24 ounces black beans (3 cans)
1 1/2 cups chicken broth
1 tablespoon vegetable oil
1 small onion, chopped
10 garlic cloves, finely chopped (or to taste)
16 ounces salsa
1 lime, juice of
1 tablespoon ground cumin
1 teaspoon crushed red pepper flakes
1/2 cup plain yogurt

Steps:

  • Place beans with liquid and chicken broth in blender or food processor and blend until smooth. You can leave part of the beans whole if you wish, it gives a nice texture.
  • Heat oil in large saucepan over medium heat. Add onion and garlic: cook for 1-2 or until the onion is tender. Add beans, salsa, lime juice, cumin and red pepper.
  • Bring to boil and reduce heat to low, cover. Cook while stirring occasionally, for 25-30 minutes.
  • Serve with a drizzle of youghurt, and garnish with chopped red onion and fresh cilantro.

4 onzas (1/2 paquete de 8 onzas) de queso crema PHILADELPHIA Cream Cheese, ablandado
1 taza de papaya picada
1/3 taza de cebolla morada picada bien fino
1/4 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing
4 rebanadas de jamón ahumado OSCAR MAYER Smoked Ham, picado fino
1/4 taza de cilantro fresco picado
1 lima, cortada en 4 cuñas

Steps:

  • Coloca 1/4 de taza de frijoles negros en un tazón mediano; ponlos a un lado. Coloca el resto de los frijoles, el caldo de pollo y el queso crema en la licuadora; pon la tapa. Licua esto hasta obtener una mezcla homogénea. Enfríala en la nevera al menos 1 hora antes de servir.
  • Agrega la papaya, la cebolla, el aderezo, el jamón y el cilantro a los frijoles que reservaste; pon la tapa. Refrigera la sopa hasta el momento de servir.
  • Coloca la sopa en 4 platos soperos; cubre cada uno con 1/2 taza de la mezcla de papaya. Sírvelos con las cuñas de lima.
