauce is so versatile. It is great over any white fish from halibut, to cod, tilapia, flounder, or snapper. Shrimp and scallops and chicken, pork or steak. Now my favorites happen to be cod (tilapia will work), chicken, or skirt steak. The fish and chicken are coated in garlickly Italian bread crumbs and pan sauteed and the steak simply grilled. Both topped with this simple sauce.

Steps:
- Sauce -- In a small saute pan on medium heat, add the wine and cook for about 3-4 minutes until it reduces by half.
- Add in the capers, lemon and butter (make sure the butter is cold), a little at a time and whisk to combine all the butter. Cook another minute or two.
- Remove from the heat and add in the parsley and sundried tomatoes.
- Serve over your favorites.

- Set Sun Oven out to preheat. Combine all the ingredients in a dark, light-weight, pot. Cover the pot with a tea towel and the lid set slightly ajar. Simmer the sauce in the Sun Oven until the oil separates from the tomatoes, about 1 hour. Serve over pasta.

- Set Global Sun Oven out to preheat. Put all the ingredients in a pot, cover with a tea towel and the lid set slightly ajar. Place in GSO and cook until the tomatoes reduced and separated from the butter, about 4o minutes. Remove from GSO and discard the onion. Makes enough sauce for one pound of pasta The sauce can be made ahead and kept in the refrigerator for 3 to 4 days or frozen. *Look for a brand of tomatoes that contain only one ingredient-tomato. No salt, no citric acid, no seasonings. I've never found a non-Italian brand that has none of these and even some of the Italian brands are guilty of unwanted additions, so read the label carefully. Pomi-Strained-Tomatoes, sold in cartons, are good and available in most U.S. supermarkets.
