WALNUT CHOCOLATE CHIP BANANA BREAD WITH SOUR CREAM
Steps:
- Take the eggs and sour cream out of the fridge and set them out on the counter.
- Preheat the oven to 350º F. Grease a bread pan (about 9×5″ in size) with a little bit of olive oil. Set aside.
- In a large bowl, whisk together the flour, baking soda, and salt. Set aside.In another large bowl, whisk together the oil and sugar until you get a crumbly texture. Then, add the eggs and sour cream. Whisk again until cohesive, but don't over mix.
- Transfer the bowl of dry ingredients to the bowl of wet ingredients and add the mashed banana, chocolate chips, and walnuts. With a large spoon or spatula, carefully fold the ingredients together just until fully incorporated. Again, don't over mix
- Pour the mixture into the bread pan and bake for 40 minutes. Poke the center of the bread with a cake tester or toothpick. If it comes out clean, you can take the bread out of the oven and let it rest on the counter. If it doesn't come out quite clean yet, bake the bread for another 5-7 minutes, then check it again. Baking time varies from oven to oven.
- When the bread is done, place it on the counter and let it cool for 5-10 minutes. Then, slide a knife around the inside edges of the pan to release the bread in case it sticks (though, if properly greased, it shouldn't be sticking at all.) Carefully turn the bread out catching it with your other hand and place on a cooling rack or cutting board right side up.
- Once the bread is cool enough to touch but still nice and warm, slice into it with a bread knife. Serve as is, or with a smear of butter :) (And with a glass of milk!)
BANANA WALNUT SOUR CREAM BREAD
Steps:
- Heat the oven to 350 degrees. Spray 4 (3x5-inch) baking pans with cooking spray.
- In a large bowl, combine the sugar, sour cream, butter, eggs, and vanilla. Beat at medium speed until creamy. Fold in the mashed bananas.
- Add the flour, baking powder, baking soda and salt. Beat at low speed only until moistened. Fold in the nuts. Spread the batter into the pans.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pans and then remove from the pans to a cooling rack; cool completely.
- Slice to serve. Store tightly covered.

- In the large bowl of mixer, beat together first 5 ingredients til mixture is blended. Add the flour, baking powder, baking soda, and salt all at once. Beat til blended. Don't overbeat. Stir in banana, chocolate and walnuts. Divide mixture between 2 greased 6 x 4 inch loaf pans. Place pans on cookie sheet and bake at 350 for 30 to 35 minutes or til cake tester inserted in center comes out clean. Allow to cool in pan for 10 minutes, remove loaves from pan and continue cooling on rack. Brush tops lightly with sour cream glaze. Makes 2 loaves Sour Cream Glaze: 1 Tbsp. sour cream 1/4 cup sifted powdered sugar 1/4 tsp. vanilla 2 Tbsp. finely chopped walnuts Stir together all ingredients til blended. The recipe for the bread can be doubled, making 4 loaves. The bread freezes well. Wrap in double thicknesses of plastic wrap and then foil. Remove wrappers while defrosting

- Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
- In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
- Mash 2 bananas in a bowl with a fork. Place remaining 2 bananas in a separate bowl with 1 cup sugar and beat the bananas and sugar with an electric mixer until creamed and fluffy, 3 minutes. Beat in melted butter, eggs, sour cream, and vanilla extract until thoroughly combined.
- Whisk flour, baking powder, and salt together in a bowl and stir the flour mixture into banana-sugar mixture. Fold in mashed bananas and walnuts. Pour batter into prepared loaf pan and tap the pan on the counter several times to remove any air pockets. Stir 2 teaspoons sugar with cinnamon in a small bowl and sprinkle the cinnamon sugar over the top of the loaf.
- Bake in the preheated oven until bread is golden brown on top and set in the center, 1 hour and 15 minutes; rotate bread pan in oven halfway through baking. Cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

- Beat in eggs and bananas.

This is a moist, delicious banana bread i have been baking for a long time. I like to make large banana muffins to take to work. By making muffins, you can add walnuts to some and not others. Enjoy!!

- Preheat oven to 350 degrees F. Lightly grease a 9- x 5-inch loaf pan with non-stick spray.
- In a large bowl, cream butter and sugar together until light and fluffy. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. Add baking soda, cocoa, and flour. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer). Add chocolate chips and walnuts, if used.
