SOUTH INDIAN STYLE CHICKEN AND BEETROOT CURRY



South Indian Style Chicken and Beetroot Curry image

A tasty curry inspired by the food from Southern India. the combination of coconut, black mustard seeds and curry leaves gives it that familiar south Indian flavor while the beetroot adds a deep colour.

Steps:

  • Heat the coconut oil, black mustard seeds, cinnamon stick and curry leaves together until the seeds start to pop.
  • Blend the onion, garlic, ginger and chillis in a food processor add to the oil and fry for a few minutes.
  • Add the spice mixture and fry for a further 2 minutes, add a little water if it start to stick to the pan.
  • Blend the beetroot into a paste and add to the pan. if it is the type that comes in liquid in a shrinked wrapped packet, also add the liquid it comes in.
  • Add the coconut milk, tamarind, jaggery chicken and water and cook for about an hour or until reduced. Finish by adding ½ teaspoon each of cumin, coriander and asafoetida just before serving, Season to taste.
  • Serve with rice or a chapati

1 kg chicken
2 teaspoons oil
2 onions, sliced
1 teaspoon minced ginger
1 teaspoon minced garlic
2 green chilies, slit
2 tomatoes, chopped
curry leaf
1 1/2 teaspoons coriander powder
2 teaspoons chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon black pepper
1 teaspoon cinnamon
1 teaspoon fennel seed
1 teaspoon clove
1 teaspoon cardamom, crushed
bay leaf
lemon juice
salt
chopped coriander leaves

Steps:

  • Marinate chicken pieces with pepper powder,turmeric,salt,lemon juice around 30 minutes.Heat oil in a pan and add bay leaf, ginger,garlic and saute for a minute.Add onion,green chillies and saute. Add salt also.Add curry leaves into this and saute.Add chopped tomatoes.Make a paste of coriander,chilly powders with 1tbsp water and add this paste into it and saute until the oil separates from it.Then add chicken pieces and saute well for 5 minutes and add 1/2 cup water .close the lid and cook in low heat for 20 minutes.Add chopped cilantro leaves and add few drops of lemon juice at the end.Do not boil after adding lemon juice,the curry tastes sour.Serve with bread,chappathi or rice.

  • Heat the oven to 180°C/160°C fan/gas 4. Put the chicken legs in a roasting tray and season with salt and pepper. Roast for 40-45 minutes or until the juices run clear when a leg is pierced in the thickest part with a skewer.
  • Heat the olive oil in a medium, deep frying pan or sauté pan over a medium-high heat and fry the onions for 8-10 minutes until softening. Add the curry paste and fry for 2-3 minutes, stirring, then add the beetroot and stir to coat in the spice paste. Pour in the coconut milk and gently simmer for 10 minutes until thickened, then add the spinach and stir in to wilt.
  • When the chicken has finished cooking, remove the skin (discard), then shred the meat using two forks. Add the meat to the curry and stir in any cooking juices as well. Taste and season with salt and pepper. Serve the curry scattered with the coriander leaves along with some steamed basmati rice or naan breads and a dollop of natural yogurt, if you like.
