2 tablespoons butter
1 lb peas
1 garlic clove
1 tablespoon flour
2 small onions, chopped
1 quart hot water
1 1/2 cups sorrel, chopped
1 egg yolk
salt
pepper

Steps:

  • Heat 1 tbs butter in a soup pot, Add the peas and the garlic, and heat them through. Add the flour, and stir this, making sure the flour is all dissolved.
  • Add 1 quart of hot or boiling water.
  • Add salt and pepper.
  • Add the chopped onion, and simmer the soup for 45 minutes.
  • Fry the sorrel in 1 tbs butter in a small pan, and add this to the soup.
  • Finally, beat the egg yolk, and add this to the soup just before serving to make it smooth.

French-Canadian yellow pea soup is quite popular throughout Quebec. And this is a traditional yellow pea soup recipe.

1 1/2 c dried yellow peas
6 c water, for soaking
1/4 lb salt pork (salted pork belly)
2 1/2 c chopped onion
2 Tbsp butter
1 c diced carrots
1 c diced celery
6 c water
3 bay leaves
1/2 tsp dried savory (or 2 teaspoons fresh savory)
salt and pepper, for seasoning

Steps:

  • 1. Soak the peas in the water for about 4 hours or overnight. Drain and set aside.
  • 2. In a bowl of cold water, soak the salt pork for 15 minutes. Drain and set aside.
  • 3. In a large stock pot, brown the onions in the butter. Add the carrots and celery. Continue cooking for 5 minutes, stirring frequently.
  • 4. Add the water, drained peas, meat and bay leaves. Bring to a boil. Cover and simmer over low heat for 2 hours and 30 minutes to 3 hours or until the peas are tender.
  • 5. Remove and discard the bay leaves. Remove the meat from the fat of the salt pork, chop into small dice and return to the pot and cook until heated through.
  • 6. Add the savory, season with salt and pepper, and serve.

1/2 lb salted pork, or 1 ham bone
1 lb dry yellow peas
1 large onion, chopped
1/2 c celery, chopped (with leaves)
1/4 c fresh parsley
1 bay leaf
1 tsp dried savory
salt, to taste
10 c cold water

Steps:

  • 1. Wash peas and soak overnight in cold water. Rinse peas and pour into a large pot.
  • 2. Add water and the rest of the ingredients to the peas, bring to a boil, cover and simmer for 3 hours until the peas become very soft.
  • 3. Remove salted pork or ham bone.
  • 4. For a creamier consistency, puree half of the soup in a blender or a food processor. Return the puree into the soup and season to taste.
  • 5. This soup can be frozen for 6 months.

A traditional dish for Fridays (a legacy from Quebec's religious past). After cooking, I like to remove about half the peas and puree them in order to thicken the soup. I use a ham bone or pork hocks instead of salt pork. The savoury is essential to get the right flavour. You can also soak the peas overnight instead of using the quick-soak method.

  • Wash and sort peas; place in a large pot, bring to a boil.
  • Remove from heat and let sit for 1 hour.
  • Add salt pork, onion, celery, carrots, savory and 1 tsp salt.
  • Bring to a boil; reduce heat and simmer until peas are very tender, about 2 hours, adding more water if needed.
  • Remove salt pork; chop and return to soup.
  • Season to taste with salt and pepper.

This hearty, herbed soup has a wonderful old-world flavor! After I had experimented with and tweaked several sorrel soup recipes, my 88-year-old father-in-law declared it tasted like his mom made back in Poland - the ultimate compliment! It doesn't look like much, but is it ever tasty and filling. Use fresh sorrel in the spring, when the leaves are most tender. Top each serving with a dollop of sour cream and sprinkle with your favorite fresh herbs - parsley, dill, or cilantro. Serve with crusty bread or hearty biscuits.

½ cup unsalted butter
1 cup sliced onion
5 large cloves garlic, minced
12 cups tightly packed sorrel leaves, stems and veins removed
4 cups chicken stock
2 cups water
3 potatoes, peeled and diced
1 large carrot, peeled and cut into matchsticks
1 cup chopped fresh parsley
3 sprigs fresh dill, chopped, or to taste
1 tablespoon lemon juice
1 teaspoon freshly ground black pepper
¼ teaspoon ground cayenne pepper, or more to taste

Steps:

  • Melt butter in a large Dutch oven over medium heat. Add onion and garlic; cook and stir until soft, about 5 minutes. Add sorrel in batches, stirring well until wilted, 5 to 8 minutes in all.
  • Pour chicken stock and water into the Dutch oven. Stir in potatoes, carrot, parsley, dill, lemon juice, black pepper, and cayenne pepper. Simmer soup until flavors combine, about 1 hour.
  • Puree soup with an immersion blender until mostly smooth before serving.

My grandmother's pea soup recipe. This one has been made and enjoyed over and over in this household. You can use the green peas or the yellow peas or a combination of both. You can use a ham bone in lieu of the salt pork if you prefer.
