Sourdough Irish Brown Bread image

Sourdough Irish Brown Bread is hearty and savory because it's made with whole wheat flour and a cup of sourdough discard. It's super easy to make and super tasty.

2 cups (10oz, 285g) whole wheat flour
1/2 cup (2.5oz, 70g) all purpose flour
1 tablespoon (1/2 oz, 14g) granulated sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons (1 oz, 30g) unsalted butter at room temperature
1 egg at room temperature
1 cup (8 oz 240 ml) buttermilk, plus more for brushing
1 cup (8 oz 225g) sourdough discard

Steps:

  • Preheat oven to 375°F. Line a 1/2 sheet pan with parchment paper.
  • In a large bowl, whisk together the whole wheat flour, all purpose flour, sugar, baking powder, salt and baking soda. Add the butter and work in with your fingers until fully incorporated and there are no lumps larger than a pea.
  • Make a well in the center of the dry ingredients. Combine the egg, buttermilk and sourdough discard and pour into the well. Mix gently with a wooden spoon until it forms a shaggy dough and most of the buttermilk is incorporated.
  • Turn onto a floured surface and knead about 15-20 times until combined. Form the dough into a large round ball. Place the dough onto the parchment lined sheet pan and flatten the top a bit.
  • Using a sharp knife or a single edge razor blade cut a 1/2-3/4" deep X shape across the top of the loaf. Brush the top of the loaf with buttermilk. Bake for 40-50 minutes until it is golden brown and the internal temperature is 200°F.

This is something I came up with when I had some leftover proofed sourdough starter that I needed to use up. And it turned out to be yummy! I used my KitchenAid mixer to mix and knead the dough, but I suppose you could make this dough in your bread machine, then pull it out, shape it and bake in the oven. Note: Prep time does not include rising time.

1 1/4 cups proofed sourdough starter
1 cup milk, warmed
3 tablespoons butter, melted
1/3 cup molasses
1/4 cup potato flakes
1 1/2 teaspoons salt
1/2 cup whole wheat flour
4 -4 1/2 cups bread flour

Steps:

  • If using an ABM, place ingredients in bread machine pan in order according to the manufacturer's specifications.
  • Select dough cycle and press start.
  • If using KitchenAid mixer, or doing by hand, combine all ingredients and knead.
  • Turn dough out onto lightly floured surface and shape into desired loaf.
  • Place in greased loaf pan and let rise, covered, until dough has doubled.
  • Uncover and bake at 350 degrees for about 30 minutes, or until bread sounds hollow when tapped.
  • Immediately remove from pan and let cool on wire rack.
  • For a soft crust, brush top with melted butter.

1 1/2 cups warm coffee (about 100 degrees F)
1 tablespoon brown sugar
2 1/4 teaspoons active dry yeast
2 1/4 cups bread flour
1 1/2 cups whole-wheat flour
1 tablespoon cocoa powder
1/3 cup honey
2 tablespoons salted butter, softened
2 tablespoons molasses
Olive oil, for greasing and drizzling

Steps:

  • Mix together the warm coffee and brown sugar in a small pitcher. Mix in the yeast and set aside for a couple minutes to bloom.
  • In the bowl of an electric mixer, mix together the bread flour, whole-wheat flour and cocoa powder. Add in the coffee/yeast mixture, as well as the honey, butter and molasses. With the dough attachment, mix on medium until a ball begins to form, about 2 minutes. Reduce the speed to low and knead for an additional 6 minutes.
  • Grease a large bowl with olive oil; put the dough in it and cover with plastic wrap. Place in a warm spot in the kitchen and let rise until doubled in size, about 2 hours.
  • Divide the dough in half, form into 2 tight balls and put on a baking sheet. Drizzle the tops with olive oil and cover very loosely with plastic wrap. Allow to rise again for 45 minutes to 1 hour.
  • Preheat the oven to 375 degrees F.
  • When the dough is ready, remove the plastic wrap. With a serrated knife, cut an X in the top of each round. Carefully transfer the dough to two 10-inch cast-iron skillets. Place both skillets on the center rack of the oven and bake until the crusts are browned and the centers are set, about 30 minutes. Transfer to a cooling rack and allow to cool for at least 15 minutes before slicing.
