- Preheat a broiler. Place the bread on a baking sheet and broil it 1 to 2 minutes per side, until lightly toasted.
- Spread the bread with a thin coating of mayonnaise, then Dijon mustard. Top with 1 pinch salt. Add the shredded cheese and sprinkle with oregano.
- Place the toast bake on the baking sheet. Broil again for about 1 to 2 minutes until the cheese is melted. Enjoy!

- The thing I like most about a recipe like this is that you have a chance to showcase your favorite type of cheese in a way that's hard for people to resist. I like goat cheese for the "tang" factor and the supple texture. This goes great with a bowl of my chicken soup but can really fit in with any soup for the "comfort" factor.
- Heat a large skillet, over medium heat, and add the olive oil. When the oil begins to smoke lightly, shut off the heat and add the thyme leaves. The thyme should make a crackling sound as it hits the oil, cooking it slightly and mellowing the flavor. Add the bread in a single layer. Turn the heat back on and cook over medium heat until the first side browns, 2 to 3 minutes.
- Use a pair of tongs to turn the toasts on their second side and season with kosher salt. Top each round with a slice of cheese and continue cooking them over very low heat or off the heat, for 2 to 3 minutes. Adjust the seasonings with sea salt, to taste. Serve alongside soup, if desired.
SIMPLE CHEESE TOAST
Grilled cheese may be easy, but this is easier! It may sound too easy to be a "recipe", but it never occurred to me to make this, and now that my friend Angel introduced it to me, I make it all the time. My kids love it with tomato soup.

- In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
- Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
- The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.
BASIC CHEESE TOAST
This is one of those "too easy to post" recipes. I'm posting for menu planning and nutritional calculation purposes. Nothing fancy, just a kid friendly snack or meal that I can make in 5 minutes. Use pre-sliced sandwich cheese for speed, but it works with thin slices of any cheese.

- Place 2 pieces of bread on a cookie sheet. Cover each slice with one slice of cheese. Be careful to align the square shape of the cheese with the square shape of the bread so that no cheese drips off the bread.
- Place in the oven under the broiler and broil for 2 to 3 minutes. Watch for the cheese to bubble but not brown.
- Remove from oven. Carefully move the toast so that it is propped up on one side (fork, plate, pan edge. This allows the steam to escape from the bottom of the bread so that it isn't soggy toast. Do NOT flip the toast over, the cheese is still melty and sticky.
- For toddlers, allow to cool until the cheese is no longer stringy or oozy. Cut into diagonal quarters. Great served with fresh fruit or tomato soup.

- Spread bread with a thick layer of French mustard, then cover the whole surface of the bread with strips of cheese.
- Put slice of bread on an ovenproof dish and under the grill until the cheese softens and turns golden brown. Just before it begins to run, remove the dish and carry it to the table. Sprinkle with salt and pepper.
- Cut slice in four and serve on hot plates.
BROILED CHEESE TOAST
Growing up, it seemed my parents would be quite creative when preparing weekend breakfast. We always had plenty on the table, even when we had to scrimp to make ends meet. When we did not have a loaf of bread, my mom would use leftover hamburger or hot dog rolls, or whatever she was able to find which would toast under the broiler. Along with our favorite weekend broiled cinnamon toast, we often would have this along with our bacon, eggs and grits. Broiled Cheese toast is a favorite childhood memory for me.
